Morning Batch Cooking!

Last week when I went grocery shopping I got the ingredients to make a double batch of one of my favorite Instant Pot recipes - Golden Lentil and Spinach Soup! This is the second time I've made this soup and I decided on a double batch because I liked it so much! It's easy, tasty, low calorie and super nutritious!

Well, one thing leads to another and I didn't get time to make it. The spinach started wilting and some of it was going bad. My week has been super busy so I still wasn't getting to it! Then this morning laying in bed I decided enough was enough - time to get up and do a quick batch cook!



From a craving in the morning, to a decision to take action and now I'm happily sitting eating some tasty soup!
It goes to show you -



Speaking of action, my February goals to do date night every week, clean 15 minutes every day, get 8 glasses of water a day and walk 7,000 steps a day are going well. I'm not meeting them all every day - but as I stated a few blogs ago I've come to find that progress is better than perfection. I've also noticed trends from my calendar I'm using to track my daily progress. Beginnings of the week (Sunday and Monday or Monday and Tuesday - but only two days a week and always in a row) I don't seem to always make my steps or my cleaning. This typically happens because I'm too tired. These are also days I don't tend to workout so the lack of steps makes sense. Hopefully as the weather gets nicer a short walk on these days can help!

I'm also thinking about my goals for March since it's the last day of February. I think I've decided to switch things up and go with -

-A core workout every day of the week (crunches, sit-ups, toes to bars, knee raises, ghds, russian twists, planking, etc) Depending on what I do that day it will change up the timeframes - but I want to work towards my bikini body I'll need for Punta Cana in 58 days!

-Take my supplements every day. I haven't been doing a good job of taking my Milk Thistle, Complex B and Biotin each day - so I want to focus on doing it each morning.

-Restaurant food once a week (at most!) I'm going to focus on not doing it - but will allow for once a week with my husband at most. (I may just fib a little bit and tell hubby I am NOT doing it at all and see how that goes - he can tend to be a bad influence! We don't tend to eat out at the healthiest of places)

I'll post my final calendar tomorrow and print out a new one for March to keep track!
