I love my slow cooker and use it all the time.
You can use your slow cooker and make Chicken Alfredo.
Put boneless skinless chicken breasts in the cooker pour one jar of Alfredo white Cream sauce over the chicken breasts Season with Salt & pepper then sprinkle dried Basil on top. Cook on Low 8 hours.

My favorite Easter recipe is one my Italian grandmother used to make every year. It might sound a little strange but I promise it is delicious!

All you do is peel a few fresh oranges (different varieties makes it extra pretty...but all regular is fine too!) and slice them into rounds (maybe 1/4 inch or so thick), lay them out on a platter and drizzle with a good olive oil and a sprinkle of fresh black pepper. ITS SO GOOD. We usually serve this as a first course with hard boiled eggs.

Another thing that screams spring to me is asparagus. If you have a stovetop, I like cutting them into 1-2 inch pieces and sautéing with a little olive oil and lots of garlic. But they'd be really good roasted in batches in the toaster oven too :)

I would prep a veggie tray with carrots, celery, radishes, snap peas, cherry tomatoes, broccoli, bell peppers, blanched asparagus, etc (whichever ones you like) and serve with hummus or a yogurt dip. No cooking, low carb, fresh and healthy.

You could do a cheese ball, it's low carb but not low fat.

Smoked salmon and cream cheese on cucumber slices.

Stuffed mushrooms in the toaster oven.

If you like shrimp get some pre-cooked and cleaned, just thaw and rinse, pat dry and serve. Watch out for sugar laden cocktail sauce, you'll need to read labels to find a lower carb one.

Do you have a stove top or microwave? That opens your options.

Deviled eggs are not low fat, but they are low carb and Easter related.

Using the toaster oven you can warm ham slices, or parts of a rotisserie chicken. You may be able to warm or cook a whole chicken in the crock pot. I have read about that but not tried it myself. I'm sure google has recipes and instructions.

Try cauliflower rice as a side dish. It's available frozen if you do not have the means to make your own. You could warm that in the crock pot, possibly with the rotisserie chicken on top.

If you have a pan that fits your toaster oven you could try a crustless quiche with ham and vegetables. Maybe a couple of single serving sized ones? Might work in a crock pot, too.

celebrating Spring and new growth, starting anew, What recipe ideas do you have that are lower carb? lower fat? for Sunday/ Spring dinner?

Do not have an operating full-size oven, only toaster oven, and a crock-pot, slow-cooker.
