A big emoticon to REVASEAN for sharing this recipe (EGGPLANT STEW) - it's delicious.

Thanks DUCTILLITE72 for the Pt+ value on the Eggplant Stew - It is wonderful - I've had it for lunch w/some sliced Turkey or a Veggie Burger. I also have it as a side w/dinner.

This recipe sounds really good. With the can of chickpeas, the points value is 2. Without the chickpeas the points value is 0! I think I will have to make it soon. emoticon

I had the Oatmeal for breakfast this morning - I made it the other day and put it in the fridge - put about 1/8 cup of water and 1/8 cup of milk in the dish w/1 cup of oatmeal and into the microwave for approx 1-2 minutes...it was yummy..

Here's a recipe I found on SP that is delicious - would love to know how many points 1 serving is...

Eggplant Stew

2 cups of this stew makes a filling and nutritious lunch.
Number of Servings: 10

Ingredients

1 eggplant (1 and 1/2 pounds), cut in 2 inch cubes (approximately) ; the eggplant can be either peeled or unpeeled. the recipe works either way.
3-4 zucchini, sliced
2-3 summer squash, sliced
sliced mushrooms (8 oz.)
garlic crushed ( 1 teaspoon)
1 large onion, chopped coarse
1 can of diced tomatoes (15 oz.)
olive oil (1 tablespoon)
1 can of chickpeas (optional)
salt
pepper to taste
1 tablespoon of Szechuan sauce or chili powder if desired

Directions
In a large pot (about 10-12 quarts) add olive oil, garlic and onion. Cover and cook under medium flame about 5-10 minutes, then add mushrooms. Continue cooking, 5-10 minutes, and add tomatoes.
When the mixture begins to bubble add eggplant, reduce heat and simmer for about 45 minutes, then add the zucchini and the squash. Continue cooking for approximately 30 minutes longer until all the vegetables are tender. Add chickpeas and spices.

I use almond milk too. Is that bad for the thyroid

Thanks for the heads up on the "Soy" milk - I actually used almond milk - even thought the recipe calls for soy milk.

Have no idea if my thyroid is slow and did not know that soy could contribute to a slow thyroid. Might have it checked,...

From what I've just read online - sounds like caution should be used in having soy if someone is on Thyroid Medication, and if someone does use soy to eat it after approx 3-4 hours of taking medication. I don't see anything there about having soy products generally....

My only comment on your recipe is NO SOY.....Soy is so bad for the thyroid. In the years I have been a nurse, the amount of patients on Thyroid meds has gone out of sight. The BIGGEST culprit....SOY.....Sorry, just had to put in my thought here....as I deal with low thyroid myself....and struggle to lose weight....

I put your recipe into the recipe builder on e tools and without the optional items listed, each serving is 4 points. Chopped almonds are 1 point per tbsp, brown sugar is 1 point per tbsp, and fat free half and half is 0 points for up to two tbsp. 1/4 cup of fat free half and half is 1 point.

I am making an Oatmeal Recipe and need to know what the points+ per serving. I don't have access to W/W Online - I know there are several on this team who use W/W online - I am posting the recipe here so if someone could check this, or if there is a link so I could do it, that would be great..

Heart Healthy Crock Pot Oatmeal

Serves 8

1 c. steel-cut oats (I used McCann's)
1 c. dried cranberries
2 c. water
4 c. light soy milk
1 ripe banana - sliced
1/2 c. ground flaxseeds
Pinch of cinnamon
Chopped almonds, optional
Brown sugar, optional
Fat-Free half-and-half, optional

Spray inside of crock pot w/nonstick cooking spray. Combine all ingredients in crock pot and stir. Cover and Cook on low for 8-9 hrs.

GARNISH W/CHOPPED ALMONDS, BROWN SUGAR AND FAT FREE HALF-AND-HALF, IF DESIRED

NOTE: It is very good. I've also made half the recipe. It will stay in fridge. I check the cooking after 6-7 hours making sure it's not sticking...I did not use the Half-and-half....
