It's been a while since I've made seitan, but I did it the other night. I mix water, soy and the gluten, let it sit in a warm place, then stretched and cut it into small discs about the size of a quarter. I boiled these small pieces in a mix of veggie broth, soy and ginger - side note, they became enormous! In fact I turned my back to the pot to chop veggies and suddenly I heard noises... it was the pieces of seitan popping out of the pot onto the floor like popcorn! lol. I transferred everything to a much bigger pot and all was well. Anyway they boiled for ~30 minutes while I chopped and sauteed onion, summer squash, zucchini and peppers, and then I added the seitan along with some soy sauce and fresh ginger. Delicious! Served it with brown rice and some broccoli raab and my newly vegan teen pronounced it "like a weird wrinkly tofu" but enjoyed the flavor. Definitely a make again. I had forgotten that a serving of vital wheat gluten is 21 grams for 1/4 cup, and that amount goes a long way.

Both. It's easy enough to make. Sometimes I buy it when travelling or when I see something I'd like to try to reverse engineer! Good for making you feel full.
