I got lots of great presents including an Amazon Fire, jewelry, make-up, new Steelers gear, lots of new clothes, and well, more things than I can think of! DH really appreciated his brand new 55" television - which he hasn't even gotten to try yet since it's been sitting at my office all holiday weekend to hide! I'm taking it home today for him.
We had a surprise evening at my mother-in-law and step-father-in-laws house for Christmas Eve. She put a spread out and we drank lots of wine! Hence to how funny pictures like this happen!
We had a wonderful long weekend of too much food, too much booze, and too much fun! I know I shouldn't have had too much of any of it (other than fun) but it happens sometimes, doesn't it. I keep telling DH that I need to behave, he's not being super helpful! The truth is, I need to help myself - don't we all agree? The only person responsible for you is you!
Luckily - I did do some things this weekend that were important for my health. One of which was batch cooking twice! Amelia and I made a tasty Mexican freezer meal on Saturday of:
Cilantro Lime Riced Cauliflower- www.wholesomelicious.com
Crispy Baked Tofu - healthyaperture.
and sauteed fajita vegetables.
Amelia had never seen tofu before so she really enjoyed learning how to press it and what exactly it was. She didn't get to taste it though as it wasn't finished before she went home. She still had fun though! I brought one of the meals today and it was pretty tasty! If I make the tofu again I would press more the water out, and marinate it for at least 4-6 hours. The cilantro lime cauliflower rice was really tasty and I could definitely seeing making it for a dinner party as I believe even those people not watching their figures would enjoy it.
Tuesday DH had to go back to work but as a gift to myself I took the day off. There wasn't going to be anyone at my office so I scheduled it out in advance and didn't even think twice about it. I allowed myself down time of doing nothing but I also cleaned up the house; the norma - get Amelia's gifts to her room, break down all the shipping boxes, clean up the spare dishes that weren't getting done, organize all the gifts under the tree, etc. Along with that I made dinner! DH has been sick so I figured a nice pot of soup would be perfect! Here's a picture of the vegetables I roasted as the base of my vegetable soup.
Roasted root vegetable soup is one of my favorites and it tasted delicious! There was enough left to portion out and freeze 4 containers for upcoming consumption!
This coming weekend I hope to do some breakfast meal prep. I currently have 3 different kinds of lunches in the freezer but no breakfasts - so I at least need to make burritos or egg cups or something! Any suggestions?

My favorite present is probably my Amazon Fire HD 8, and my favorite moment would probably DH's face opening his tv! (Special mention to Christmas Eve with my in-laws (and then later my neighbors) and Amelia getting to spend the night with us Christmas Eve and open up presents with us Christmas morning!)
