Happy Hump Day. At least I hope it is!
Last night I finally cooked a meal that all the kids liked! Gosh, I felt like I won an award! LOL
I bought an inexpensive waffle iron. I made waffles ( from a mix), strawberries, whipping cream and bacon. It doesn't sound that healthy, but it fit within my calorie guidelines, and the kids cleaned their plates, which is healthier than not cleaning their plates. Now I can adapt the recipe to use whole wheat grains.
I looked up waffle recipes and there are some fun things like cheese sandwiches etc that we may try. Chase took over the "waffler" and helped cook dinner, so that was a blessing too.
Yesterday was my Zen day. I started out with aquatic physical therapy. Then soaked my old cold bones in the whirlpool. After that I took myself to a healthy egg white omelet lunch and enjoyed the day. I logged my food for the first time in about 3 months.
Three pounds sneaked back on, and I am not going to let it become more! Yes life is hectic with 5 kids, and getting settled into a new norm is a little more difficult but it is doable. I still have lots of time in the day to do what is important to me and what is necessary to life.
I read a blog today that made me sad. The blogger said she had gained weight and wouldn't be blogging for awhile, until she had something good to report. I was sad, because for me this is the community I turn to when I am having a tough time and need a little encouragement.
I am saying a prayer for her, and every other person who is struggling. I guess that would be all of us in one struggle or another, right?
