9 pounds gone

Since eating a more plant-based diet for the last few months, I've lost 9 pounds. I've felt less achy and less tired, too. The most difficult part now is finding good, easy recipes to try. Since I've gone back to work there isn't as much time. I still haven't given up animal products completely, and maybe have it once a week.

    My strategy is to have lots of handy, snackable veggies ready for grab 'n go eating. Broccoli florets, cucumber slices, baby carrots, sliced red bell pepper strips, apple slices. I love Wegmans Garlic Hummus for dipping. Unsalted peanuts are a handy protein bump as well. Hard boiled eggs are another regular staple for me. I boil up a dozen over the weekend as they are handy for snacking or slicing into my spinach salads.
