I have found that having one "prep day" where I cook several full meals and then put them into measured containers really helps with cooking for one. Saves on the budget. Since I get tired of one meal, I usually do 3-4 depending on how difficult they are. One day (a couple of hours) in the kitchen for a full weeks worth of breakfast, lunch and dinner.

Patriots, Red Sox, Keto, Zumba, Highland Games are my passions. I may live in Oregon but my heart still roots for Boston!!

I don’t have a plan right now, which is a problem. I also am having trouble cooking for one... another issue that I used to have a handle on. Basically my plan and routine have fallen apart in the past couple of years. I am going back to the premise of making one small change at a time in a bid to get back on track.
