I love my crock pot. With our work schedules the crock pot is an awesome save. It's also a great way to use up some leftovers.

My crockpot gets used frequently during the cooler months

Ah...I'm a vegetarian so I don't know about these things. emoticon I'm trying to help my boyfriend find healthy meals and this sounds like something he would like. Thanks for the tip!

No, I just put the chicken in, sprinkle over the taco seasoning (I actually just use salt, pepper, chili powder and cumin) and then pour the salsa over the top. As the chicken cooks, you will get juice in there. If you are cooking a big batch, by all means, add more salsa. You are removing the chicken and shredding it anyway, so you could add more if you want.

I got this recipe as part of a recipe group my playgroup joined... It is one of the best crockpot meals I have ever made. I served it with plain brown rice and grilled zucchini instead of the sides listed...

Moroccan Chicken

4 Boneless skinless chicken breast (really any kind of chicken will work, even bone-in)
(no time to defrost chicken? Go ahead and throw it in frozen and cook on low an extra 2 hours, 8 instead of 6)
1 can pineapple
1 onion
2 cloves of garlic, minced
2 TBS lemon juice
1 tsp salt
1 tsp marjoram
1/2 tsp cayenne pepper
1/4 tea turmeric (ginger can be used in place of)
1 TBS cornstarch
1 TBS water
1 TBS fresh parsley or 1 tsp dried parsley

Combine chicken, pineapple and juice, onion, garlic, lemon juice, salt, marjoram, cayenne, turmeric in crock pot. Cook on low for 6-8 hours. 5 minutes before serving, remove chicken from sauce and set aside. Combine cornstarch and water and mix into sauce (for an even thicker sauce add more cornstarch. Allow to cook while stirring occasionally for 5 minutes. Pour sauce over chicken and garnish with parsley.


Spiced Carrots

2 lb medium carrots (about 12)
2 tablespoons unsalted butter
2 tablespoons brown sugar
1/2 cup water
2 teaspoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon cayenne, or to taste

Quarter carrots lengthwise, then cut into 2 1/2-inch pieces.
Heat butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then sauté carrots, uncovered, stirring occasionally, until slightly softened, about 5 minutes. Add brown sugar, stirring until sugar is melted. Stir in water, lemon juice, salt, cinnamon, and cayenne and simmer, covered, until carrots are tender and liquid is reduced to a glaze, 8 to 10 minutes


Couscous

Box of your favorite plain couscous (can substitute rice for couscous)
pineapple juice
1/4 cup raisins (optional)

Cook couscous according to directions substituting pineapple juice for the water.
Add raisins.

If there is any left over couscous, add milk, dates, prunes, almonds, and sugar for a yummy dessert!!


The Game Plan

BEFORE heading out to your playgroup:

? Get Moroccan Chicken going in the crock pot.
? Set timer to 6 hours
? Cut carrots and refrigerate
? Set out some Moroccan music like Taste of Morocco by Various Artist
? Set the table with vibrant colors and candles



The 20 minute dash before dinner


? Get carrots going
? Get couscous going
? Remove chicken from crockpot and add cornstarch and water to crock pot
? Light candles and start music
? Add sauce to chicken and serve over couscous (make sure to ladle on lots of sauce, it makes the dish!!)
? Enjoy your yummy trip to Morocco!!!

QUESTERTX, I make that all the time, only I just use the salsa (the taco seasoning made the flavors too strong for us). I've added in black beans and pineapple for a change. Mmmmm

I have no idea where this recipe is from...

Shredded taco chicken
chicken (whatever you have on hand, boneless is easier but you can certainly cook and debone if you want)

taco seasoning

mild salsa (about a cup for 2-3 chicken breasts)


place chicken in crockpot and season with taco seasoning. pour in the salsa and cook3-4 hours on high or 6-8 hours on low. When ckicken is done, remove from crockpot and shred. Add some of the juice from the crockpot to moisten.

I keep this in the fridge for quick meals. I have used it to make...

chicken tacos
chicken taco salad
chicken tostados
chicken quesadillas (for the kids)
chicken burritos

LYNNWATKINS: Now why didn't I think of potato's. Guess cuz I don't keep them around the house anymore. You can bet I am going to get some. You don't want to be within 100' of me when I eat beans. I have a very sensitive system.

