Last night my family decided they didn't feel like going any where. We were planning on dinner out so I was not prepared to make anything.
So i went out to the garden picked some eggplant and tomatoes.
i threw together a delicious bake dish that my family went crazy over. Sometimes it's fun to think outside the usual and come up with something new. I've let a few eggplant go to waste cause I wasn't sure what to do with them. I love being able to harvest our garden, right now tomatoes are out of control!
Heres what i did:
Slice eggplant and line a 9x13 baking dish
Cut up tomatoes and top eggplant
(I did 2 layers of each)
Added garlic powder, Italian season and a little red pepper
Covered with pasta sauce
Covered and baked for 45-50 minutes
Top with fresh grated parmigian cheese
Serve with pasta. We use Gluten Free pasta since my daughter can't eat gluten.
