For dinner, I made spaghetti squash in the slow cooker and topped it with sauteed faux-sausage, onions, peas, raw pumpkin seeds, and spices. I also made it low fat and skipped the Nut Cheese. It was fabulous! Definitely a make-again recipe.

I made Cream of Mushroom soup last night and it was delicious!! If I hadn't made it myself I would not have believed it wasn't full of butter, cream and flour. It was so thick and creamy and sooooo good!!

Yesterday I had the fruity oatmeal for breakfast. Lunch was leftover primavera, afternoon snack was white bean hummus and carrot sticks. Dinner was two homemade bean/veggie burgers from the freezer on Dave's killer buns with BBQ sauce. I am out of lettuce and need to fix that problem today.

It was your dessert smoothie that was so good? I will have to give it a try.

My dinner last night was REALLY good. I ended up having three platefuls of the Vegan Pasta Primavera (didn't make the pad thai). More pasta than I should have eaten, but lots of veggies, too.

Today's breakfast is 1/4 cup oatmeal, splash of grape juice, some walnuts, frozen marionberries, sliced banana in microwave for 3 minutes. Stir, let cool a bit. Tasty.

Breakfast - smoothie made with fruit and mixed greens. Yuck.

Lunch - black bean vegan chili topped with guac and pico

Dinner - eggplant hummus with cherry tomatoes and 1/2 whole wheat pita

Dessert - smoothie
kale, spinach, banana, strawberries, dates, hemp milk, almond butter and cocoa powder

Breakfast - honeydew, apple and cucumber smoothie blended in spinach and kale.

Lunch - FANTASTIC black bean soup/chili that I made topped with fresh guac and pico. Soooooo good!! I'm excited about making more soups!

Dinner - 1 whole wheat pita, 1/2 cup eggplant hummus
Dessert - smoothie with hemp milk, dates, banana, almond butter and cocoa powder blended with spinach and kale **DELICIOUS**

I had a smoothie with fresh mango, baby kale and cucumber today. It was sooo good! Without any berries it was very smooth and refreshing.

Lunch was just carrot sticks and 1/2 a pita with eggplant hummus

I'm having a big green salad for dinner.

I cleaned out my fridge making a black bean soup...it's in the crockpot now. I hope it turns out good!

Breakfast was 5 grain Levin bread, red current jelly, and coffee.
Lunch was a salad of Romaine, celery, mushrooms and hummus.
Dinner may be parsnip soup, roasted beets, and turnip greens. Not sure what else. But a mixture of veggies.

Br.-1/2 servings of POST nut and fruit cereal, plus 1/2 c. almond milk, 1/2 whole grain toast, no butter or jam, 1 cup mixed fruit-watermelon, fresh black cherries, and fresh raspberries 2 tbs. ea. walnuts and flaxseed, green tea and water
Lu. - 2 Tb. guacamole and 1/2 serving corn chips- coffee with mocha
Di. 1/2 serving chicken fajita with lots of veggies and salad-at mexican restaurant.( off diet for evening as we celebrate with family gathering. )
will still get most of our G-BOMBS in-but too much fat I am sure.!

DD fixed dinner-
Blueberry pancakes
Comfort food for us all.

We all need a little comfort!
Her DD is traveling off to Alaska to be married without us.
And start new job.

And several of our front lawn trees are being removed( old and starting to rot in trunks)
So we are feeling very sad too!!

Kola, no problem. Thanks for all the info and links. I'll have to start looking for a whole wheat version. Sounds like you found a couple of links to products that are actually whole grain, and not enriched. I had quit looking for whole wheat pasta that I liked when I discovered how much I really liked my own home-baked whole grains. But every once in a while I want a coucous salad with vinegar and cucumber, tomatoe, and a couple of other veg. Rice or quinoa or oat groats just isn't the same.

Hi Bravelute!

I do use frozen Kale (from Costco) in my green smoothies. Portobella mushrooms, occasionally. I've been looking for green beans or sugar snap peas, but they haven't looked very fresh when I've found them. I did buy frozen peas, but haven't used them yet. I love zucchini -- and you can only get it in the summer here. So I eat a lot of it.

Now I must sincerely apologize to you, Bravelute. I am home now and checked the boxes of Couscous I have. They both say "Durum Wheat Semolina", which pasta and some breads are made from. lol -- I was 100% sure it was whole wheat.

KOLA, I think your list of staples looks great!! The only other staples for me that I didn't see on your list is kale, brussels sprouts (sometimes frozen) mushrooms and green beans. And I don't think any of it is coming from Florida. Our growing season is pretty much over for veggies.

Where do you find the whole wheat couscous?

Hi Bravelute! The Couscous I used was made out of Whole Wheat grain. Actually, I've never seen it made with White Flour.

Oops! I forget about the Flax Seed sometimes. I do have some walnuts with me. So on my last work break I will eat some. I'll put Flax Seed on my dinner salad. (My dinner salad is HUGE. It takes me a long time to eat it.)

Sometimes when I make 2 servings of smoothie, I freeze one and bring it to work with my lunch.

