We spent some time today figuring out what we are going to eat during week 1 of veganism. Tomorrow night we are starting for dinner. We've decided that we are going to eat leftovers for lunch each day, so that was factored into the meals we chose.
Breakfast this week is going to be fruit salad, which we will prep tomorrow night.
Dinners (and the next day's lunch) are as follows:
Sunday - Burrito Bowl
Monday - Simple Veggie Curry
Tuesday - Spicy Coconut Noodles
Wednesday - Chickpea Tikka Masala
Thursday - Avocado Pasta
Friday - Roasted Butternut Squash Coconut Soup
Saturday we are going to a friend's place for dinner, and they said they'd happily cook something that is vegan, so that's cool!
Grocery shopping will happen tomorrow.
