An edible landscape. What a clever idea. My husbands thumb is a lot greener than mine. He is more of a minimalist so he likes to plant in rows. I would love to try some of those ideas but since he is the gardener, it has to be his way. TRUST me on this. 🙄. I took pics of my potted herbs. My phone is dead, I will post later. My strawberry plant is not doing much but the others took right off. So my weather here in SE LA has to be about like yours Hollie. I don't have much luck keeping things alive outside. Do you think I should keep the herbs in pots under the porch roof to avoid to much rain. I made a mistake last year (our first summer here) and I bout drought tolerant plants. They got too much rain and then died of an intense heat stroke (temps hovering around 100. We decided to focus on sub topical in the yard (bushes, flowers, trees). Would the herbs due well planted in the ground in full sun, or under the shelter of the porch roof?.

MRSL we are interested in “foodscaping”. Just not in this landscape at this house. It’s had too many chemicals there. So for now, it’s pots. We often watch videos called “Growing a Greener World”. It’s on PBS if we catch it but usually find the videos on YouTube. We binge watch them.

Our fresh produce box arrives today from WORTHY FLAVORS. Don says it comes tomorrow. If so today we’ll eat from the freezer. Baked sweet potatoes and freezer veg or soup. I cooked up most of the fresh veg for dinner last night. I even sautéed the leaf lettuce. Other than collards, we like the lettuce best.

Linda do you have a table or picnic table outside? You can easily have a planting box on top with no need for bending. Try easy things first, like lettuce or spinach. Even carrots. Most of the leafy things love cooler weather.

Mollie, yes, gardening. We have mild weather here, but might still get a freeze in Feb, so it is early yet. I don't think we will be able to pull it off this year, since I had surgeries and dh went back to work.

LOLABRUG, I love it when the seeds start to hump back up through the soil! I meant to get greens seeded yesterday, but I got too busy around the house and didn't get it done.

I'm in zoom meetings with NJ teachers all week long so I won't be on very much. I'll check in when I can, but you guys don't need me to hold down the fort! I hope you all have a fabulous plant-based week!

Gramcracker- Yes I have had regular bouts all of my life with hypoglycemia. As I got older, I could pinpoint what caused an episode. For instance- boxed breakfast cereal even the healthy varieties will cause me to crash before lunch. Grits will do it if I don't eat protien with them. Orange juice will cause me to crash also. These are my top 3 causes but only if i eat them for breakfast. I don't know why.. The other thing that will cause it is going to long without a meal. That rarely happens as I am always prepared somehow. Keep nuts in your car to avoid going to long without eating. Keep hard candy for a quick fix if it already crashes. When I am strictly wfpb it never happens which also tells me that the things I am eating now are good quality and highly nutritious. I hope this helps you.

Lady Gardeners: I have basil, cilantro and a tiny strawberry pot in my window sill and they've started to sprout!

Gardening??? LOL, I am looking out my window at the snowflakes falling on my garden beds, it will be late May before anything (seed or plant) goes in the ground. Thankfully I rely on mostly perennials for all my non food crops.

It will be nice to get back to gardening. Now that dh is working again, it probably won't be this year... maybe a little. Here in Texas, some people are already preparing to plant. It is a too early, but they prepare the ground. It will of course be organic.

Beautiful. I have a four or five slowly growing volunteer lettuce plants growing in my flowerbox. And we are getting a couple salads from the ones I brought indoors to the sunny window. I plant every romaine stump to get a little leaves but to promote making seed in the spring. I like to be as self sufficient as I can.

Graham: I've had a terrible time starting parsley from seed. I really want to have some because of how terrific it is nutritionally and so many recipes I'd like to use it in.

I'll be planting carrot tops in my outdoor garden next to my kale plants (also growing slowly in the cold). They are for soup greens and eventually seed.

My goal is to plant at least one seed or plant daily. It seems like a little, but it adds up.

Lettuce in my pots. I hope the right one has lettuce that makes heads. Middle is volunteer parsley and a dying basil. Left one has some garlic in with the lettuce.

