Holly, I am so glad you said that about the yams/sweet potatoes. It annoys me when they sell the sweet potatoes in the grocery store & call them Yams. The only GOOD thing about it is that sometimes they put the Yams on sale for really cheap, and I buy them then even tho I know they are sweet potatoes. I love sweet potatoes so that is a good thing. But I've read a lot about Yams and I know that the typical grocery store isn't going to carry such an item. They are usually only sold in slices too. The actual Yam can grow up to 15 feet in length and only grows in tropical climates. Every year at Thanksgiving I go thru this same frustration. It's been one of my pet peeves for a long time. I try not to get into it anymore. Most people don't believe me anyway. Oh well, ya pick your battles.

Well, how long til I start feeling the energy?? I really have been sluggish for almost the whole week. I sure hope it passes soon. I'm suppose to go to work early on Friday this week. I need to perk up by then.

ok so they are different from the miracle noodles...that are made from seaweed or something. i'll look for them...thank you!!! and for the record and because i'm a produce mans daughter..sweet potatos and yams are not the same at all..lol. but i would think both would have mega carbs so wondering how they make them!!

Shiritake noodles are made from yam flour (yams are another word for sweet potatoes).

I don't think they have a fishy taste. Sometimes called glass noodles. I eat them pretty rarely, like maybe once every few months. They do not have the same texture as spagetti noodles from wheat. But, if it is that or no noodles, folks might want to give them a try.

ok James question...a friend told me about miracle noodles..no nothing in them..0 everything..but, then she says IF you can get past the smell.
I cannot smell fish without retching. so they are a nogo for me. you said these shiritake noodles are yam not fish or seaweed? i would LOVE to try some..
and the keto group i'm in posted a recipe for meatballs and broccoli alfredo this morning..looked really good..if i could only find some noodles to have them on.
I know tomatos are high carb...so havent had any..or any sauce. so glad i'm not craving it!!

You are spot on with the water loss and fat loss. Next week I bet three more pounds down, 2 fat and 1 water, and after that about 2 pounds of fat loss per week.

Shiritake noodles (made from yam flour) are sold in huge Asian section of a grocery store, typically packed in water and in a plastic pouch.

Not the same as wheat pasta, but virtually zero calories and of course virtually zero carbs.

But then tomato sauce is high carb, so maybe meatballs with butter and grated cheese on the noodles.

Yes, eating Keto just can't be exactly like not eating Keto.

Lisa, good to see you back again. Glad you are not giving up. You have extenuating circumstances as I recall, so sometimes you have to take a little break to sooth the beast.

Holly, I have been thinking about Christmas too. As it sits right now, I am planning to take Christmas Day off plan. We go out for breakfast & then have some homemade cinnamon rolls after opening presents. It's tradition. BUT, like you, once the day gets here, I may change my mind. Not sure. My favorite meal is Spaghetti too. So if I do go off plan for the day, that will be dinner. I may even make meatballs since that's my favorite. It may put a few lbs. back into the mix, but this program is easy to transition back to. I just have to make sure I'm strong enough by then to know I will get back on. I will evaluate it that day.

So today I made my official weigh in and I'm down 6 lbs. my first week. I know that it's probably about 4 lbs of water & only 2 of actual weight..... but I'll take it. And I love it. So, week number 2 started today. I'm feeling good about it.

Exactly Lisa...and frankly, i PLANNED to go off for thanksgiving, fully knowing i would gain at least 10 pounds just in fluid, but i would be able to have stuffing..and mashed potatos, and yams..and PIE. and ice cream.
But..a week before i thought..really is it worth it? NOPE. and i didnt. my PLAN is to take Christmas off. a whole week. but by then maybe i wont want to, again. and maybe it will end up being one day. and maybe, just maybe, again i will say its not worth it.
If i had to say my favorite 2 meals, one would be either spaghetti or lasagna, with the amazing sauce i worked YEARS to get just right. but i cant have a little. wouldnt work..so less dangerous to just not have it.
the other would be roast beef and mashed potatos (and no, i detest mashed cauliflower..it tastes like..mashed cauliflower..LOL nothing like potatos) but hey, i can still do the roast beef...
and i truly am not craving anything...so...i'm good to go. hang in...it gets so much easier as time goes on!!

Good morning, Cindi and Holly. emoticon I may be starting over today, not sure. Didn't go over my carbs yesterday but my calories? Oh yeah. A cross between a certain time, eating emotionally (which I know I shouldn't do) , eating after nine pm and a few other things and I ended up eating to the top of my protein, right to my carb limit, and a great deal of fat.

