Lunch today:


A mix of sweet potato (small), mushrooms, onions, red bell pepper, asparagus, and spinach. Plus a tablespoon (or two) of shredded parmesan cheese. Add a teaspoon of olive oil and a pat of butter to a skillet. Add the onion, peppers, diced sweet potato and saute until tender. Then add the asparagus and mushrooms, saute until tender. Add the spinach until wilted. Take off heat and add the cheese, place a top over skillet and let residual heat do its thing.

The amount of calories and such varies each time I make it ;-). I usually put half the mixture in a hi-fiber wrap and save the rest for the next day.
