Our go-to meal at our house is macaroni and cheese. I have a lower calorie version that I tend to make when I'm on the go and we don't have a box. Even the box isn't that bad calorie wise. Not the healthiest, but in a pinch it works.

I usually do broiled chicken seasoned with some fresh citrus and herbs. It's the one thing everyone enjoys. My husband's favorite, though not the kids is baked tilapia with fresh chili sauce. Thinking about it... why is it chili sauce and not salsa? Is it just because it's cooked? Because it's pretty much the exact same thing.

Chicken Packets

I'm pretty sure I got this from a tin foil commercial when my big kids were little. Iol

Set a boneless, skinless chicken breast in a square of tin foil. Add whatever vegetables you want. Add whatever spices or sauces you want. Wrap up the mixture and put it in the oven. Cook until the house smells like it. Times will vary. Serve by pouring the entire contents of each packet over a bed of rice.

My go to meal is

Preheat oven to 425
sprinkle taco spice on 5 chicken thighs place in a baking dish
cut up a couple zucchini place on a second baking dish
put both in the oven side by side bake till chicken is done. about 25 min.

My daughter doesn't like too much taco spice on hers. So I let her dip her chicken in ketchup.

Easy, very little prep and everyone likes it.

That is a great idea!

My favorite easy thing to make that everyone seems to like is chicken enchiladas. I cook chicken breast with a can of rotel, cream of chicken soup (you can get the low sodium or low fat kind) and cream cheese (again, you can use a lower fat version) in the slow cooker during the day. When I get home I mix shredded cheese and shred the chicken, which is pretty easy, then scoop it into tortillas, roll em up and pour enchilada sauce on top of everything. I then bake it in the oven for about 20 minutes so everything melds together and is warm and bubbly. I usually do black beans with it.

This isn't the healthiest thing but it is easy to make.

I try to sneak fruits and veggies in wherever I can. My boys are 3 now and seem to be getting pickier. They love spaghetti and lasagna though and I can make both really healthy. The lasagna obviously takes more time to make so I would say spaghetti is my go-to. I use whole wheat noodles and turkey meatballs and go crazy with veggies in the sauce. It's fast, easy, inexpensive and my husband and I can eat it too. We usually have a salad too but the kids won't touch a salad yet. :)
