Not sure what CV is, but I assume that question is for me?

Stuffing: Made as usual... at the point where I would have added the egg and butter I carved off a portion and baked it as it was. It was so good even without the animal products because of all the sauteed veggies so I'll likely do it this way next year.
Turnips: made au gratin - vegan kid didn't have it.
Mashed potatoes: made with roasted garlic and a little olive oil. Delish

As for turkey, vegan kid didn't have it (and didn't care, lol). I made a quinoa parsnip rosti and between that and all the other sides (sauteed kale with apple and pepitas, green beans in vegan butter and shallots, maple roasted carrots and parsnips) there was *plenty* to eat. We made the apple pie vegan and served a chocolate peppermint cake which was super popular as no one could tell it was vegan :)

We started the transition to plant-based vegan throughout Nov and Dec. During that time I was making 4-5 vegan dinners a week and on meat days the vegan kid had leftovers from a prior meal. To be honest it wasn't that different from what we were doing before... we did at least 2-3 vegetarian meals a week before this, and I always served at least 1 veg side, often 2. We ate a lot of quinoa, cauliflower rice, and black bean pasta before all this started. The main thing I tried to do was to treat meat as a side if we were going to have it. Since 1/1 we've been totally vegan as a family. It's been really fun so far to plan meals and try new recipes!

That meal I posted was delicious but so much. The last leftovers are gone. Hubby and I decided Christmas dinner will just be soup.

I messed with a savory cranberry recipe and used it to marinate and baste roasted acorn and delicata squash slices, plus sweet potato chunks. I liked it. Also made a salad, but it wasnt' very Thanksgiving-ish. Still good!

I have a couple acorn squash stuffing recipes. I'll use my own invention but whatever it will have cranberries and corn plus other things. No fat in the mashed potatoes, Just potatoes and the vegan gravy. It compensates. Also I plan a cranberry salad with apples and nuts.

What will you stuff the squash with? What fat do you use in the potatoes? Do you try to make the foods taste similar to the mainstream ones or have you moved on from that? I'm pretty sure I tried to make a corn custard but nothing could match the texture of the mixture suspending the corn. It was more like corn in a creamy pudding. I'd like something stiffer.

I have gone to a retreat at Thanksgiving time for several years. The cooking has been done for me! Before that, I wasn't vegan. I might be going to a potluck, so I am curious, too.

Hey all, my family is still migrating to a vegan lifestyle with varying degrees of commitment :) With the holidays coming up I'm wondering how I can incorporate certain favorite dishes in a vegan fashion. Obviously we have many vegetable dishes that are easy to do without milk products but some that stand out as harder to replace are:

Stuffing: Right now I do a fennel/ sausage dressing that is also made with egg
Turnips: au gratin is the family favorite
Mashed potatoes: typically served with roasted garlic and lots of butter/ cream
Turkey: we'll serve one but I'd like to have a good protein-heavy second option to be served alongside

Anyone have recipes to share for tried-and-true delicious alternatives?
