Last Time I made it I added kidney beans and salami chunks (turkey salami slices cut up). Then it was similar to an antipasto appetizer. In winter if I make it I will add a small serving of protein enriched cream of tomato soup (made with milk and a small amount of plain protein powder or a dollup of greek yogurt on top).
This is my favorite version of Soup and Salad!

Each of us are different. I am 2 1/2 years out so I have many foods I can eat. I like roasted corn in my veggie and fresh mozzarilla salad. I handle the corn just fine. My salad is great to bring as it does not have mayo or anything that spoils fast.

This is a good healthy salad to bring to a picnic or BBQ. I serve it on leaf lettuce.
I use black and green olives, green onions, roasted corn, grape tomatoes cut in half, artichoke hearts, fresh mozzarilla balls or a big piece cut into small pieces and any other veggie I have on hand. I use a light italian dressing on it, but not too heavy or it will mask the fresh flavors of the veggies. If you want more protein add some kidney or black beans, cooked chicken thighs shredded or roast beef cut in small pieces. I enjoy a variation on this during the summer months for lunch. This marinaded salad lasts for a couple of days in a covered container in the fridge.

My dietician says that corn is not on my to do list. Too bad-I love corn in the cob. I don't feel andy pull towards it or any hunger at all, though-which is good in itself.

So, how far down the road will corn be a can do thing?

Great job Patty! I hope I'm as successful as you at saying "NO!" to all those pesky delicious foods that just call and call at you! lol

I'm still on my liquid pre-op diet and there are two bbq's or picnic type things this weekend. I think I'm going to just go "late" after the majority of the food is gone/eaten and just enjoy spending time with friends and family without focusing on food. I'll also make sure to have plenty of protein shakes/soups/etc for me to eat with me!

Yesterday I had another BBQ 'Eating Opportunity' emoticon

When I say BBQ, I mean an outdoor gathering where food is cooked on a grill. My aunt in PA always said 'cook-out'.

This time it was Taco Tuesday at the local hang-out at the the marina. They grill chicken, beef and pork and serve on homemade soft corn tortillas and a variety of salsa choices.

I'm happy to report that I successfully stayed with one shredded pork taco with plenty of salsa - I tossed the tortilla and just ate the meat. AWESOME!!!!!

However, I DID miss having an 'adult beverage' while everyone was sipping Coronas or a blue something called 'Adios'. And of course the ice cream and milk shakes pulled and pulled. I had a frozen greek yogurt on a stick when I got home. emoticon

I must be very fortunate (or unfortunate depending on how you look at it) because I don't really have any bad reactions to any food. That is why I work so hard on enjoying all foods in moderation. Sometimes I wish those things did make me sick because with no consequences, it is sometimes hard to resist "bad" foods. That is why I have a set of "rules" that I follow for those types of things

Summer BBQs are a rare treat for me because it seems like I am always working for the summer holidays. Those are the rare occasions I allow myself a hot dog (no bun) and my grandmother's baked beans.

I am sorry that you got sick. That part sucks. While I don't get sick from the food itself, I have been sick because I ate too much and that is aa horrible feeling. I hope you are feeling better now!

Personally since BBQ is laden with refined sugar. I will stick with a plain hamburger or hotdog this summer!

It's tricky to figure out when enough is enough...sometimes there is a delayed reaction to what you are eating and then....it just won't stay down. I hate that. Carbs seem to do it to me too and like Cindy said sometimes it's just the quantity of any food that sends you over the top.

You get to try again we have another BBQ weekend coming up. Best of Luck Patty.

It was probably not the carbs as much as it was the quantity of food! I am able to eat corn on the cob but I just cut off small section maybe 2 -3 inches long and leave the rest of the corn on the cob for someone else.

Now that all my chickies are home, we had our first bbq 2 days ago. Tri tip steak was my friend. Corn on the cob was NOT!!! emoticon

It might have been ok if I only had one bite, but I couldn't resist that WHOLE ear emoticon

And paid BIG TIME for it! emoticon

Another reminder for me to stick with protein and minimize those pesky carbs!
