what is healthy about your egg is that they are not added to no chemicals and the chicken lives a stress free life and the egg is strong as it should be. The unhealthy part is it is still high in cholesterol, fat and protein. Those things are bad no matter how healthy the source. You also have to look at who is doing the study.

The eggs that I buy from a farmer are free range. They are so free range they try to get into the car with me. Now when I do the 6 week challenge I do not eat them- but I do make them sometimes for family and I sometimes make a tofu scramble instead- what is strange is that I don't know which one is actually healthier- because info can be confusing.
I am glad they like both. I don't think they should be eaten every day.

I use flax seed meal and water... I have a 1/4 measure cup I fill half way with flax and then fill to the top with water and carefully stir and let set for a while...it will turn to a gel like look...it does remind me of eggs.

so, in a recipe that calls for eggs, what else can you use? I guess I won't be having any more egg salad sandwiches, or deviled eggs. . . I've had my quota for the year...lol.

Thanks for the link to the article. It's good to be reminded that some of the things that make them, "the incredible egg," are also maybe not so good for us.

I was surprised when I completed the 6 week challenge last Spring, that eggs were one of the foods I missed most. I decided that I would allow myself the occasional egg going forward, but have found that, now that I've given myself permission, I don't actually want them all that often.

I guess we can always find something to prove whatever it is we want to think / believe.

I am an avid consumer of eggs and will continue to do so. We have chickens and feed them scraps and receive a wonderful "perfect" protein able to used in so many recipes!

I don't eat to many eggs but I do eat mixes that probably have eggs in them

That's pretty scary information. I'm not fond of eggs so I only eat them now and then. I may eat them less after reading this!

I love,love, love eggs - this has been the hardest thing for me to give up. That is surprising to me, I thought it would be pork of any kind or cheese, or other dairy, but nope,it's been eggs. So, I still have eggs on occasion. Rare, rare occasion, and they still taste great to me. That's why it has to be so rare.

Thanks for the reinforcing article (plus the cruelty involved in that whole market helps keep me on track too.)