Last evening I had a bout of hypoglycemia. I’m not diabetic that I know of. It happens to me rarely. Anyone else have this happen?

Some small peppers I’m chopping for the freezer. The orange ones are sweet and the green are jalapeños. I made the mistake of not wearing gloves for the jalapeños and now my hands are aflame.

Greens grow amazingly well in containers. I have grown two kinds of kale, Swiss chard, collards, and romaine in containers in my backyard and all did really well. There is nothing quite as satisfying as stepping outside to clip your own greens for soups or salads. I'm actually just getting ready to place my seed order for the spring. No worries, Graham on the bamboo. I plan to buy the kind of bamboo that is not invasive and will also be growing it in a tub so it cannot spread. Thanks for the heads up, though. You are right.

Just a plug for growing your own organic food that did not have a big ecological footprint from being transported from farm to home. Greens are very easy to grow and even if you only had pots of them on your porch it would contribute to your health and help the environment at the same time.

MrsL campfire meals? We call them foil dinners. I’ve been know to make them in my oven.
Also bamboo is invasive in that it spreads and it’s hard to get rid of. So plant accordingly. I saw another pbs show that had an upright old bed spring for climbing plants.

Lolabrug: Your recipe reminds me that I'm missing our favorites: layered vegetable campfire meals and simple scalloped potatoes! Thanks for the reminder.

On another subject, I try to live as sustainably and economically as I can. So I'm always adding things as I can afford them to further that goal. One small thing that I'd never thought of before is the unnecessary plastic pollution from toothbrushes. I hope to start ordering biodegradable, probably bamboo, toothbrushes. Unrelated, I hope to buy some clumping bamboo so that I can eat bamboo shoots and have bamboo for trellising plants.

I warmed my H's leftover pizza in the air fryer (oven) and baked my pizza and some fries in no time at all. Everything was crisp and the fries were so fluffy in the middle. I made up and awesome recipe today. It was really good. recipes.sparkpeople.com/reci

Its amazing how once you know how to make things without oil, you realize that you had been adding extra zero-nutrient calories to your diet that you did not have to. I prefer air fried "fries" and wish I could get them at fast food places now that you can get a veggie burger.

Holly: In the meantime while you save for a new stove/oven, you might think about picking up a toaster oven from a thrift store. I see these all the time, especially at the end of the school year when kids leave dorms. You can do a lot of baking in these. In fact, you can also bake in electric skillets. You just need smaller baking containers. The dollar store aluminum pans fit this nicely.

Mostly, I use my cast iron pan (and have for 20 years on an electric glasstop stove). I have picked up random things on deep discount at scratch and dent stores (you would be surprised what they have). I found a really great ceramic nonstick pan at the scratch and dent for very little. I don't use oil, so my walton nonstick pans are the best I've found for baking.

Airfrying without oil. First, get the larger egg-shaped air fryer if you get one. For buffalo cauliflower (also try the Sweet and sour or General Tso's cauliflower, too), I would use my regular oven because I don't own those stainless steel stacking things that let you have several levels in the air fryer.

It helps to let your battered cauliflower set for 15 minutes before you bake. I bake on a piece of parchment paper on a cookie sheet (no sticking). I can't remember the time or temperature. I like Brand New Vegan's recipe for the buffalo cauliflower.

Fries are different. I put a ton in the air fryer and just stir every 4 minutes at 400 degrees until all are crispy.No oil used at all. Since the fries aren't battered like the cauliflower, they don't stick together as like the cauliflower would. The batter would come off if you tried to stir them in the air fryer.

I made a post on the McDougall forum (recipes) about how to cook without oil. It took awhile and lots of practice to get it right. I don't miss oil AT ALL and neither do my hips. emoticon

Those are good brands. I have hodgepodge. I love my Wolfgang Puck large stainless chicken fryer with a glass lid. It goes in the oven too and cleans up like a whiz. No I don’t fry chicken in it. I have Rorence large stainless sauce pan and two sizes of Circulon hard anodized skillets. They are nonstick. The rest are old pieces left over from sets. Mostly now I cook in my Corning ware in the oven. For instance, tonight is shepherds pie in the oven. I also have an electric food steamer but am thinking I’d rather just have a steamer insert for the sauce pan.

