Good morning friends.. So it seems a crazy intense #cko workout, a mini freak out, formulating a plan and a long walk was just what the dr ordered yesterday for the finishing touches of regaining control of my life and getting my mind back on track.
I am not going to lie, the uncertainty on whether or not hubby's unemployment is extended is looming and will be a huge sucker punch if it is not, but he is a provider, he will do whatever it takes and I have a few options of my own.. I can be more vocal about my rocks, I have had people private message me about paying me to cook for them, and yesterday my cousin/bestie Di texted me and asked me if I would do a cupcake wedding tower for her step son - she's paying for that and came to me instead of a bakery..
So yesterday I used the butternut squash twice, once for breakfast in a butternut squash waffle and for dinner butternut squash ravioli (wonton wrappers are the bomb) with sage brown butter over spinach. I have a few left over that I froze am already looking forward to having them again.
Today I am making butternut squash chili, tomorrow I'm thinking braised beef over butternut squash risotto.
Cool temps are here for a little while.. then next week we pop into the 80's again.. so I am going to take advantage of hearty fall food options the next few days... and I imagine will spend some time wrapped up in a blanket reading this weekend. I do enjoy fall weather for reading... as well as painting.. I'm into the Fall themes there too.
A friend of mine posted this before/after picture of herself and she looks fabulous.. I complimented her and she responded and said she didn't think if she cooked as good as I do that she would have been able to lose the weight. I assured her that was not the case and told her the power is in creating meals that look and taste decadent but are in fact much healthier than they appear.
When I was at the Cider Mill the other day, I came across a mug that said : "Take what you have and use it to create what you want".. How powerful is that statement?
Well I'm gonna run, but not before I mentioned Ryder.. He got his first baking lesson from his Meema the other day.. oh and to be sure that he does not lead a too charmed life, we are making him a Jets fan like the rest of us!
