Last night's dinner turned veggie. We had eggplant Parmesan. My husband said it is one of his favorite meals. We had it with a huge salad with carrots, bell peppers, cucumber, red leaf lettuce and cherry tomatoes. Everything except the cucumber came from our CSA so organic and picked locally and this week. Today for lunch I have leftovers of both the eggplant and the salad. I had strawberries with my Kashi cereal so 7 freggies is easy-peasy. I walked in my Industrial park 5 miles in 09 minutes and I tracked it all! so goals are all good. We get anew LTGL activity on Saturday. I wonder what it will be.