I will start bringing a salad to work with my lunch. I'll have to look at the Veggie list. I do pretty much stick with the same veggies. Although the smoothie Zucchini was green and the casserole Zucchini was yellow. We're kinda limited here with fresh produce. If you don't get it the couple days after it was delivered, you see a lot of withered, sad produce. I missed out on the delivery of Chinese Cabbage and Bok Choy. I'll get them next time. I do have different lettuces and spinach. But green peppers, celery, tomatoes, onions and carrots are my staples. I did buy a cabbage. I'll use that this week.I have a recipe I want to try. Meanwhile, I will chop some and put it in my dinner salad.

Kila619, I heard on a cooking show that whole grain couscous is available. I haven't found it yet. What I find is always made of white flour. For more nutrition we should be looking for products made from whole grain. Cous cous is just a pasta cut very small.

So you had your grain with that casserole, and I don't see any other grain or starch so you're right on target. Looks like you had your minimum 4 fruits at breakfast. You've planned for your beans. So what about your flax seeds and nuts? Are they going on your dinner salad?

And if your salad is your meal, it doesn't sound like you started with a salad for lunch?? I can't eat all of that raw veg, but if it's not a problem for you, you might look at starting lunch and supper with a salad (if you want better results).

The only other thought I had was you have zucchini twice. Nothing wrong with that as long as you are varying your green vegetables and other vegetables throughout the day and week.

I'm on the 6-wk program (pretty much).
08/05/13 - B - Smoothie - Sm Zucchini, Sm Apple, Sm Orange, Banana, Frozen Pineapple
1.5 servings -- drank it all
L - Leftover Italian Zucchini Couscous Casserole with 1 cup beans
D - Probably a large Salad with cut-up veggies.
Snack - Probably some Hummus I made yesterday with celery sticks.

**I think I'm not supposed to have the Couscous, but the recipe sounded so good, I had to try it. Actually -- the recipe called for Quinoa, but I didn't look at the recipe and made Couscous. (I've had Couscous on my mind. lol)

breakfast smoothie: banana, dates, fresh figs, almond milk, blueberries,cocoa and steamed kale. 550 calories of yummy goodness!

lunch: large salad with a tomato, cucumber, white bean, tarragon vinegar medley on top

dinner: lentil & veggie soup with a large side salad
dessert: one of Brave Lutes Possibility Balls. (so good)

B: smoothie with fresh blueberries, banana, kiwi, plums and spinach.
L: leftover corn salad with all sorts of other fruit and veggies in it, on top of mixed greens. (This was from a BBQ, the person who brought it told me there was just lime juice in the dressing. Then later also admitted there was also a little olive oil, just about 3 inches from the bottle. Lol, most of that has since been drained off...)
D: fettuccine with cashew sauce and steamed broccoli and green beans and a salad

I saw no "rules" for this thread but I think it would be helpful for others who are looking for hints about how to make ETLwork to include if you are on the strict 6 weeks, Life plan, or one of the 3s Steps to Incredible health levels.

I don't think it would be helpful if a new person came looking for help and I posted everything I ate while away at the Hyatt Regency in Jacksonville for a week. (leaving tomorrow. Hope I CAN find some ETL friendly restaurants there!!)

What about you, Anne-Margaret, are you looking for suggestions about how to bring your menu into line with the "ETL rules" or do you just want us to know that not everyone follows the plan exactly?

How do you think you did with the 4 fruits, pound of raw veg and pound of cooked veg, beans, nuts, and limiting animal product to 1 serving a day? And limiting fats and oils?

Well, thought I'd reply since I already know what I am eating today - not always the case with me!

Breakfast: rye toast, cottage cheese, blackberries, strawberries, coffee w/ half & half

Lunch: veggie salad (cut stuff up last night, whew), egg salad sandwich

Dinner: other half of the delicious halibut I cooked last night, roasted veggies

Lunch: yesterday's lunch leftovers:
cold stir fry of **kale, **broccoli, celery, **onion, chickpeas (home cooked), **sugar snap peas, *sweet peppers, **grape tomatoes, zucchini, **garlic, to make a hearty stew ETL Soup #2 (recipe in my 3 steps to Incredible Health Recipe Collection, link is on the team link page) Hard boiled egg
Cantaloupe
**tea

Dinner: yesterday's dinner leftovers:
Stew: **Garden shallots, **broccoli,** edamame,** lentils, celery, **ETL soup #3
I used up the acorn squash, so I'll switch that to left over sweet potato

Dessert: banana, **cocoa powder, peanut butter powder, oats
**Tea

That's 1108 mg sodium, 1495 calories. My range at this point without my evening workout is 1803 - 2153. So I'll need to add maybe a salad with nuts and beans. Don't want to eat any more loaded carbs. I'll see how the day goes. I'm out of greens today and going away for the rest of the week, but maybe I can find a box of spinach and a couple tomatoes for salads and morning smoothie before I leave.

Note: I am following ETL 6 week plan, Or 3 Steps to Incredible Health, Level 3 (strictest level) However, I'm trying to use up fresh produce since I'll be a way a week. I'm out of salad greens and need to go to the store for them. Because of cancer I'm not able to tolerate a lot of raw veg at one time,so I eat greens raw in the salad, and add lightly steamed veg and1 other raw veg to my lunch and dinner salads,

Grains and starches: 1 bread, 1 sweet potato
cooked veggies: 2 pounds +
Fruits: 5
Nuts: 1 ounce
Beans: 1/2 c total in different recipes
Animal product: 1 (egg) today. None yesterday, none tomorrow.
Fats/oils: none
