Here I am, up way past my bedtime. Sometimes I just can't sleep, so I figured I'd type until I get tired.
Funny how we say we're preparing for Thanksgiving - I'm thankful and grateful every day! What I'm preparing for is to create an awesome dinner and enjoy the day with my son!
So, the 14 lb turkey is in the 'fridge, thawing, and tomorrow, I'll shop for a few things that I need for the meal. Today, I prepared the dough for my pies - It's chilling in 'fridge along side the turkey, and I baked my bread for stuffing and dressing. Wednesday, I'll make pies.
The yeast bread I make for stuffing is a really simple one. The dough is made and spread evenly over parchment paper on a half sheet, allowed to rise for 20 minutes, and baked for 30 minutes. It's full of sage, garlic, and onion, and if baked as a loaf, will create a savory bread. After the bread cools (since it was in the 60's today, I put it on a rack on my patio), it's cut into cubes and allowed to become stale/dry. This is the basis of my stuffing and dressing.
It was absolutely lovely today, and I spent time in the garden and patio in between my kitchen projects. First thing this morning, I collected more cucumbers and started another large jar of pickles, and picked some leaves off of the broccoli, collards and kale for my girls. They come running whenever they hear my car pull in the garage or whenever I open the patio door. LOL, when I come in from shopping, they jump up on the roof of their coop and hop onto my kitchen window sill, and make a racket, letting me know that they want some attention and a taste of anything I care to bring out to them!
I love having my coffee or tea breaks on the patio, too. If I'm only having my coffee or tea, they just run up and talk to me. If I bring out biscuits or biscotti, oh my! Between the girls and the dogs, I might get a bite or two!
Well, my friends. The allergy pill I took a little while ago is making me sleepy - Maybe now I can actually fall asleep!
