Today, I will be reviewing the Greek-Style Warm Broccoli Salad on page 73 of Against the Grain and the Baked Omelet with Chorizo and Vegetables on page 30 from the same cookbook.
I didn't love the baked omelet. First of all, I made it in far too big of a pan (I used my 10-inch cast iron pan rather than my 8-inch pan because the 8-inch pan didn't look tall enough to hold everything.
However, because I used the 10-inch pan, the omelet was really thin and at 224 calories a slice, I would have preferred something with a little more oomph to it.
I used kielbasa in the omelet rather than the chorizo it called for as I think chorizo is spicy and I don't do spicy.
And, for a recipe called Chorizo and VEGETABLES, you would think there would be more than one tomato, some garlic and some parsley in it. Just my opinion, of course.
Overall, I rate it 3/5. It wasn't spectacular but it is tasty. If I were going to make it again, I would definitely use the smaller pan.
The second recipe I made this week was for a Greek-Style Warm Broccoli Salad.
The first thing you should know is that I didn't eat it when warm at all. I made it in the morning and have been eating it cold all week.
The second thing you should know is that until last year, I didn't think I liked broccoli at all since I detest it cooked but it turns out that I love it raw.
This recipe was using steamed broccoli so I wasn't sure how this one would work for me.
The third thing about this recipe is that it called for 2 pounds of broccoli florets. Well, I cut up half of one broccoli crown, which came to 2 cups of broccoli florets and according to my kitchen scale, that was 2 pounds but for a salad that was supposed to end up with 8 servings, 2 cups just wasn't going to cut it. I ended up using 2 broccoli crowns, which was approximately 8 cups of broccoli.
So, how did it turn out? I don't hate it but I doubt I'll make it again. I have other broccoli salads that I enjoy much more than this one. I rate it a 2/5.