Hi Knitski, Sorry to hear about your crockpot woes. I don't usually have any problems with cooking on low for 10 to 11 hours. I would suggest that maybe the low setting on your crock pot is on the blink and it's time to get a new crock pot.

Hi Crotty, that is a real good question. I guess chopped potatoes could be substituted for soups and stews. In salsas or salads you could use black beans.

What can one subsitute for corn in a recipe? I have noticed most recipies call for corn and neither my husband or I eat corn.

I'm wondering if any of you more experienced crock-pot chefs can help me. If I want to have a crock pot meal on a week day I have to start it at 7 am or so (no later than 7:30). I put it on low of course but hubby doesn't get home til 5:30 so dinner is no earlier than 6:00. Everything I cook ends up dry and overdone. Here is what I've tried so far: starting with frozen meat (still dry), more liquid (no difference), turning off the crock pot as soon as I get home at 4:30-5:00 (no difference). Anyone have any tips or am I just not able to use the crock pot unless I can start it later?

Slow Cooker Vegetarian Enchilada Casserole

Prep: 15 min, Cook: 5:00.
3-1/3 cups canned crushed tomatoes, in tomato purée
1-2/3 cups chunky style prepared salsa
6 ounces tomato paste
2 lbs. canned black beans, rinsed and drained
1 lb. corn kernels, thawed if frozen
1/4 lb. canned diced mild green chilies, drained
1-1/2 Tbs. ground cumin
1/2 tsp. garlic powder
5 corn tortillas
2 ounces olive slices, drained
Combine first 8 ingredients in a bowl. Mix thoroughly. Pour about 1 cup of mixture into the bottom of an electric slow cooker on low heat. Spread evenly and top with 1-1/2 tortillas, cutting to fit pot. Spread 1/3 of remaining tomato mixture over top. Repeat layering process, ending with tomato mixture. Spread top evenly. Sprinkle with olives. Cover and cook about 5 hours. Serve hot.

This recipe serves 5 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 5 only.

Slow-Cooker Black Bean Mushroom Chili

Earthy mushrooms, tomatillos, and a subtle layering of spices combine to give this full-bodied vegetarian chili a deep complexity of flavor. Note that dried beans need to be soaked before going into the slow cooker. Once that's done, the chili can gently bubble for hours, adding flexibility to your schedule.

From The Essential EatingWell Cookbook by Patsy Jamieson

Prep: 25 min, Marinate: 1:15, Cook: 8:00.
1 lb. dried black beans, picked over and rinsed
1 Tbs. extra virgin olive oil
1/4 cup mustard seeds
2 Tbs. chili powder
1-1/2 tsp. cumin seeds, or ground cumin
1/2 tsp. cardamom seeds, or ground cardamom
2 medium onions, coarsely chopped
1 lb. mushrooms, wiped clean, trimmed, and sliced
1/2 lb. tomatillos, husked, rinsed, and coarsely chopped
1/4 cup water
4-1/4 cups vegetable broth, or mushroom broth, homemade or canned
6 ounces tomato paste
2 Tbs. minced, canned chipotle chiles in adobo sauce
1-1/4 cups grated Monterey Jack cheese, or pepper jack
1/2 cup lowfat sour cream
1/2 cup chopped fresh cilantro
2 limes, cut into wedges
1. Soak beans overnight in 2 quarts water. (Alternatively, place beans and water in a large pot. Bring to a boil. Boil for 2 minutes. Remove from heat and let stand for 1 hour.) Drain beans, discarding soaking liquid.

2. Meanwhile, combine oil, mustard seeds, chili powder, cumin, and cardamom in a Dutch oven (5-6 quart). Place over high heat and stir until the spices sizzle, about 30 seconds. Add onions, mushrooms, tomatillos and 1/4 cup water. Cover and cook, stirring occasionally, until vegetables are juicy, 5-7 minutes. Uncover and stir often until the juices evaporate and the vegetables are lightly browned, 10-15 minutes. Add broth, tomato paste and chipotles (with sauce); mix well.