I hear you... I miss pasta myself. I refuse to say I can't eat it because it makes the longing worse than if I believe I choose not to eat it. Then it's my choice and the control is my decision. I won't even try a noodle substitute right now because it's not just the noodles- tomatoes in the sauce and I LOVE me some sauce, add up to make the dish far too dangerous even if I could find a noodle substitute I liked. Plus the possibility of me deciding to just have a little is slim: they're a food that will trigger a binge for me. I'm glad you didn't quit, but if you falter at a meal, just get right back to it in your next meal. We're changing for us, it's not so easy all the time but we can do it. We're worth it.

I do that often, Cindi. I would really like some pasta with my day long best in the world spaghetti sauce. So i added it to my Christmas break list, which is, actually, quite short suprisingly enough.
See, i'm a foodie. i love trying new recipes. Love carbs...heck, I own a bakery for goodness sakes. Yesterday I was making the first batch of Christmas cookies. M and M cookies...which usually takes me 2 huge bags of M&Ms to make. Hmm wonder why, seeing as ONE huge bag was enough this year!! The smell didnt bother me...I didnt even WANT to try a candy OR a cookie.
Today is fruitcake day. again..i'm usually into the raisins, cherries, and pineapple. I know without a doubt thats not going to happen this year. I wasnt even going to MAKE fruitcake this year, but i got so many orders for it i have to...and probably in my Christmas break I will have a small slice...I love my fruitcake..I dont like others, but mine has zero citron, is soft and yummy and once even fruitcake haters try it there hasnt been one that didnt like it...but, again, I have no desire to go off this plan at this point...i'm doing too well. a steady 2 pounds a week it looks like, so far.
I kept thinking i was stalled, till I looked at the big picture. I'm not stalled at all!! and the BEST piece of advice my daughter in law (who lost 70 pounds doing Keto between the end of January 2016 and the beginning of October 2016) was to STAY OFF THE SCALE. Once a week. period. her words "more than that it will drive you bonkers as it will go up and down up and down...trust me" and she was right..i was discouraged..i'd lose one day and gain the next....but weighing once a week is fun because BAM you have a decent loss!!!
OK off to make the fruitcakes. Will take me all day..they are labor intensive...but my whole place is going to smell like Christmas!!! Have a great Sunday everyone!!

Hi Lisa, I'm new here too actually. Just started Keto last Sunday. I weighed myself often for a few days but I'm waiting for tomorrow for my final for the week. Since I started on a Sunday, thought I'd keep that as my weigh in day.

I am a night grazer in my old life, so tonite when I got to thinking I was a little hungry, I just made a cup of coffee with a little creamer & a tbs of coconut oil in it. Took care of my desire to graze. I could really like this way of life. I MISS some of the things I used to eat, but I am no longer CRAVING them. That is so encouraging.

I got a little discouraged this morning for about a half hour, not sure why, but it didn't take long for me to change my mind. I had thought about quitting. Not because it's hard, but I think I just thought a little about some things I can't eat anymore. But once I fixed my lunch & ate it, I was fine again.

Well, thanks for letting me unload a little. Things are smooth again.

Hello, new to the group. I'm Lisa, pleasure to meet you all.

I started with reducing my carbs back in October because I noticed that on meals where I ate less than 20g of carbs I had a much easier time with keeping my glucose in the proper ranges. I'm a type 2 diabetic (dx May of this year) trying to control with diet and exercise rather than the medications. My doctor has given me a few months to show I can do it before she'll push harder on the medication front since I argued vehemently that I could do it. Then the day after Thanksgiving I decided to reduce my carbs further. I eat up to 1600 calories a day. 25 carbs or less, 98 g protein, fat to satiety. I drink a minimum of 100 ounces of water a day, and have been taking a vitamin as well as keeping an eye on my electrolyte intake. I did not get the keto flu, but sadly I have recently caught a cold!

Between this cold and girl reasons, I have decided not to weigh myself for a week though usually I weigh myself on Saturdays... not today. Next Saturday is good enough.

a word of warning...on myfitnesspal do NOT look up what the carbs are in their database. (unless you see mine...which say "Holly's whatever" because i went and figured the carbs, used websites, fractured my recipes, etc. to get the right numbers. many of the ones posted are INCORRECT...i made that mistake the first few days. just assumed people would do it right.

