Take THAT, Winking Lizard!

The spinach-artichoke dip at Winking Lizard is our favorite. Sometimes I bring it home, sometimes DH does. Not very often, mind you. It's a special treat. But it's also a highly caloric one.
We stopped at Trader Joe's
the first day we came to Florida on vacation and I saw a jar of Artichoke Antipasto. Mix it with spinach and a few other ingredients, I thought, and maybe I could mix up a concoction that would rival the Winking Lizard one.
A friend texted me a recipe that looked a lot healthier that included an avocado, 1/4 cup fresh basil (I bought potted basil, too), 1 T lemon juice, 1 small clove garlic, 1-1/2 t onion powder, 1/2 t sea salt, 1 c canned artichoke hearts (drained & chopped), 1 c packed fresh spinach (chopped), and black pepper to taste.
I used the artichoke antipasto instead of the canned artichoke hearts, but didn't have the garlic or onion powder (I could have minced a bit of fresh onion), and I added just a bit of olive oil and heated the mixture. It wasn't bad. Fresher and less dense and certainly not dripping in calories. It's amazing what you can come up with when you are in a poorly stocked kitchen.