3. Place the beans in a slow cooker (5-6 quart). Pour the hot mixture over the beans. Turn heat to high. Put the lid on and cook until the beans are creamy to bite, 5-8 hours.

4. To serve, ladle the chili into bowls. Garnish each serving with cheese, a dollop of sour cream, and a sprinkling of cilantro. Pass lime wedges at the table.

Makes 10 servings, generous 1 cup each.

Note: The chili will keep, covered, in the refrigerator for up to 2 days or in the freezer for up to 3 months. Thaw in the refrigerator, if necessary, and reheat on the stovetop or in a microwave.

Crockpot Cola Chicken

This cola chicken comes out tasting like barbecued chicken.
INGREDIENTS:
1 whole chicken, about 3 pounds
1 cup ketchup
1 large onion, thinly sliced
1 cup cola, Coke, Pepsi, Dr. Pepper, etc.
PREPARATION:
Wash and pat chicken dry. Salt and pepper to taste. Put chicken in Crock Pot with the onions on top. Add cola and ketchup and cook on LOW 6 to 8 hours. Enjoy!

INGREDIENTS:
6 boneless chicken breast halves, without skin
1 can cream of mushroom soup
1/2 pint. sour cream
1 (6 oz.) jar dried, chipped beef
PREPARATION:
Mix together soup, sour cream and dried beef. Roll chicken in the mixture, coating well; place in crockpot. Pour remaining mixture over chicken. Cover and cook on LOW for 5 to 7 hours, until chicken is tender but not dried out. Serve with hot cooked rice or noodles.
Serves 6.

A slow cooker, often referred to as a Crock-Pot®, is a countertop electrical home appliance that is used to cook stews and other dishes containing water at relatively low temperatures, with correspondingly long cooking times (several hours). Many recipes simply call for the ingredients to be put in the crock, with little preparation. The slow cooker can then safely be left to run unattended, making it a convenient cooking method.

I don't remember where I found this recipe (somewhere online), but is one of our favorites now!

Spicy Mexican Beef or Chicken

Ingredients:
2 pounds boneless beef chuck or chicken (boneless or bone in)
1/4 cup green salsa
2 garlic cloves, minced
2 green onions, chopped
1-2 jalapeno pepper, seeded and chopped (for spicier version, leave in the seeds)
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
(If desired, add cilantro with the chopped vegetables)

Directions:
Trim the fat/skin from the meat and place in the crock pot. Chop the onions, peppers, and garlic. Mix the chili powder, cumin and salt with the chopped vegetables and salsa. Pour the mixture over the meat and toss until well coated. Cook on low 6-8 hours or high for 4 hours.

Remove the meat from the crock pot, remove bones if necessary and shred the meat (the meat is much easier to shred when it is warm). Add 1/2 cup of the cooking juices to the meat.

This recipe can be made with either chicken or beef and used to make wonderful tacos, enchiladas, burritos, or quesadillas.

Crockpot Mexican Green Chili


1-1/2 pounds lean top round, cut into 1-inch pieces
1 (16 ounce) jar tomatillo salsa
1 (14-1/2 ounce) can Mexican style stewed tomatoes
1 (14-1/2 ounce) can fat-free beef broth
2 (4.5 ounce) cans chopped green chiles
1 cup chopped onion
2 tsp. ground cumin
1 tsp. freshly ground black pepper.
2 tsp. bottled minced garlic
2 tsp. chili oil


Combine all ingredients in a crock pot; stir well

Cover. Cook on low heat for 8 hours



Servings: 9 (1 cup)
Points/Serving: 3

Pepper Steak Stew

Ingredients:
16 ounces lean round steak, cut into pieces
2 1/2 cups coarsely chopped green bell pepper
1/2 cup chopped onion
3 cups diced raw potatoes
1 jar (12-ounce size) Fat Free Beef Gravy
1/4 teaspoon dried minced garlic


Directions:

Southern Sunshine Glazed Carrots

Ingredients:
3 cups frozen sliced carrots, thawed
3 tablespoons chopped pecans
1/4 cup orange marmalade spreadable fruit
2 tablespoons reduced-calorie margarine
1 teaspoon dried onion flakes
1 teaspoon dried parsley flakes


Directions:

Spray a slow cooker container with butter-flavored cooking spray. In prepared container, combine carrots and pecans.