Thanks for the input. If I had gas, I would like the cast iron, but I think it would be too heavy for electric stove?

Holly, looking a Calphalon. Mollie, will check out Lagostina. I have Emeril now. It lasted a long time, total nonstick, now getting scratches. I need a set with more saucepans. Would love All Clad, but major bucks. Has anyone tried Duxtop or the ceramic non-stick?

My set is stainless steel Lagostina, I have had it for close to 20 years, use much of it every day and it looks like new. I also have a couple of nonstick "Rock" pieces that require no oil and are not Teflon coated.

I have stainless steel (very old Caphlon) and cast iron. I do have a small ceramic skillet that I pretty much only use for cooking that plant-based Just Egg product because it doesn't stick in that pan. The down side of the ceramic is that it doesn't seem to heat evenly.

Great discussion and I love hearing the good, bad and ugly about Air Fryers. Thanks!

I just today cleaned the heck out of my stand mixer that's been sitting on the counter, unused, for months.

It's helpful making cookies and breads. I don't WANT to make cookies and breads -- because then, I'll eat them.

Lola, congratulations! Enjoy your new things. Always fun.

I don't have an air fryer or an instant pot. Right now I want new cookware. I have asked before, what type do you like to use? I was looking at a stainless steel set with a frying pan that is non-stick on Amazon. Has anyone tried the ceramic type? Or that copper pan that is pretty that is advertised on TV? You can get a whole set of that one.

I would like a new stove, too. That will have to come later.

LOLABRUG, it sounds like you're in appliance heaven! I haven't bought a new major appliance for 14 years and that was a washing machine. I've groaned previously about needing a new oven, but I refuse to get one until I can pay cash. I have three working burners and the roasting element (top) still works, but the bottom element is fried. Since I can't bake anything I depend heavily on my air fryer and I love it, but I get that they are not for everyone.

LOLABRUG how fun to get new appliances. The last time I bought a fridge, I opted for the 10 year compressor warranty. Only to find out the inside didn’t suit us. Oh well, I guess I’ll keep it for the remainder of the 10 years.

I bought an air fryer and wish I hadn’t. It’s not the egg, but one with trays that slide out. It came with gadgets like a rotisserie that I couldn’t figure out. Anyway it still doesn’t make enough fries for the two of us and I end up putting everything in the oven. NIGHTGLOW, save your money.

I am however very happy with the Vitamix and for an older Cuisinart food processor my daughter gave me. I might sell my electric food steamer on marketplace and buy an insert to a sauce pan. I have an addiction to kitchen gadgets and appliances. I still don’t have as many measuring cups as MrsL.

My new stove came with an air fryer option in the oven. I used it a few times and like it. I tried the FOK cauliflower buffalo bites. They weren't real crisp but I am totally addicted to them. Who would have thought that BBQ sauce on cauliflower would be that good. NOW I get what the whole cauliflower trend is about. Mrs. L- I could use some tips for air frying without oil. Any thing you can pass on?

My new oven came on the same day as my new washer and dryer. And my new fridge is coming today. I love my new toys and can't wait to get the fridge. We are getting water and ice n the door. Never had one before bc the water in Nebraska was so hard that it would eventually lime up. We are excited to get this item after 38 years of marriage Lol.

I won't buy one, like many other appliances I see seem them as stuff that will sooner or later lose their appeal. I will stick with my sheet pans, parchment paper and trusty wok.

Gram, LOL. Chili can be hot. I am so used to spicy, I don't even notice any more.

Holly, I guess I am so used to cooking for two, I rarely freeze anything. We just eat the left overs.


Got my stitches out. Still have some pain, swelling and numbness. If it does not look right when it heals, the doctor will fix it (more cutting). I did not realize that a basal cell carcinoma could grow so fast.