Holly, I've been a little 'off' for several days. But as I said, today started my turn around. That made me feel like I was getting somewhere.

I still haven't set up myfitnesspal yet. I've been trying to keep up on Spark, but my goals keep getting changed back to their recommendations every couple days. It's annoying to say the least. But, I have at least been getting close to my ratios. I know that's the right way to see it.

As for not eating enough, that's possible, but sometimes just changing things up for a day or 2 will break a stall.

Well, gotta scoot. Things to do this weekend.

WELCOME to new people!!
Cindi i didnt have ANY trouble till the end of week 2. I got hungry and dizzy and couldnt figure it out...till i went online and looked. some people have trouble later..some have none...mine just lasted a day and i havent had more than 15 carbs ANY day in the month i've been on. i do better with less, i'm horrid at math, so i just keep them low low..around 8 or 10. When i do the myfitnesspal thing, i'm under 1200 cals, too, although i know thats not as important as the ratios.
but...i had extra on thanksgiving...went to about 1900 cals..and lost big...so i wonder if i'm not eating enough...

Well, starting day 6 & feeling pretty good for a change. Thank you James for posting about how these early days would go.... I've been right on the money. Today is my first day of feeling better. Now if I could get my hip to quit hurting, I might even be able to get in a walk. But I think I'll have to wait a little longer.

I actually had a salad last night for the first time since starting. I'm still learning each day just what I can & can't eat. My carbs have been under 25 since day 1, so that's pretty good. I'm starting to get in the extra fat that I couldn't seem to at first. I forgot how much I LOVE the taste of real butter.

Well, we'll see how day 6 goes, so far so good.

too bad about that accident.

One thing about cars crumpling. I am a physicist and the energy of the collision "E" was absorbed over a crumpling distance "d" with a force "F" and the equation is:

E = F*d

If the crumpling distance "d" is very small then the force "F" must be very large, and that is what causes the damage to people. So even though your car didn't crumple the other one did, and that really helped. Newer cars all are designed to crumple.

oh... day 3 and 4 are about the toughest when switching over to Keto from a "normal" diet of about say 300 grams of carbs a day (and other stuff).

Now you are down to 30 to 50 or something like that (maybe less?). Around day 3 you run out of stored carbs (in glycogen) and you can feel weak and unwell. Just know that is part of the transition. Also, if you get a headache take a glass of warm water with plenty of dissolved salt and drink that. It is a hydration issue, also with the missing carbs. It takes a number of days for you body to reach a new balance.

Hi Nana, I'm new here & to the plan too. This is the end of my day 5 & it's a really interesting learning journey. I have always been a big carb eater. This is so different for me. BUT... I haven't had any trouble. I love the things I eat, so I don't miss the things I don't.

Holly, I found a WONDERFUL snack to have until I make some fat bombs. I've had pecans with cream cheese. Tonite I mixed a small amount of pumpkin cream cheese with my regular cream cheese & dipped my pecans in it. OH MY it was wonderful & not very many carbs. I was thrilled & today I had my best ratio yet. I can do this!!!

Hi everyone! I am new to the group and also new to this way of eating, sort of. I have been eating very few carbs in the past year but now wish to boost up my health more and feel this is the way to do it.

I am a 70+ year old grandma who helps my single daughter care for her 2 special needs sons, so I am running around a lot but at this point not able to exercise much more than the walking required for them and needs for myself.

Tomorrow will be my first day totally keto or really LCHF.

Hi everyone
more bad news
we got t-boned, or broadsided last night coming home from church.
She ran a red light and hit the driver door head on. My poor dear dh
only got the skin torn off his arm about 3" round spot. We could have
been really messed up but were driving our old 93 Blazer that is our
fav, and it has a truck chassis and hard metal body. It saved us as her
car was just about plastic. So so glad we drove that one last nite. DH
bough me a new suv in July but it is not heavy like the Blazer.
Well, I lost all appetite, just thinking of what could have been, but feeling
so blessed too.

I'm new here & to the plan (just 4 days under my belt) but I m happy with the results thus far.

Hi Holly, glad you told me about this team, seems quite informational. I will have to take some extra time to read a lot of the threads. I hope to learn a lot from here. I'm trying to be a sponge with all this. I want to know all about the things to expect as I go forward (what I've read so far has been really helpful) both the positive & the negative.

