What is pictured here are 2 black bean veggie burgers with brown rice added and a crunchy cucumber salad. I added mustard and paired the meal with a glass of skim milk.
One of the better meals. I make the black bean burgers in bulk and freeze them. I pack them with wax paper so they don't stick to each other then wrap in plastic wrap.
It is easy to thaw what you need. It is more economical than buying from frozen food section and has less ingredients and is much better for you.
As for the cucumber salad: I have added cooked quinoa to it before and tomatoes for extra flavor. The salad is more like a salsa. The two of them pair together well.
Also, you can put the burger on a bun and have a really kickin' veggie burger. But, today, I opted out on the bread and it tasted fine.