It's definitely been good chili weather lately. I've been trying to finish off a batch of sweet potato chili I made, but I think I'm going to end up having to freeze some. I'm thinking about making lasagna rollups tonight. I acquired a tub of Tofutti Better Than Ricotta at Rollin' Oats a couple of weeks ago and I think it's time to try it out.

That sounds good Mrs. L. I used to love pimento cheese too. When I was a kid and had to take food to events, my mom always made pimento cheese sandwiches for me to take, cut into 4's.

Last night was vegan chili. I used the frozen crumbles, a large can of crushed tomatoes (32 oz?), 16 oz. corn, 16 oz. of black beans, 1 C. onion, 1 C. bell peppers (I had the green red and yellow frozen), 1/2 C. celery, chili powder, cumin. And a little water. Delish! We have leftovers, so I will make tamale pie with it this evening.

Getting stitches out today. I did not realize that basal cell carcinoma could grow so quickly. The last one I had did not.

MRSLIVINGWELL, I would so love to hear about how that comes out! I used to buy pimento cheese at Lucky's Market, it was just the best! I ate it by the tub full. I just googled "vegan pimento cheese spread" and there are some recipes out there!

I totally agree with you GRAMCRACKER, keto can cause a lot of health problems for some people, though I know that it is sometimes recommended by doctors to help with other medical conditions. As I have no conditions that would benefit from keto, I have no intention of trying it. I just checked that one out out of curiosity, and there still might be a few worthy recipes.

LOLBRUG I think keto can help with weight loss but is bad for our health. Believe me, I’m someone with heart disease and I can not eat that food. My arteries would seize up. For weight loss, cut back on fat and eat more veggies.

The fajitas were delicious that. We ate every bit of that gallon of veg with a warm tortilla. Tonight will be our fav enchiladas.

About Keto- has any of you tried it. I am a little reluctant to throw my body into keto acidosis. I have to admit however that I haven't done the research on it and a lot of my friends have found success with it.

I have been FOK/Plantstrong since Jan 4th. Have not lost anything this week. Lost a couple pounds last week (what I gained over the holidays). Big NSV: My BP was consistently 135/110 or so for the last few years and for the last 4 days it has been WNL. Today 110/72. I am consuming little to no cholesterol now. I expect those numbers to go down as well. I am over 95% Plant based. I allow myself to eat meat/fat on Saturdays. Also if I am on the road with DH and we don't eat at a WFPB friendly restaurant, (hard to find in SE Louisiana) I will choose the healthiest options available. I am not one that can easily skip a meal. My BS will drop and I get weak and shaky. So a lot of times I will eat a PB small meal before we go out and then have a salad at a restaurant if he needs to stop and eat.

We have the Greek restaurant chain Alabasha in our area. LOVE it!! I get falafel and he can get lamb/beef/whatever. La Carreta's has really good salad. I plan to try them all. The Straw berry salad is particularly delicious and it comes with alot of walnuts. I order it meatless. Forgot to hold the cheese though- Feta I think. It was just a few tablespoons.

Any tips on dining out? Seems the protien for me is an issue. There are no salad bars available these days. Wondering if a baked potatoe with veggies would be enough to sustain me until the next meal without the BS drop. Also anytime there is an option for beans it seems like they are flavored with meat.

ICANINSIGHT, snow in south Texas?! That's pretty rare isn't it?

Yesterday it was a balmy 72F and today it's only 61F. Crazy Florida winters....up, down, up, down. Air conditioner is running one day and heat the next.

My local library finally emailed me that a copy of Plant-Based on a Budget is being held for me. I've had it on request for a few weeks, but another user had it checked out and didn't return it on time (it was due Dec. 12th). They also have a copy of Vegan Keto on hold for me so I have lots to look at tonight!

Dinner will be oven vegetable fajitas. Maybe with rice, maybe with a tortilla. I’ve chopped what looks liKe a gallon of peppers, onions, mushrooms and zucchini.

