Still Vegan--just one regret.

I am still eating gluten-free and vegan, and I absolutely love it. My only regret is that I did not do this sooner. It has not been nearly as hard as I thought it would be. I now weigh 265, so that is ten pounds off since New Year's and I feel terrific. I am off all my diabetes medications, including the Metformin. My morning blood sugar is still higher than I would like (125) but it is under 100 by bedtime. I've started exercising a little, 30 minutes on the elliptical daily, and I'm working on building that as a habit. I have a tofu scramble in the morning for breakfast--I make a big pan of it and then eat some for bfast every morning. Easy Peasy. And I am getting lots of delicious food from plant sources--butternut squash soup, curried coconut lentils, black bean soup, stuffed peppers. I just don't miss cheese and that is so weird because I thought I really would. I am getting excited about getting under 250 pounds by the time school is out.
I bought a little crockpot warmer--Yankee Candle Fundraiser purchase, like $25. And my lunch waits for me, perfectly warmed. All my own, no one else's food smells mixing in. It seemed like an indulgence but it has made it so much easier to pack a delicious, healthy lunch since I am just re-heating it. I have 30 minutes for lunch, max, which is almost always taken up by doing needful things, so time is of the essence for me.