In a small bowl, combine spreadable fruit, margarine, onion flakes, and parsley flakes. Stir fruit mixture into carrot mixture. Cover and cook on LOW for 6 to 8 hours. Mix gently before serving.

4 1/2 cups shredded cabbage
3 cups frozen whole-kernel corn, thawed
1/4 cup hot water
6 tablespoons bacon bits
1 tablespoon sugar or sugar substitute

Ingredients:
6 cups shredded carrots

Beef and Mushroom soup

Ingredients:
4 cups mushroom,sliced
3 carrot,sliced
1 cup celery,sliced
1 cup rice
1 pound beef stew meat,cubed
3 cans low sodium beef broth
1/2 cup sherry
1 teaspoon thyme
1/2 teaspoon garlic powder


Directions:

Place vegetables in bottom of crockpot. Place beef on top. Sprinkle rice over top. Combine remaining ingredients and pour over. Cook on low for 8 to 10 hours or on high for 4 to 5 hours.

Slow and Juicy Shredded Beef Sandwiches

Ingredients:
3 pounds boneless beef roast
1 medium onion, chopped
1/3 cup vinegar
3 bay leaves
1/2 teaspoon salt (optional)
1/4 teaspoon ground cloves
1/8 teaspoon garlic powder
12 hamburger buns, split


Directions:

Cut roast in half; place in a crockpot. Combine next 5 ingredients; pour over roast. Cover and cook on low heat for 10 to 12 hours or until meat is very tender.

Discard bay leaves. Remove meat and shred with a fork. Serve on buns.

Crockpot Pizza recipe

8 ounces extra lean ground beef or turkey
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup (one 2.5 ounce jar) sliced mushrooms, drained
1 3/4 cups (one 15-ounce can) tomato sauce
1 teaspoon Italian seasoning
1 teaspoon pourable Splenda
3 cups cooked noodles, rinsed and drained
1/4 cup shredded Cheddar cheese
1/4 cup shredded mozzarella cheese

In a large skillet, sprayed with olive oil-flavored cooking spray, brown meat, onion and green pepper.

Stir in mushrooms, tomato sauce, Italian seasoning and Splenda.

Pour mixture into a crock pot sprayed with butter-flavored cooking spray. Spread noodles over meat mixture. Sprinkle with Parmesan cheese. Layer Cheddar and mozzarella cheeses evenly over the top.

Cover and cook on LOW for 6-8 hours. Mix well before serving.

Crockpot Italian Pot Roast recipe

1 (2 1/2 pound) boneless beef round roast
1 medium onion, sliced
1/4 teaspoon salt
1/4 teaspoon pepper
2 (8 ounce) cans no-salt-added tomato sauce
1 (0.7 ounce) package Italian salad dressing mix

Slice roast in half and place in a 3 1/2 quart crock pot. Add onion and remaining ingredients. Cover and cook on HIGH setting 5 hours or until roast is tender. Or, cover and cook on HIGH setting 1 hour; reduce to LOW setting and cook 7 hours.

Slice meat to serve.

Serves 8.

Chili Mac Crock Pot recipe

16 ounces extra lean ground turkey or beef
1 cup chopped onion
1 (16 ounce) can tomatoes, coarsely chopped and undrained
1 (10 3/4 ounce) can Healthy Request Tomato Soup
1 cup reduced-sodium tomato juice
2 teaspoons chili seasoning
1 (8 ounce) can red kidney beans, rinsed and drained
1 cup elbow macaroni

In a large skillet sprayed with olive oil flavored cooking spray, brown meat.

Meanwhile, in a crock pot container sprayed with cooking spray, combine onion, undrained tomatoes, tomato soup, tomato juice, and chili seasoning. Stir in kidney beans and uncooked macaroni. Add browned meat. Mix well to combine.

Cover and cook on LOW for 6 to 8 hours. Mix well before serving.

Serves 6 (1 full cup).

This is in my crockpot now. Because I don't eat pork I made a few modifications (below the original). I'll have to let you know how it turns out tonight.

