Thanks, that dish sounds wonderful. It's making me hungry. I will try that as one of the dishes for the shower, & I'll let you know how it turns out.

I used quinoa instead of the rice, too. It turned out great & got compliments on how good it was.

I got invited to join a Weekend Warrior's challenge through Fitbit so I've been hammering out miles today. Also did a little gardening and house cleaning. Now it's time to relax with some cats.

I love cold pasta dishes for summer parties! I've actually been craving that this week. I think I keep seeing a pic of a pasta salad on the sparkpeople site or maybe it's in the emails this week.

I also like to sometimes bring a tabbouleh or something similar. Here's one I put together that uses brown rice but I think it would be less caloric with a different grain perhaps, maybe quinoa. I added this recipe to the site a few years ago, but if I made it again I think I'd do it with quinoa, completely leave out the oil, and maybe add a bit of tahini and/or vinegar. You could also skip the step of broiling the pepppers and removing the skins. I don't mind a bit of a crunch from the peppers in a cold salad anyway, and it saves a lot of time and work.

I'll be buying a shower gift today for my future daughter-in-law. Shower is next week. I will be the only vegan, so I will be bringing a few dishes to share. One of the dishes I think I will make will be a cold pasta veggie dish. Any other suggestions would be appreciated.

We are about to head out for a long walk on the beach. Then might spend the rest of the day lounging on the patio and reading. I'm reading a book called Little Fires Everywhere. I love to read.

We usually go out for a meal on Saturdays, but I think it will be all home made meals today. Breakfast is our usual smoothie, lunch is a veggie wrap with some homemade tahini dressing, and I think dinner will be our "splurge" meal of the week of homemade pizza, piled with lots of veggies of course. I love our homemade pizza sauce made with tomato paste and pepper paste from the middle eastern market. That pepper paste adds so much flavor without any oil. We try to refrain from adding any oil to our meals if possible.
