Snow day, take 2!
Wednesday, January 15, 2020
(My walk to school through the woods yesterday, before round 2 of the snow hit.)
Okay snow, gotcha, you can go now!
More came in over night and classes are canceled again. Everyone else is celebrating, not sure why. We still have to do the work, just now we have less time. This ain't high school, people, we don't have make-up days!
The good news is a warm front is supposed to push this junk out of here this morning, returning us to our balmy 40 and 50 degree winter weather. Of course, that also means we are under a high wind advisory...just can't win :D
So I'm stuck inside today being a potato. I'll do yoga, at least! Made a delicious sweet potato hash for dinner last night. I made up some pesto with fresh spinach, garlic, pinon nuts, nutritional yeast, and a splash of oil. Thinned it with water and tossed the yams, some diced field roast vegan sausages, onions, and mushrooms in the pesto and baked until caramelized and yummy. Easy but the perfect comfort food for this kind of weather!
It's kind of ironic, really. After feeling trapped all weekend due to anxiety, I now feel great but I'm more or less actually trapped because of the weather. Go figure!
C'est la vie! I hope everyone else is warm and dry!
