You have friends here who you can quiz when you are attempting something new. Even those of us that are old hands at preserving are constantly trying to learn new tricks. This group has been extremely valuable to me as there always seems to be someone that has already done anything that I can dream up. AND they are always willing to share.

I have always done my own freezing and dehydrating, but this is my first year doing water-bath canning. So far I have canned a bunch of jam--strawberry, raspberry, cherry, blackberry and peach, plus several kinds of relish, sweet pickles and dill pickles. I'm really proud of the results so far--every jar has sealed!

Growing up, my family always had a huge garden. I always helped with the growing and canning prep., but I've never done the whole canning process by myself before.

I hope to do apple sauce, pumpkin, tomatoes (whole and sauce) and perhaps some pears and more pickles in the next couple of months. I might do salsa too--tomato salsa and tomatillo salsa.

Dances: salsa (standard/LA), casino, rueda de casino, cumbia Colombiana, cumba Mexicana, bachata, mambo, cha-cha-chá, merengue, reggaetón.

Dances to Learn in the future: flamenco, tango Argentino, samba, belly dancing, bhangra, danzón, Cuban rumba, ballroom rumba

As far as actively canning, this is my 3rd summer water canning and I'm in my 1st year of pressure canning. I've also been dehydrating for years and in January my honey got a food saver so we've been using it quite a bit as well :)

I've only been canning for 3 years now; however, I grew up around canning. I do not use a pressure cooker, I only use water bath methods and I truly do not can much except stewed tomatoes, salsa, and marinara sauce. I'm hoping to expand upon this with the use of my crockpot and bean pots to make the recipes ahead of time.

Any change, even a change for the better, is always accompanied by drawbacks and discomforts.

Hi y'all I am new to all of this. My Nanny (my mother's mother) canned when I was younger until she had a pressure cooker explode on her. I understand things are a little different now and I've about managed to get my husband convinced that we need to do this because I know it is much better for you and it tastes so good! :-)

I remember watching my mom do jelly when I was a kid.Then in my 20's a friend would do up stuff from her garden. I just never found the time to try it on my own until about 5 years ago.I posted for equipment on free cycle and found other thing in thrift stores. I did not want to lay out a lot of money if I did not find it interesting. Glad I finally got brave enough ;)

I started out helping my mom when I was a kid and have been canning on my own for at least 20-years. My mom taught me how to make raspberry jelly as my first project. She took out too many raspberries and I ended up making seven batches. I definitely learned that recipe by heart. I haven't bought a jar of jelly since. emoticon

Now, I've got a lot of favorites: pickled beans, pickled peppers, tomato sauce, pizza sauce, blueberry lime jam, raspberry chocolate topping, several different kinds of salsa. I also freeze, dehydrate, and make my own liqueur -- raspberry is my speciality. emoticon Have a good day everyone!

Like many others, I started out as a helper in the kitchen when I was a little girl. I grew up in Alabama and we had a garden, so canning and freezing and drying was just a natural part of life for us. After I had my own home, I continued to can. Not only do I think the taste is better (I can taste the metal in store canned foods) it is usually far less expensive.

I love to can and to introduce others to canning. I have a couple of books on Amazon and one deals with pressure canning beef. I save a fortune by canning meats when I find them on sale and I save a lot of time every night when I can just pull food from the pantry (rather than having to thaw meat or run by the store). The book is called I Can Can Beef. My current writing project is I Can Can Chicken. Both of my grandmothers are my inspirations for those books. One granny canned beef and the other canned chicken.

I am so happy to find a spark team of like-minded people!

Been preserving for as long as I have been allowed in a kitchen. It was just what my mother did and from our family recipe books I can see Granny also preserved - be it pickles, chutneys, jams or bottling/canning.

I've been canning for about 35 years. I have a pretty good size garden and love to see the "fruits of my labor" arranged on my pantry shelves. I do a little bit of dehydrating. I also took up making wine about 4 years ago, which is a lot of fun!

I helped my mother and grandmother when I was a child to put up meats. vegies and fruit. Wow! Those canned peaches were to die for. I have continued through the years (I am now 57) and I still do canning, mostly veggies. It is a great feeling to know you did the whole process from planting and nurturing your plants to picking and cleaning and processing all yourself, not to mention they taste sooooooo good. We used to have 3 gardens when our children were little. Those were the good old days. I only wish I had the time and energy to do all that I used to do.