Do hang in. I know..some days i just want to say DONE. But i'm desparate to lose the weight...so i'm still plugging.
Today i have to do crusts for 20 pies and an ice barrel cake. AFTER i get home from my orthotics appt. ugh. tomorrow i have to make the pies..and, of course, Saturday there is a winter storm mixed bag coming up for me to deliver 1.5 hours away in...figures!!!!
but such is the life of a wedding baker..haha

Way to go, Holly and Caroline! You both are doing so well!

I am definitely in a plateau or a stall or something. I have not lost anything in over 3 weeks. At least I haven't gained though, so I guess it could be worse. I'm wondering if dairy or coffee or stevia is making me not lose weight. I sure hope not because they are the only things that help me stay on this WOE. I may do an experiment and stop one thing at a time for a few days and see if that makes a difference.

Sorry I haven't posted. I've been super busy with my small groups! We have a lot of Christmas service projects going on. I'm hoping that after next things will slow down a little. We have our Holiday Open House at the spa and then I have Bible Study group to attend tomorrow We have our two small groups joint Christmas party Tuesday night and next Saturday we have a big Christmas party at the hospital for about 100 families that have babies in the NICU. The next day we are flying to Cabo for a family trip before Christmas.

I'm hanging in there and trying not to get discouraged with no scale movement. Glad you are both doing well!

So proud of you.
I had a good day. I stayed with keto
And the soup made was not bad.
I tackled my coat closet at back door and even mopped the floor. Gave several coats to local thrift.

Bad news today you probably won't
Hear on news but Joan Carroll died.
She was Agnes in "Meet me in St. Louis". She was my grand daughters grt grandma.
She made lots movies. More than most people know as it was long time ago.

ok so..i keep thinking i'm stalled...but i've only been on this four and a half weeks..i started october 27. and i'm down 18.2 pounds..so i guess i shouldnt be complaining..i'm within 7 pounds of my goal i've had for 3 years...and nover got close to before this! so..i'm gonna stop complaining, for now....

Hi everyone,
Hope you are cutting a deep groove this week in staying on plan.
Yesterday I had to go get foods for my week. I want a pot of keto vegetable
soup as I am use to eating soup and that will just be very natural for me to follow.

Bonnie, I hope your ladies meet went well yesterday. Ours did. We all, as an aside,
decided to try and eat more vegetables.

Holly, my store was out of the bulk sausage. I reckon it got bought out for Thanksgiving
dinners. Need to restock.

I found a new and neat bread recipe Keto and after I try it I will let you all know if it is
worth it.

Mapped out my day, and I hope to stick to it so I pat myself on back tonight. (I am behind
due to Thanksgiving, etc). If I don/t do my work before 1 p.m., our lunch time, then I may
as well forget it as afternoon are not my best time of day.

I'm actually going to try and modify my sausage balls...i dont know why but they are SO freaking salty they are hard to eat. I made them exactly the same..and i really think its the cheese.
I was down another pound today!!!! so excited..i hadnt seen the scale move..i am getting on only twice a week now. so it was nice to see the numbers FINALLY move....
I am in food heaven with atkins nut fudge brownies.....2g net carbs per..i have one at bedtime IF i am under in carbs for the day. really, really helps me...i know i will have something sweet at the end of the day which keeps me on track.
check with the help desk on sparkpeople for that question. there used to be a way...but i dont know about now!

My grand daughter got Lyme disease this summer. She is in her first year college and I
need to check on her.

This is for anyone that has the answer:
Does Spark People not have the option where we can open our food tracker for others
to see? I use to love getting ideas that way.

Have a blessed day. Mine has already been blessed and I have started my day perfectly
on plan (POP) and I need to get a strong streak going.

I was up another pound this morning, but I ate turkey soup yesterday and it probably had
something in the broth like MSG.

My weight tracker has not been corrected but hope to just pick it back up.

I'm so sorry you cant have the carbquik!!! i never tried almond flour..looked at some in the store last week it was so expensive for a tiny package i just cant afford it. Maybe someday!! glad your sausage balls worked for you, though!!
my recipe is the same only no baking powder or salt..the cheese makes it plenty salty for me...and i dont do spicy ANYTHING..i have Lyme disease, and the antibiotics about ruined my stomach..so i cant have anything remotely spicy. sigh.

Holly I checked out the Carbquik and what a bummer....I can't use it because it has wheat gluten. I have Hashimoto's Thyroiditis and gluten really makes it flare up so I try to eliminate all gluten. Bob's Red Mill low carb mix also has gluten.