Holly, I laughed at your photo! We are usually warm here in south central Texas, but yesterday it snowed! A lot! There were snowmen all over the place. We got out a bit because the roads were not frozen. It was frozen this morning, so dh waited a few hours before going in to work.

I am keeping my meals simple... and soft. I have lost 5 pounds. Some way to do it!

Thanks for your tips. I didn't buy tofu this week. Not sure how good for you it is. I bought some regular peanut butter and had a sandwhich. Very sweet compared to just peanuts version. My new stove came. It has and air fryer in the oven. We had fries and I air fried cauliflour with FOK bbq sauce recipe. That was really good. I put it in flax egg first and tossed it with a little cornstarch and whole wheat flour. Air fried it then put bbq sauce on it and really it tasted like tyson chicken nuggets with sauce. I may introduce it to my non-vegan freinds.

Good Morning everybody, and Happy Sunday! It is a cold 50F here in The Burg right now. It was 46F when I woke up. I went out and got my mileage in early today and boy does the cold make you move faster!
I am cooking entirely out of my pantry this week so there will be no grocery shopping (and until my daughter's covid results come back I can't go out anyway). Fortunately I'm well stocked, including fresh produce, though I'm a little light on the fruit. Oh well, gotta make due with what I have.

LINDA it says 2 g sugar, which includes 1 gr added sugar. That’s not bad for a serving. I have to remember to mix some up. I’m glad your lip is better.

Helen your son is so handsome, cute even. He’s going to grow up and be one of the good guys. They are rare nowadays so he’ll be a catch.

Lola, I have not got along with tofu a year in. So I decided I can live without it. I tried soft, firm, extra firm. I tried pressing and drying. Yuck. I have weak kidneys so don't need a lot of protein anyway.

Sharon, how much sugar? That seems doable.

I need a green smoothie for some better nutrition. Will try it later today.

Lip is better, still eating soft foods.

LOLABRUG I like PB2, which is powdered peanuts and you add water to make peanut butter. Or you can use it in smoothies and some recipes. Peanuts have fat naturally so even though there is no added oil, it does list fat.

Soooo, I bought tofu last week and I used it for "mayo" and in a smoothie and I was happy with it. The only choices I had were firm and extra firm. I used some of it in stir fry tonight and major yuck!Any tips? I am in the Plantstrong challenge starting tomorrow so no oils. I tried to sauté the tofu in the stir fry sauce and didn't care fore for the texture. On another note. I bought natural peanut butter. The only ingredient is peanuts. Very oily. I stirred it good. It is pourable which I find inconvenient for a sandwhich. Also, DH is not going to like it. I myself like the taste. Do you know of any brands that are not so runny? I will have to keep a jar of 'traditional' peanut butter around for DH but I do like the new stuff in recipes so will probably keep buying it.

Now my dh has to get covid tested. A guy at his new office tested positive. Lord help us. I don't think I can take another thing.

Not much pain now, taking bandages off today and will use Bandaids and antibiotic cream. Get stitches out next week.

I am eating soft foods today. Mashed potatoes, peas, banana, etc.

I had the skin cancer removed yesterday, Mohs Surgery. He had to cut twice because the tentacles were branched out. This is in the cupid's bow part of my face. Then the stitching took 45 minutes, inside and outside my mouth. The pain was horrid. I did not sleep much. Better today.

Last night my daughter informed me that the woman in the cube next to her at work has covid so she and her entire department have been exposed. She will be tested tomorrow. The woman believes she was exposed during the Christmas holiday and since I was at my daughter's house this past Saturday that means that I am potentially exposed as well (and I'm in a high risk category). I am more worried about her than I am about myself though. I will be isolating until my daughter gets her test results back. Obviously if she is negative then I have nothing to worry about, but if positive then I shall have to be tested too.

CC discussion: Mrs.L love how you and your DH are in sync with the finances. My husband is way better at that than me and it has served us well. Holly: I too had some debt. After it got paid off I swore off CC's. Honestly 90% of that debt is something I could have done without. If you truly want to be debt free it is attainable. You can do it!
