Breakfast yesterday and today: Keeping full!!!

Wednesday, May 13, 2020

Hello Sparkfriends and Christian family too. I just want to say its been a busy week and it really has gone fast. I can't believe its Wednesday already. I am praying you all are safe and happy and well. The weather really is wacky though!!

This breakfast was from yesterday and consisted of oatmeal. One minute Quaker. I microwaved it and was easily made. So much for those instant oatmeal packets. I placed the oatmeal in a bowl(1 cup water/1 half cup oatmeal) in the microwave for 2 minutes. It was the quick oatmeal kind. Perfect!! I added one frozen banana and a serving of peanut butter. This allows the banana to melt and doesn't waste those unused bananas by freezing them. I do that and you can also use them in smoothies. I, also, added 1 Tablespoon of flax seed for much needed fiber. This really is optional but I bought some ground flax seed from Bulk nation not too long ago and it has been useful. I had green tea with pomegranate and finally am off the coffee and getting enough sleep most of the time. I had a serving of low sodium V8 juice that I bought from Walmart for a low price. A little of that goes a long way for sure!! So breakfast was pretty healthy and economical. Also, The oatmeal was somewhat like banana bread!! If you like it a little sweeter don't be afraid to add a little honey or blue agave sweetener.

Breakfast this morning was packed full of protein. I added a 3/4 cup of Greek vanilla yogurt. A few fresh blueberries and chia seeds. The chia seeds when mixed with yogurt soften and make an interesting texture after a few minutes. Kind of like pudding!! Then, I had coffee with splenda and in the shot glass was a small smidgen of unsweetened almond milk. Unfortunately, almond milk has to be used within 10 days after opening but it isn't too expensive. Someone, on this site uses sweetened almond milk to flavor her coffee. And I heard some use coconut milk. But, for me the unsweetened is just fine and does the trick. Of course, a serving of low sodium v 8 juice for the nutrition factor. Note...be careful when buying vanilla yogurt. Many times, I have mixed up the yogurt with a regular one. But the Greek specifically, has much more protein and is much better and will keep you full longer. Just think this morning no cooking involved.

Love you all and may Christ abide in you and keep you well. And mentally safe and happy too!! I have been writing poems again which is a wonderful and just enjoying nature again. We are so blessed here and am grateful for you all. More soon!!