Garbanzo Crockpot Dinner
8 servings

1 lb dried Garbanzo beans, rinsed
3 cups low-sodium chicken broth or bouillon
3 cups water
4 large tomatoes, peeled, seeded, chopped
3/4 lb lean pork, cut into ½ inch cubes
3 oz prosciutto, chopped
1 onion, chopped
1 garlic clove, crushed
1 yellow or green bell pepper, seeded and chopped
2 teaspoons chopped fresh basil
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup torn fresh spinach

In 3-1/2 quart slow cooker, combine all ingredients. Cover and cook on low 10 to 11 hours, until beans are tender.

Caribbean Sweet Potato & Bean Stew
Serves 4, 213 calories, 4g fat, 36g carbs, 8g protein, 447mg sodium, 9.6g fiber, 0 chol

2 medium sweet potatoes (about 1 #)
peeled and cut into 1 - inch cubes
2 cups frozen cut gree beans
1 can (about 15 ounces) black beans
rinsed and drained
1 can (about 14 ounces) vegetable broth
1 amall onion, sliced
1/2 teas dried thyme
1/4 teaspoon ground cinnamon
2 teaspoons Caribbean jerk seasoning
1/3 cup slivered almonds, toasted*
Hot pepper sauce optional to taste

*To toast almonds, spread in single layer on baking sheet. Bake in preheated 350 degree oven 8 to 10 minutes or until golden brown, stirring frequently.

1. Combine sweet potatoes, beans (both), broth, onion, jerk seasoning, thyme, and cinnamon in slow cooker. Cover: cook on LOW 5 to 6 hours or until vegetables are tender.
2. Adjust seasonings and serve with almonds and hot pepper sauce, if desired.

Like cooking short-cuts? Cut back on prep time and add a spicy, smoked flavor to this recipe by using one (14.5-ounce) can of drained, diced, roasted tomatoes with chiles in place of the fresh tomatoes.


Ingredients
1 3/4 cup fat-free chicken broth
6 Tbsp uncooked corn grits
1 Tbsp olive oil
1 small onion(s), diced
1 medium garlic clove(s), minced
1 cup mushroom(s), sliced
1 small jalapeno pepper(s), seeded and minced (do not touch seeds with bare hands)
1 medium sweet red pepper(s), or yellow pepper, chopped
2 medium tomato(es), cored and chopped
1/4 tsp ground cumin
1/2 tsp table salt
1/4 tsp black pepper
1 pound boneless, skinless chicken thigh(s), cut into 1-inch chunks

Instructions
Place broth in a 3- to 5-quart slow cooker. Slowly add grits, stirring constantly, to avoid lumps; set slow cooker aside.


Heat oil in a large skillet over medium-high heat. Add onion, garlic, mushrooms, jalapeno and red pepper; sauté, stirring frequently, about 5 minutes. Add vegetables to slow cooker. Place tomatoes, cumin, salt and black pepper in slow cooker; stir to mix. Add chicken thighs; cover and cook at medium setting for 5 to 6 hours. Yields about 1 1/2 cups per serving. Sometimes I'll add in a little shrimp. But it's good (and spicy ... you could always leave out the jalapeno pepper). I don't bother to cut up the chicken, I just throw it in whole and after cooking, pull it apart as I stir.

crockpot mexican stew

INGREDIENTS:
4 boneless pork loin chops trimmed of all fat (big thick ones. i used about 2 - 2 1/2 lbs)
1 onion, chopped
3 cloves garlic, minced
1 (16 ounce) package baby carrots
2 (15 ounce) can pinto beans, rinsed and drained
1 (14 ounce) can diced tomatoes, undrained
1 (8 ounce) jar taco sauce
1 tablespoon chili powder
1/8 teaspoon cayenne pepper
1 cup water
2 tablespoons cornstarch

PREPARATION:
In 4-5 quart slow cooker, combine all ingredients except cornstarch. Cover and cook on low for 8 hours until pork is cooked and vegetables are tender. Remove pork chops from stew and cut or shred into small strips;(they were falling apart by then) return to crockpot.

