lunch today and the attempted keto challenge.

Today, I had two servings of the Crunchy Cucumber Salad by Chef Meg for only 44 calories per serving. I added tomato and half a cup of cooked quinoa. With it, I had v8 juice. I also had boiled chicken breast on the side. Unfortunately, the dessert wasn't pictured. I had 5.3 ounces of plain nonfat Greek yogurt with frozen blackberries, chia seeds and half a serving of teddy grahams honey graham bears. You could probably use graham crackers in its place. It is sweet when mixed and a good snack too. I heard the yogurt with berries and honey is a good choice as well. I used what I had on hand to curb my sweet craving. More... I tried doing keto but started gaining weight and decided it wasn't for me and returned to some of my healthy choices from before. Today, I'm definitely getting rid of the water weight aspect of the keto challenge from last week. But, I did learn that I don't need as many carbohydrates as I was eating before. With thyroid issues, I suppose the keto didn't agree with me like I expected. However, every one has different needs and body responses.

I did end up buying almond flour for a filler for some recipes that I'm going to try. I did that because it is keto friendly but also a good alternative for some of that white flour that is ingested in some of those not so healthy goodies. I made enchiladas this week with corn tortillas that ended up being low calorie per serving but I over ate. I gave the rest away to my adult son and his friend to finish off instead.
