We all had a happy holiday and family gatherings for sure!
DS is flying back as we speak to university

I see you also joined the vegetarian and vegan team and tha tlooks active again too.

I am planning on putting time into my illustrations again as well as training for a half marathon...so I will try to check in here but time is limited and space is running out! lol

I'm here
It has been busy..was just checking out my other vegetarian -vegan team to start posing and it has been sort of taken over!
lol
It is an omnivore group but oddly pushing down posts and so lots of mentioing of meats.. very odd!
Not sure what was going on there..Like I said busy. Family. Holiday. Looks strange though...like some sort of odd food battle??

One of the first cook books I had was Laurels Kitchen and that was filled with cheese and eggs in recipes

I wonder if there is a new version?

And I hung out with a group of vegetarians who loved pizza. And we did go to an animal rights meeting. It was outdoors. Quite a few years ago and a militant vegan told me about the cruelties of dairy and eggs. At the time I was not ready. Also his approach was severe. Years ago so don't remember details.
I love Earthing Ed. Ed Winters- what a wonderful activist.

Also- I think for many dairy and eggs can be more unhealthy than meat.

so- my DS is back here on Dec. 15. He is vegetarian. Will eat vegan foods but his GF is not at al and loves meat..salami etc.. anyhow of course she will eat her and does like my food.

So- I am going to cook all kinds of fun things but I also think by the time he goes back on Jan. 4th I will; be happy to eat simply.
I don't have to do it ..and some things are simple such as greens and grain and bean bowls.. stews etc.. but I do enjoy making vegan cheeses and my other 3 kids will be around here too..not for as long but plenty of eaters!!

so- time to make batches of chili. Sauxsages.. mac and cheez etc
emoticon and of course some decadent deserts..all the while paying more attention to portions which I don't usually when I am eating more simple vegan food and lose weight just by doing that ..alright.. got stuff top do!

I remember wayyyyyy back in my youth, I was already a vegetarian, but I saw some PeTA flyer about the cruelty in the dairy industry, and there was a sentence: "There's more suffering in a glass of milk than a pound of steak." That was the push I needed to give up dairy. I didn't like the idea that I was drinking other creatures' suffering.

What a great film! I bookmarked the latest Rich Roll podcast; Keegan Kuhn, the filmmaker (also one of the makers of Cowspiracy), and Fiona Oakes are together interviewed. I'm looking forward to it. Thanks for reminding me and alerting me to the movie.

Hey everyone! Glad to have found this community!

Veganism for me is a natural way of living. Animal products just don't feel like "food" to me. I got married to my wonderful husband in July and all the food we served was 100% vegan. Everyone enjoyed it very much :)

Looking forward to getting to know you all! Being a vegan can be lonely sometimes... My husband and I are the only vegans in the family and we don't know any other vegans, though one of our closest friends is a vegetarian.

NIGHT, I haven't tried the potato, carrot 'cheese' sauce but I have tried Jill McKeever's cheese sauce on YouTube. I use it for mac and cheese and it's soooo good! Below is the link if you want to watch her make it, and the recipe.

Really Cheesy Fat-Free Vegan Cheese Dip. Makes about 3 cups

1/2 cup rolled oats
1/4 cup nutritional yeast
2 tablespoons cornstarch
1 1/2 teaspoons salt
1/4 cup roasted red bell pepper
1/4 cup yellow onion
2 cups water
2 teaspoons lemon juice

Place all ingredients in a blender and process until well blended. Pour into a saucepan, cook and stir over medium heat until it thickens, in less than 5 minutes. If your blender can cook, then process on highest speed setting for 5 full minutes.

I make a zucchini cheese from Jules Aron's book

I made chickpea cutlets from an Isa Chandra recipe- so very good

I've only done cashew mozarella for pizzas. I've been laming out and getting Trader Joe's shreds (good) and other fake cheeses. Now that it's autumn, I vow to make some fresh cashew mozzarella!

Has anyone tried the potato/carrot "cheese sauce"??

so ..virtual coffee break- so happy to just take my little cup of coffee black or with home made almond milk-sometimes I add pecans which sweetens it up.

I'm gearing up to make some vegan cheeses soon....

Had a porridge made of teff- soooo good. Coconut flakes and toasted walnuts and raisins and sauteed apple and spices

Planning on a big lunch salad.

