Week 3: HOME CHEF | Meal Kits

I’m working on calming my not so friendly back. I just hooked myself to my TENS UNIT.
So sick of hearing the expert pain doctors on the news shows. Every time I hear an interview about chronic pain, Grandparents are blamed for causing the epidemic. Or perhaps the American drug manufacturers. They never blame the real source: foreign countries and the drug dealers who seem to move freely across our borders.

Let’s see. I seem to be OFF topic. emoticon emoticon Meals from HOME CHEF.
We have been receiving three discounted meals per week from the Home Chef: Oven Ready program. Before we made the decision to try this last month, I was determined to participate in grocery shopping more. I have been doing the meal planning, but at times, I have difficulty preparing the meal. I did go to Walmart once in Late August, and road in their electric scooter with it’s own shopping basket. I mostly shopped for clothes & the pharmacy section. Haven’t done so since. I think it was too stressful for Hubs.

Hubs is having trouble following my grocery list. Last week, I sent him with a four item list and he returns with 10 bags worth $100. Home Chef was delivering the same day. I think he forgot we are empty nesters. He must have been shopping on an empty stomach.

We chose to trial HOME CHEF for Hubs benefit as much as mine. I choose the meals based on the sodium content and whether I can modify the meal to lower the sodium without ruining the experience. Our meal profile is for:
* Low Calorie - Low Carb
* Oven Ready plan, which doesn’t require as much preparation as their traditional plan.

I try to choose some variety. 1 Dinner with Chicken Breast. 1 Dinner with Pork. The third might be shrimp, or ground turkey, or perhaps something for the grill.
Shrimp has not been available every week. I have been trying to serve heart healthy seafood 2-3 times per week. From the local store, I have been planning Cod early in the week and and Salmon near the end. I look at the emoticon Menu on my NUTRITION TRACKER for ideas.

Our recent meals:
Week 1:
* Poached Cod, salad, with a starch or fruit.
* Sheet Pan Salmon with Chickpeas and Zucchini
* Home Chef: Cheddar Bacon Crusted Chicken with ranch potatoes [ I added veggies from my in-law’s garden]
* Home Chef: Shrimp & Creamy Corn Risotto [added a side salad served at 3:30pm]
* Home Chef: Chipotle Cherry Bone-In Pork Chop with Goat Cheese Green Beans (no additions needed)
Week 2:
* Seafood 2
* Pretzel Crusted Pork Chop with Mustard Potatoes & Peas
* (Ground) Turkey Penne Alfredo with Peas and Asiago Crisps
* Crispy Beet Crusted Chicken with Goat Cheese Green Beans
(I didn’t make any additions this week to the menu)
Week 3: {current week began Tuesday}
* Spinach and Arugula Salad with Apple Vinaigrette. Customized with 12 oz of cubed roast chicken breast for $2. The meal for 2 was still under $20.
* Pork Chop with Remoulade Sauce and Cajun Rice (peas are in the rice)
* Mexican Pork Meatballs with Fajita Veggies and Black Beans

Home Chef allows customization of the choice of meat, but not the veggies. I am getting better at choosing menus that have bore variety.
So far, I have been able to prepare the meals with out interruptions by my back.i start a little early and can sit the food back in the refrigerator until closer to our usual meal time.
The meals have been between 475-650 calories. Most of the time, we divide the food equally between us.

The food has been good quality. It has been a nice change. When the discount is over, I am thinking of ordering just one time per month. We can decide that week by week.