In small bowl, combine cornstarch with an additional 1/4 cup water and add to crockpot; stir well, then cover and cook for 30 minutes on high. Stir and serve over rice, couscous, or polenta.

I had it over white rice. I also had it with out the rice with low fat cheese. It was good both ways. It reminds me of chili. I think with out the carrots it would be good as in a whole wheat tortilla with sour cream & salsa. My husband says he doesnt like the baby carrots in it. He says they are to strong.

I got 9 cups out of it.

Chicken ala King
Ingredients:
3 cups cooked chicken or turkey, chopped
½ cup green pepper, chopped
¼ cup onion, chopped
½ cup celery, chopped
1 jar (2 oz.) pimento (or chopped red bell pepper)
1 can (4 oz.) mushrooms pieces, drained
2 cans (10 oz.) cream of chicken soup (or cream of mushroom)
1 pkg. (10 oz.) frozen peas

Preparation:
Combine all ingredients except frozen peas in Crock Pot. Stir to mix well. Cover and cook on low for 6-7 hours. One hour before serving, turn to high and add peas.

Low Fat Crock pot Beef and Black Eyed Peas


The crockpot does wonders for lean cuts of beef, which can be tough and chewy. A day in the crockpot makes it meltingly tender. The beauty of this all-in-one meal is that beef is just one part of this stew, so you really don't need to use more than 3/4 of a pound to feed six people. Added protein and fiber comes from the black-eyed peas.

INGREDIENTS:
• 1 large onion, sliced
• 2 carrots, chopped
• 3 ribs of celery, chopped
• 3 small red potatoes, quartered
• 1 small green pepper, chopped
• 1 8-ounce pack sliced mushrooms
• 1 can black eyed peas, drained and rinsed
• 2 Bay leaves
• 3/4 pound lean stewing beef
• 1 tbsp Worcestershire Sauce
• 3 cups no-salt added tomato sauce

PREPARATION:
Coat a 4 quart crock pot with nonstick cooking spray. Add vegetables, followed by black-eyed peas, bay leaves, beef, Worcestershire Sauce and tomato sauce. Cook on low for 8 hours.

Country Swiss Steak
Serves/Makes: 4
Ready In: 5 hrs

Ingredients:

1 pound boneless beef round steak -- cut 3/4 to 1 inch thick
1 tablespoon cooking oil
1 small onion -- sliced and separated into rings
2 tablespoons quick-cooking tapioca
1 teaspoon dried thyme -- crushed
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 can (14 1/2 ounce size) chunky tomatoes with garlic and spices -- undrained
4 cups hot mashed potatoes
fresh thyme sprigs (optional)




Directions:
Trim fat from meat. Cut meat into four serving-size pieces. In a large skillet, brown meat pieces on all sides in hot oil. Drain off fat.

Place onion in a 3 1/2- or 4-quart slow cooker. Sprinkle with tapioca, thyme, salt, and pepper. Pour tomatoes over onion. Add meat.

Cover; cook on low-heat setting for 10 to 12 hours or on high-heat setting for 5 to 6 hours. Serve with hot mashed potatoes. If desired, garnish with fresh thyme sprigs.

Southwest Crockpot Chicken

1 can corn
1 can kidney beans
1 can diced tomatoes
1 can diced chili peppers
1 small jar salsa (about 1.5 cups)
2 large chicken breasts (cut in half)
3 tbsp. taco sauce
fat free sour cream

1. Mix first five ingredients in the crock pot.
2. Place chicken on top of mixture.
3. Pour taco sauce over chicken.
4. Cook on low in crock pot for 8 hours.
5. Serve topped with sour cream.

Makes about four servings...I made this one up. It'a core on WW, but I am not sure how many points it it. Some fat free cheddar might be good on top of it too, and I have put diced avocado on it also. I make it a lot. The chicken comes out really moist.

I did add some water because I have a very large crockpot & I didn't feel that it was filled up enough. But I did find it to be too watery & wished I didn't add that water, because as the chicken cooks it adds it's own juices. So be careful if you do add water - it was still good even though I watered it down too much! Next time I'll use my smaller crockpot so I don't have to add water.

