It was all Grilled. I swear!

No Frying.... Well the chicken dishes are fried but I haven't made them since Valentines Day.

WTG Girl! But that frying has got to stop, lol! There are lots of recipes to do that are healthier and now that it is gonna get cooler--corck pot cooking is awesome!

Half way through cooking my boyfriends roommate storms into the kitchen and goes "That smells infuratingly good. And its only infuratingly good cause I wasn't hungry and now I am!" I told him that it'll be ready at 630. He replied "I'll be back... with a fork!"

I'm still waiting for Matt, but he ate and said it was amazing... I now have a third dish :-)

Mmmmm! The tilapia sounds delicous without the potato flakes! Some steamed veggies, a wild rice pilaf, and some fruit sounds delicious! And a salad!

LOL -- I think I've just been inspired to make a healthy dinner tonight! I didn't even have to think much on the menu!

It's easy, and so freaking yummy! I eat it on a bed of stir-fry veggies and brown rice, but my husband eats it on hoagie style buns with melted swiss cheese. Ummm! I gotta make some again soon!

So I don't cook often or very well. I have 2 dishes (Fried Chicken and Chicken Parm) That I make really really well. So I decided the other night I'm going to make dinner for my boyfriend Matt and his roommate Duck. One of the blogs I follow talked about Grilled Talpia breaded in potato flakes. It was relatively simple, so I am planning on cooking that.

Along with it I picked up some gnocchi and I'm going to make a cheese sauce more for them then for me but I do plan to partake a little with it.

I also picked up some Plantains to learn how to cook.

So I have Fish, Potato Pasta thing and fruit.

I'm looking for one other thing (possibly something with a little more color) to add to it. The boys aren't big on salad- Duck claims he's allergic to it (eye roll).

So any ideas of something more colorful I can work with?
