Another New Stage of Life

I just re-read my last blog entry, which was more than 2 years ago! That makes sense, since the last 2 years have been so incredibly stressful, busy, full of taking care of everyone but myself, and full of all kinds of heartbreak, as well as some joy. Now, though, I find I'm in a very different space. The heartaches are still there, but have moved into the background somewhat, and I have space and time to think, to enjoy the beauty of nature, to walk my dog, exercise, make dates for visiting with friends. I hardly know what to make of all this freedom!

Before these past years of way too much stress I had finally made it down to my goal weight, and actually learned to maintain it. I was LOVING that so much! But the stress came, unasked for and unavoidable, and the pounds came back. Not all of them, but too many of them. But now I'm in this new space, and am on track again.

This time I'm trying something new, because of my husband. He was recently told by his doctor that he is pre-diabetic, and to "not eat carbs for 3 months." So I got some books on the Atkins nutritional approach, and have been studying up on that a bunch. As a result, we are eating so many veggies!! Also, more protein. It's a real difficult change to try to be less afraid of fats, but I'm learning. I am very anxious to see what the difference in his A1C will be after 3 months. I am very proud of him for doing so well with this. He complains some, but has been amazingly compliant for a man who loves tortillas, rice, beans, fruit, bread, and desserts.

As for myself, I haven't lost a bunch of weight on it yet, but I think I've discovered how to maintain my weight without being hungry. And the cravings for sweets and bread have gone, which is a relief. I know that carbs are my downfall. I am enjoying chopping veggies, and inventing new ways to enjoy them. Atkins has 4 phases, and the first one is a minimum 2 weeks to kick start your weight loss. It doesn't include any fruit, so I am not willing to do that phase just yet, as the peaches and pears I've been waiting for all year are just getting ripe! But apart from enjoying a small amount of fruit, and from not actually measuring stuff and tallying up the "net carbs," I've been eating the Atkins way for phase 2. I am so happy to report that I have been to several events recently that included food, and have made choices that kept to the low carb way of eating. Last night was probably the hardest one, a potluck of salads and desserts. I had thought there would be meat provided, but no, it was just the salads and desserts. A lot of desserts, very yummy looking ones. And most of the salads had pasta or corn or sugar. There weren't a lot of good choices. So I took deviled eggs, a lot of the salad I had brought, a few bites of nectarines and a couple bites of watermelon. My husband made equally good choices. Then he made us some scrambled eggs when we got home. It is a real big deal for me to go to a potluck with so many desserts and not take any. And the greatest thing is that I wasn't really even tempted to!

I'm in the mood to keep writing, but on the other hand, I'd better get out and walk the dog before the day heats up. Another time I'll write about the discoveries I've made for how to prepare and enjoy more veggies.

    Welcome to the low carb lifestyle! I, too, am surprised at how breads and cookies and so forth no longer call me,and at how many veggies I eat. And love! And at how hard it was to break the fear of fats.

    Don't think of this as a three month diet to get hubby away from being prediabetic. It is a way of life, for the rest of your life. Enjoy all the wonderful delicious food you get to eat! It's different food than you used to eat when you were (I assume) eating low fat/high carb, but there's a whole world of absolutely delicious and low-carb-healthy food available. Enjoy it!