I have "put up" foods nearly all my married life (47 years). I have canned and frozen all kinds of vegetables and meat. Years ago on the farm here in Nebraska, my mother canned meat every year. I did in early years, but then forgot about it. This year it was suggested that I can venison since I had quite a bit of it. I did it, and it is certainly yummy. It tastes like the canned beef used to taste, and can be used just like it was.

I have been putting *Foods By* for 40 years. I used to do alot of canning but since I am alone now, have given my canners to my married daughter. We share our produce finds. My daughter gives me some of her home processed foods.

I have two refrigerators. One in my kitchen and one in my pantry. I use the freezer in both fridges, to put foods in convient single servings.

I used to have a dehydrator but found I didn't use it very much. Sold it, in a garage sale, when I down sized my living accomodations.

I have been preserving foods for over 40 years now. I do canning (hot water bath and pressure canner), dehydrating and freezing. Took a course in 2000 through the university extension and am a Master Preserver. Just made sauerkraut on Monday (in the crock working as I speak) and tried sweet sour red cabbage recipe today(hope it turns out). Still have to get the rest of the tomatoes,squash and sweet potatoes out of the garden (we had frost 2 nights ago and our garden is ending for this year). Husband is great with helping me..so lucky.

I guess I've been canning for over 40 years, mainly with a pressure canner. My mother-in-law taught me, and I can remember "snapping" beans on her porch as a child (I married the boy next door and it has lasted 43 years).

I've been freezing forever, just like the previous correspondent. Last summer I started water bath canning (salsa and various pickles). I will be doing more pickles tomorrow night (okra, cukes), and I hope to find enough fresh tomatoes at the local farmer's market this weekend to make tomato sauce. I like the idea of preserving canned goods, and knowing the ingredients therein, and am on the hunt for all sorts of unsweetened water bath canning recipes. (I do not get enough sun here to grow enough of my own veggies.)


Yep, there I am, swimming through the desert sands. Might just be a mirage, after all. But this is life, and we learn best about it if we explore it, and take our chances. A life unexplored, after all, is one of the saddest things out there.

I have been canning for at least 25 years, some years more than others. I joined a CSA this year, along with a small garden in my yard I will have lots of produce to work with this year. I thought it would be fun to join this team for some good ideas.

I have been home canning Most of my life. Don't be afraid of pressure canners. That cannot happen. The pressure canners lock in a way they cannot blow up. There is a pressure valve that will blow in an emergency; and that will only happen if you are not properly regulating the canners pressure. We have all heard the old horror stories. Pressure cannning saves so much time.

About 7 years, although it mostly jams, etc. I'm still afraid of pressure cookers-- graphic stories about a grandmother blowing up a kitchen.

Are you trying to make me feel old? I helped Mom, Moo(Best friends mother), Grandmother Then we (Best friend and I ) Made Jam. Then we did it on our own. One year I took the train with sugar jar's and lid's to her house so we could can apricots. I still have green beans. have not done them in a wile.

Since 1972 with 3 or 4 years break because we moved in a mobile home park. Missed garden life and moved on 1 acre and back canning ! emoticon

The Lord is my strength and i know i can do better with the Lords help. The Lord laid it on my heart to start a team called GOD ANSWERS PRAYER AND I WOULD LOVE TO HAVE ANYBODY THAT WANTS HELP TO LOSE THEIR WEIGHT TO JOIN . I KNOW I CAN'T DO THIS WITHOUT THE LORDS HELP !

Since 1975 or 76: water-bath "canning" (glass jars), pressure canning in glass jars, drying, some root cellar/unheated-garage storage, hot-pack glass-jar canning.

Ive also been canning for about three years. My Mom never di. She said it took to much time. I love gardening and have about 1 acre in gardens. My DH finally said if I was going to maintain the gardens then I needed to start canning and I love it.

Hello, everyone!
--I hope your day is going well. I'm a newbie to the group and relatively new to canning.
--I started canning three years ago when I had an avalanche of tomatoes from my garden. The first year I used some of my canned tomatoes I had a sickly feeling that I would get someone seriously ill. Well, no one got ill and I've gained some confidence.
--I have really only canned tomatoes ( I did okra once but decided freezing was the best option for it.) I haven't pickled anything yet and want to give that a try.
--I would also like to can some home-made chili I make but am not sure how to determine times, pressure, etc. with home-made soups/stews.

Concern yourself more with accepting responsibility than with assigning blame. Let the possibilities inspire you more than the obstacles discourage you.
