I want to remember what I did tonight to make simple but tasty beets. emoticon

Preheat oven to 375'. Wash beets. Cut greens and root from the beet. Make a foil packet by tightly folding around the beets. Roast for about 55 minutes (until tender). Let cool and rub off the skin under cool running water.

I used to eat beets cold, straight from the jar. Didn't have them for a while. Then I bought a couple of jars and thought they tasted like moldy dirt. I've tried them since then in different dishes and thought the same thing. What happened to me??!! Why don't I like beets anymore?? emoticon

DIET IS A FOUR LETTER WORD!!!!

HERE IS THE RECIPE I HAVE USED MANY YEARS FOR GLAZED BEETS;

MIX TOGETHER 1 TABLESPOON CORNSTARCH AND 1/2 TEASPOON SALT.

RESERVE 1/2 CUP BEET JUICE FROM CANNED/ BEETS.

STIR TOGETHER THE BEET JUICE AND 2 TABLESPOONS LEMON JUICE WITH THE CORNSTARCH .

SIMMER WITH 1/4 CUP HONEY AND 1 TABLESPOON MARGARINE

ADD 2 CUPS BEETS AND HEAT TO BLEND FLAVORS.

Roasted beets, golden or otherwise, are delicious!! I've had them with mint - an amazing combination, I've never thought to have them with blueberries before - interesting - I can't imagine it! In the autumn, I've slow sautéed them in coconut oil with leeks- that, too, is a delicious combination.

Just discovered that roasted golden beets are delicious! Tomorrow's recipe, with the leftovers: beet and blueberries and mint salad emoticon
