Good idea! I love this recipe! You and your family will never know it's low in fat and packed with veggies. It is rich, flavorful and delicious! If you have a veggie chopper, (I use the one from pampered chef) now is the time to use it, or else get out your grater or food processor.

SPAGHETTI WITH MEAT SAUCE

.5 lb. of lean ground turkey
1 medium yellow onion
1 cup finely chopped or grated carrots
1 large zucchini finely chopped or grated
1 cup of chopped brown mushrooms
3-4 cloves of garlic minced (more or less if you like)
1 can of Tuscano Marinara Sauce (Trader Joe's)
1 can tomato paste
italian seasoning
fresh basil
.5 cup white wine
.5 cup 1% milk
1/2 package of whole wheat spaghetti pasta
1 T. balsamic vineger
salt and pepper to taste



Directions

Makes 6 servings. Cook the spaghetti noodles according to the package directions. Brown the ground turkey in a large pan. (You may need some non-stick spray if your turkey is extra lean) Chop all of the vegetables and add them to your browned turkey. Cook until veggies are cooked through. Stir in the garlic, basil and italian herbs. Add the white wine and deglaze the pan with it. Let the wine cook off. Add the milk and let the milk cook off being careful not to scald the milk. Add the marinara sauce and tomato paste. Check seasonings to make sure you have enough salt and pepper. Finish the sauce with the balsamic vinegar. Mix in the cooked pasta and enjoy.

Cordon Bleu Casserole

4 boneless, skinless chicken breast
2 slices virginia baked ham
2 slices swiss cheese
1 can cream of mushroom soup, I use reduced fat
1 box stove top stuffing, any flavor

Place chicken in a 9x13 baking dish. Cut each slice of ham in half and place a piece on each chicken. Do the same with the cheese. Pour the soup over top. Pour stuffing over top. Place in a 350 degree preheated oven and bake 35-45 minutes or till chicken is done.

I serve this with green beans or some other green veggie.
