So, I wanted to share some humor with the team. During the BINGO game, I finally got to use my Chair Bellydancing DVD. I almost fell off my chair. I can just see me trying to explain to the doctor how I broke my hip bellydancing! Anyway, my healthy meal to report was lean pork tenderloin and Brussles spouts. Hope that everyone is doing well.

Happy Hump Day All teams! Can’t believe we only have three more weeks of the challenge. Phew! It’s gone by fast. emoticon

My favorite new healthy treats are Boca veggie turkey burgers (they’re vegan) with Chao creamy cheese slices (also vegan; by Field Roast Meat Co.—ironic name for a veggie/vegan products company lol). I’m enjoying finding new products to incorporate into my mostly vegetarian/vegan diet and healthier lifestyle.

It’s cooler but sunny today. ☀️ Will rain tonight then colder again. 🥶 Not snowing like other parts of the country, or as much blustery storms. (Thank goodness!) Strong winds we’re getting here in brrrreautiful Florida is enough! Lol Stay warm and enjoy the challenge, teams emoticon ~Kim, Pink Flamingos

It's 19 feels like 9 with a high of 36 for today. No snow or ice of the ground so we got lucky again from the last storm to roll through yesterday. Almost all green just missed floors and some how came up 1hr shy of achieving my steps per hour goal. Had 14,183 steps yesterday. Today's workout plan is Back and 15 min treadmill walk.

This week's healthy food is blueberries. They happen to be on sale all over so I bought 6 containers (and two containers of blackberries). I've been snacking on them during the day at work. Plus I put some in the freezer. Love eating them frozen. And I added some blueberries, strawberries and blackberries to my salad at lunch. Gives it a different flavor.

My healthy food is protein bars:
Ingredients

1 scoop vanilla protein powder (40 g; a heaping 1/2 cup)
1 teaspoon cinnamon
1 cup rolled oats (96 g)
2 tablespoons coconut oil (26 g)
1/2 cup natural almond butter (118 g)
1/4 cup honey (74 g)
1/2 teaspoon vanilla extract
1 tablespoon water *if needed

sea salt for sprinkling

Instructions

Combine the protein powder, cinnamon and rolled oats in a 7 cup food processor fitted with a steel blade. Blend until the oats are powdery and blended.
In a microwave safe bowl, melt the coconut oil. Stir in the almond butter, honey and vanilla extract until smooth.
Add the liquids into the food processor in two batches, processing in between. Process on high for 1-2 minutes until mixture is completely blended and mixed together. You may need to stop and press the mixture down a few times with a spatula.
If mixture feels dry, add 1 tablespoon of water and process again.
Line an 8 x 8 inch baking dish with parchment paper. Scoop the protein bar mixture into the pan and press firmly with a spatula.
Sprinkle with flaky sea salt.
Freeze for a minimum of 30 minutes before slicing into bars.
Keep bars in the fridge as they become soft at room temperature.

My go-to has been nuts. Walmart has a bag of mixed nuts that were really good without peanuts. I go for low salt, if any salt usually. These were a pleasant surprise. I also go for yogurt. Sometimes I just don't feel like eating, but a yogurt seems like a treat. Both snacks are protein, and that is what makes my body feel best.

Good Morning!

Yesterday when I got home from work, my husband was eating chips with dip. I love dip! I made the conscious decision to have an apple with "dip" - 1 tablespoon of peanut butter! I actually had peanut butter left after the apple was gone. I was very proud of my NSV!

I just wanted to share this healthy food choice with all of you.

My pantry was pretty organized and I admit a couple months ago my granddaughter helped me purge it. Something that hadnt been done since Ashley died. He used to re-organize it about every month after he retired, making it better. I did check dates.

My healthy food is homemade whole wheat bread,
toasted, with avocado & sliced tomatoes. A drizzle of EVOO & a sprinkle of salt & a grind of pepper makes a nice, filling breakfast. I also sliced an apple, sprinkled cinnamon on, and put it in the microwave for 3 minutes. YUM!

In organizing my pantry, I have found putting items in bin helps keep it organized and cleaner. When something leaks it is contained to the bin which is easier to clean. I can also pull out the ones holding the cans to find expired items quicker.

When I organized a pantry shelf I found several things way past the best buy or expiration date but there was one can of pumpkin that hat 12/18. I prepared pumpkin soup 50 calories per cup and ate it with cornbread.

My kids requested egg rolls for their visit so my daughter helped and we cranked out 90 egg rolls. I use 2 pounds of carrots, 3 red and green peppers, 1 whole bunch of celery, 2 bunches of green onions, 6 jalapeos and a huge head of napa cabbage for all those goodies. I baked one pan for me and fried the rest for the gang. One of my favorite ways to get in a lot of veggies.

No trees or animals were harmed in the producing of the message, but many electrons were seriously inconvenienced!!

Laughter is the best medicine!! Always find the bright side even when it looks totally bleak.