Do you need water for the crock pot chicken? Or is just the soup.
Working the night shift at hospital, I get home at6am. in bed by 8 am. I like using the crockpot. Dinner is ready when I wake up and Honey man gets home from work. Our quality time is 5pm till 9:45. I don't like to waste any of that time in the kitchen cooking, although sometimes I act like fixing a meal is a true art.That's usually on my night off

Got this recipe from someone here on spark. Tried it last night, very good!

Easy Crockpot Chicken

1 lb Chicken Breasts
1 can 98% Fat Free Cream of Mushroom Soup
1 can 98% Fat Free Cream of Chicken Soup

Place chicken breasts in crockpot, mix soups together & pour over chicken. Cook on low for 8 hours. Serve over prepared rice.

1/8 cup brown sugar substitute
2 Tbsp white vinegar
1 tsp salt
dash of pepper

Combine all ingredients and put in crock pot on low and let simmer 8 hours.

Makes 8 servings @ 7 POINTS each or Core + 2 POINTS

Balsamic Garlic Crockpot Pork Chops
(Must be an old WW recipe)

Serves 4 (8 points per serving)

Ingredients:
4 pork chops, each about 1/2 inch thick
2 medium onions, chopped
2 tablespoons minced roasted garlic
1 celery rib,chopped
14 1/2 ounce stewed tomatoes or
14 1/2 ounce crushed tomatoes
1/2 cup ketchup
1/4 cup white wine
3 tablespoons balsamic vinegar
1 teaspoon brown sugar
3 tablespoons Worcestershire sauce
2 tablespoons lemon juice
1 teaspoon beef bouillon granules
1 1/2 teaspoons chili powder
1 teaspoon Tabasco sauce
1 bay leaf
2 tablespoons cornstarch
2 tablespoons cool water

Procedure:
Add all ingredients except water and cornstarch (or arrowroot) to the crockpot.
Cover and cook on low for 5 1/2 hours, then check meat and vegetables for done-ness; remove bay leaf.

When meat and veggies are to your preferred texture (about 5 1/2 hours), whisk cornstarch and water together, stir into crockpot, re-cover pot and cook for 30 additional minutes.

Serve over rice.

White Bean and Ground Turkey Slow Cooker Chipotle Chile (WW recipe)

main meals | This slightly spiced white chili is the perfect freezer staple to have on hand for too-busy-to-cook-nights.
Ingredients
1 sprays cooking spray
2 pound uncooked ground turkey breast
1 large onion(s), chopped
2 medium garlic clove(s), chopped
32 oz fat-free chicken broth
1 tsp ground cumin
1 tsp dried oregano
1 tsp chili powder, chipotle variety
30 oz canned white beans, drained and rinsed
3 Tbsp fresh lime juice
1/4 cup cilantro, fresh, coarsely chopped (plus extra for garnish)
Instructions
1.Coat a large skillet with cooking spray. Cook turkey, onion and garlic over medium-high heat, stirring occasionally, until turkey is browned, about 10 minutes; drain off any fat.
2.Add turkey mixture and remaining ingredients to a 3 1/2 quart or larger slow cooker. Cover and cook on low heat setting for at least 4 hours. Yields about 1 cup per serving. (Note: For additional color, top with extra freshly chopped cilantro just before serving.)

Crockpot Swiss Steak
Serves 6

1 1/2 pounds beef round or shoulder steaks,
cut 1/4-inch thick
1/2 cup water
3/4 cup finely chopped carrots
3/4 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup finely chopped bell pepper
1/2 cup medium picante sauce
1/4 cup ketchup
1 tablespoon white vinegar
12 ounces farfalle (bow-tie) pasta, cooked

The night before serving: Prepare vegetables and combine with picante sauce, ketchup and vinegar; refrigerate in a sealed container. Trim fat from beef steaks and cut into 6 pieces. Wrap and refrigerate. In the morning: Transfer steaks to the crockpot and top with vegetable mixture. Add water.

Cover and cook on low for 10-11 hours. Thicken by adding 1 tablespoon cornstarch mixed with 1 tablespoon water. Salt and pepper to taste. Serve over cooked pasta.

To boost the fiber content, try whole wheat pasta.