I did a search for low carb gluten-free baking mixes and found a product from LC Foods, which actually has a lot of low carb products. I may order something from there. It is actually more expensive on Amazon and none of the items are with Prime, wo I'll probably just order it from the link below.

I was really in the mood for sausage balls and found this recipe (see below) and made some this morning. They are delicious and I really could not taste the difference at all! They have 0.9 carbs per sausage ball (running the ingredients through SP recipe site). I love that this is a gluten free version with no weird ingredients. I actually had everything to make these without having to run to the grocery store. I did not use an electric mixer per the instructions. I just used my hands to combine the ingredients.These were soooo good! I'm refrigerating the rest to pull out for holiday entertaining and will make another couple of batches for Christmas Day appetizers. I'm having 20+ people come to my house for Christmas dinner.

Low Carb Sausage Balls


Ingredients
1 pound pork breakfast sausage (spicy is great!)
1 egg
1 cup almond meal
1 cup sharp cheddar cheese
2 teaspoons baking powder
teaspoon salt

Instructions

In a large mixing bowl, place all ingredients. Mix with electric mixer until well combined.
Use a cookie dough scoop or two spoons and spoon out onto lightly greased baking sheet.
Bake at 350 for about 20 minutes or until lightly browned.
Makes about 30. Refrigerate leftovers. Reheat very well in microwave or oven.
Approximately 1 carb each

Notes:

*These freeze really well.
These have about one carb each. Please calculate nutritional information on your own for accuracy.

Hi Caroline! Glad you are back! I think it's quite an achievement to keep from gaining during the holidays! Don't beat yourself up, the holidays are hard.

I finished my Christmas decorating today. It took me a little longer because I'm dealing with a painful shoulder. It's such a good feeling to have the decorations done! Now I need to focus on getting my Christmas shopping done!

Hi all
Got home from our trip to Florida.
I was not perfect Thanksgiving, but not bad at all.
I went up 1 pound but also did not lose any.

I am posting something I found about not losing on Keto.
I will make a new thread called Not Losing.

I am back with you and proud of you two for being better than I was. lol

I stuck to a keto friendly Thanksgiving dinner and really did not feel at all deprived! I made some buttered green beans with bacon and caramelized onions, squash casserole, bacon wrapped sausages, and chocolate pumpkin pie with real whipped cream sweetened with swerve. We had a pepper smoked turkey that was delicious and I skipped the mashed potato dish, the regular squash casserole, the strawberry pretzel salad, the chinese slaw, the rolls, and the sugary desserts.

I skipped breakfast and just had a light dinner when we got home last night so I was able to come in pretty close on carbs and calories. The ratios were a bit off because I had more carbs than I usually have but I'm proud of the fact that I stayed on plan and even met my step goal yesterday. This proved to me that this is doable as a lifestyle!

I hope you all had a wonderful and blessed day with your family and friends and that you were able to meet your goals! If not, today is a new day and all you have to do is begin again :)

I never go to the Black Friday sales...too crazy for me to fight all the crowds! I took down all my fall decorations this morning and walked out in the woods gathering greenery and pine cones for the mantle and to make other garlands. We are starting to decorate for Christmas this weekend! I have the mantle over the fireplace done, but have 3 trees to decorate and the foyer, living room, family room, and kitchen to decorate today.

Yes Amazon..i have Prime so it was free shipping and got here in 2 days. the biscuits are AMAZING!!! i really missed the stuffing and mashed potatos, yams and sweet pickles. and pie and ice cream. The cauliflower casserole was DISGUSTING. I cooked it just as the package said....and the package also said..you will never miss mashed potatos again. these are better..same texture..richer taste with bacon and cheese.
they were soppy wet. tasted horrid. i was so disappointed. and yeah, i resented not being able to have Thanksgiving dinner...but i stuck to it. hope everyone else does, too.

I have to say..i made the carbquik cheese biscuits today for my treat tomorrow...i am AMAZED at how much they taste like "real". Pleasantly surprised..and only 2 net carbs!!! i had one out of the oven with some butter...thought i was in heaven..can imagine them with eggs and bacon for breakfast!!!

Some pre-made pumpkin pie filling can be fairly low carb. Just read the labels, divide the carbs by the quantity on the label, and pick the lowest one.

Make the crust from almond flour, eggs, and the crust will be low carb too.

Home made whipped cream, to put on top, with only a little sweetener is pretty low too.