Hello all:

My heart is joyful to see this caring conversation happening here. Thank you all.

I just fasted for spiritual reasons and...it's so strange how easy it is when my focus is about something other than food. I wonder if I could do it more regularly as a spiritual/holistic/energy practice. Fasting *from* food for physical reasons just helps me focus *on* food.

What are your experiences?

Just want to let everyone know I'll be out of town from this Sunday to next Saturday, so I may not be posting all that much this week, but I'll make sure to weigh in and check in now and then. Or hey, maybe my trip will give me more downtime than I think and I'll have time to visit. Here's hoping!

So true what Idgie said- not many have a linear journey.
Just wanting to explore it is a big step towards your health- health of the planet and better treatment.

One your fast is done I find getting a ton of cookbooks out of the library and trying them out is exciting-so many good ones emoticon emoticon
-of course that will be trial and error too..so I suggest taking it slow and simple..

But don't get the books during your fast emoticon well..I mean reading them always makes me hungry.

@CHRISTIAN_V3GAN I think we've all been there, or at least most of us. Very few people have gone their whole journey without eating animal products at some time. I don't pray (I"m an atheist), but I'm hoping that your fast benefits you and that you won't use it to punish yourself.

hello V3gan- you certainly don't have to make confessions here- at least I don't think so-but if it helps we listen.

Fasting is supposed to be a good way to get in tune with your true hunger.

And I have been on and off vegan for years since I was 16- so 41 years but part of that was off.
In the process I have learned a great deal about it and different reasons to continue.
Environmentally - ethically and health. Over time it seems the most logical and rational thing to do.

I'm happy to share. I don't pray I am atheist so when prayers get asked for I try to answer in a practical way. To help.

Your body might have felt it needed meat and animal but it does not to live and to thrive.

This is long but SO good - great debate

CHRISTIAN_V3GAN: I am an ethical vegan meaning I do not only not eat any animal products I also don't wear, use in my home, or anywhere on my body, animal products. This is not for health. This is not for me. This is for my belief in nonviolence. I have a visceral reaction to the idea of having meat or an egg in me. All the violence that lead up to getting that meat, or egg, or leather belt, would be in or on my body.
Every Thanksgiving Day, I fast. Fasting and giving thanks and gratitude, go hand in hand for me. Perhaps you, too.
Perhaps thinking about your dietary veganism as not something for yourself but something for all living beings, for the planet, for this miracle that is the life we are so fortunate to be allowed to live, will alter the paradigm for you; rather than white-knuckling practicing dietary veganism, it will be a pleasure and a joy for you. It is for me. I wish you a meaningful fast.

My most important goal for September is to exercise for longer times a day by having a morning and afternoon round of my workout. emoticon

Leafy greens twice a day, too. emoticon emoticon

I'm going to be trying to meet as many of these goals as possible every day. If I average 9 or more points a day for September, I'm buying myself a new dress:

emoticon Start each meal with a soup and/or salad and/or fruit.
emoticon Follow the 50/50 plate method for your meals, filling half your plate (by visual volume) with non-starchy vegetables and 50% (by visual volume) with minimally processed starches.
emoticon Choose fruit (or nothing) for dessert.
emoticon Greatly reduce or eliminate added sugars and added salts. This includes gourmet sugars and salts too. If either is troublesome for you, you can eliminate them.
emoticon Eliminate all animal foods (dairy, meat, eggs, fish, seafood).
emoticon Eliminate all higher fat plant foods (i.e., nuts, seeds, avocados, tofu, soy).
Eliminate any added oil. (I think there was some oil in the soup, though not much)
emoticon Eliminate all higher calorie-dense foods including flour products (i.e. bread, bagels, muffins, crackers, dry cereals, cookies, cakes), puffed cereals, air-popped popcorn and dried fruit.
emoticon Don’t drink your calories (especially from juices & sugar-sweetened beverages).
Follow these principles, eating whenever you are hungry until you are comfortably full. Don't starve yourself and don't stuff yourself. (I didn't eat enough, and I had a blood sugar crash)
Avoid being sedentary and aim for at least 15 minutes or more of moderate exercise daily (e.g., brisk walking). Did 12 minutes on the exercise bike.
