Labor Day pre-dinner.

I cooked yesterday as to prepare for Labor Day for some reason. I hadn't really cooked in a while and felt like cooking a bigger meal. It ended up that I pre-made meals for the week and family members liked the meal as well.
I made creamed spinach, green bean casserole, pasta with cauliflower alfredo sauce and parmesan cheese and a pre-sliced ham purchased a time ago, on sale, and placed in the deep freezer. With the meal, I drank plain seltzer with a splash of lime juice. I miss cooking sometimes and this summer I ate many meals with salad. So, this was a nice change.
A note about the ham--Salt is a little high for some and the ham was 97% fat free and precooked. On the inside tag, it suggested a mixture of honey and orange juice concentrate put over the ham the last 15 minutes of reheating. The flavor was really nice.
Now to not overeat!! It was very good!!
I pray all of you have a safe and content day off? despite the circumstances. You can and will succeed at what you desire!!! Don't give up!!
