At one time, I had a long list of healthy, easy recipes on my computer. It died and I lost them all. I want to organize my kitchen, get rid of the unhealthy things in it, and start eating a little healthier with more of a variety in what I eat.

God grant me the serenity to change the things I can, to accept the things I cannot change, and the wisdom to know the difference.

Hi. I joined the challenge to make healthier recipes. Also, I commute to work and then I work out of the country because of that I would like to have home cooked dishes. I have not been home long enough to get all the ingredients together to prepare one meal but I have been getting my grocery lists together and throwing out unhealthy foods from the pantry. I also have taken a lot of notes and started a recipe binder. I am finding this information very helpful.

I do believe that the crockpot is ones best friend. I have been thinking of getting another one--for dessert. No excuses not to cook anymore.!

I am mainly doing this challenge because with life as busy as it is with three kids I sometimes don't think about my meals or I don't think through theirs. We end up eating unbalanced meals and wanting to snack instead. So my goal for week us to cook dinner 6 times this week. (Hello crock pot) And make sure lunch is thought about just as much as dinner (kids on Fall Break again this week).

I am a bit ahead on this challenge for week 1 because when I came back to Spark on 09/23/13... I had already cleaned out my pantry and fridge and freezer. I also have my kitchen equipped with the necessary tools. (scale, several sets of measuring cups and spoons, etc). My family goes out to eat on a very rare occasion.. perhaps twice a year. I plan meals, I make grocery list, and I change ingredients for healthier choices on recipes. I LOVE making recipes!

My goal for this challenge is to find new healthy recipes, and new healthier ingredients to swap in a recipe as well as tips.

I know I need to say me too! I want to plan our menus and shopping plus not eat out as often. I just purchased the spark tracker and looking forward to using it. My problem has been that I am a vegetarian and of course my husband is not. I cook 2 different meals most times and sometimes 3--for our parrot. I think planning will help quite a bit-getting into a routine.

I have always planned my meals ahead of time and shopped accordingly two weeks at a time. My problem is I don't always stick to my plan so we eat out way too much. I also tend to buy unhealthy things at the store. My goal for this week is to follow my plan and not eat out. I will also stick to my list and not buy unhealthy things at the store.

I back to my kitchen challenge I have completed the frig and freezer and I have all the utensils and measuring cups and spoons in their place on counter and we also have a scale to weight things,
We have managed our meals planning the night before and get all the things together so they are handy this actually makes have all our meals together.
With the grocery list we know what we need and just stick to it and we save money and nothing go bad so savings!!!!!!
I'm now aware of how much processed food I had we throw it all out I'm now recreating all the dished I make now with out all the salt and preservatives in them. Will keep you posted on my progress.

I joined because I want more of an awareness of what long range meal planning is. I am gluten intolerant, which does add a different dimension to my planning. My husband is retired, and shortly after that happened we decided the best situation for us is that we each get our own breakfast because he is hungry right away, and I am not. Aside from that, he is likely to have bagels, toast, cinnamon rolls, glutened cereal. I usually eat about an hour after he does. One day it is cereal, banana and milk. The next day is eggs, fruit, maybe toast.
For lunches, he gets to plan. (I cook if he requests something special, but 90% of the time, he says sandwiches, or meat, cheese and crackers.) I adapt to meet my requirements.

For our evening meals this week:
salmon salad; mandarin oranges, crackers
spaghetti with sausage and marinara sauce
Cajun chicken, butternut squash, green beans or peas
ham, O'Brian potatoes, cauliflower
fish, mixed vegetables, rice
pork, sauerkraut, potatoes
leftovers, or out to eat.

If this was your last day, how would you spend it?

Shopping day is Thursday, so I need to know by Wednesday what I will be cooking for the next 7-10 days. Plan meals, check the pantry & freezer to make the list, shop and then cook!

Getting back on track after summer so my goals right now are to plan ahead.
I will clean out pantry and pick at least two healthy recipes. Then get groceries. I love the idea of putting basket in pantry to group recipe ingredients together so will try that.
I also need to get moving again and will use my dvd 3 times this week!
Along with drinking more water and eating more vegies & fruit and less white flour and sugar.

My goals this week are to clean out my cupboards, plan a week's worth of meals, research some new, healthy recipes to try, and add more veggies to the dishes I make.

Baby steps turn to leaps and bounds! "Just today" turns into a lifetime of improved health and fitness. It turned this body from a size 18+ to a size 4-6! Maintaining my new life, habits and body.

Hi I just started this challenge and stared the refrigerator and the utensil drawer we now have the measuring spoons, measuring cups on the counter for easy access. My husband did this last night he couldn't sleep. So Nice surprise.

Finished Week One. My pantry which is where I started my kitchen organizing is looking great. Planned the meals and though I hate meal planning, I found it helpful making the grocery list and remembering what I was going to eat each evening. I've tried several new to me SPrecipes and made all the meals except two lunches at home.

My goals for week one are

1) to start writing down what I do make on the calendar so I can refer back to the meals made at the end of four weeks.

2) to start writing down how I make a "recipe" since a lot of what I make is made without a recipe

3) to get more helpers in the kitchen so I am not the only one who is in there cooking

I am learning to make indian and non indian recipes before the big day! I'm aiming to make 2-3 recipes per week. For now I'm just going to try and get more comfortable in the kitchen and with putting together meals. The 'healthy' part of it I will keep as step 2 of this process!

I already cook dinner most evenings. My goals are to:
1. organize my kitchen better and keep it cleaner
2. have some ideas for quick and easy to cook meals that use ingredients that I have on hand, for those days when I have less time or unexpected things happen...

I NEVER cook. Like, ever. It takes too much time, it dirties my kitchen, and my food rarely turns out even edible, so you can forget about it tasting good. That's about to change, though. I already made my menu and grocery list for the week, so my goal this week is to FOLLOW IT! I'm so tired of buying produce that rots in the fridge because I buy it with good intentions and then never do anything with it. This ends NOW!

The biggest challenge is eating out less. My husband and I have stressful jobs and when we get home from work we just don't have the energy to cook. Cooking is also not something either of us enjoy.

Hi all-

My goal for the week is to not waste any of the food that I have! I have cauliflower, avocado, watermelon, broccoli slaw, bananas, figs, rhubarb, and cucumbers that all need to be eaten by Friday. the plan is to prep everything so that they are as easy to eat as a less healthy snack choice would be.

Lots of fruits and veggies!

This has been a challenging week aside from this challenge. Very busy and had cataract surgery yesterday. I did plan my meals and stuck to it for the most part. I too will be pulling out my recipes and downsizing. My kitchen is in ok shape but the fridge and freezer need some work and I need a freezer inventory.

A success on Wednesday; I made a healthy vegetarian option for my dish and gave away all the leftovers except one portion to have for my lunch after surgery. And, I choose peaches, a corn and vegie dish with no "white" sauce, just veggies, mini pepper stuffed with mover veggies and brown rice and a slice of lean turkey breast. No dessert. A glass of wine instead.

I'am with you ABBIECHARLIE; Making recipes doable for 1 person can be tricky and time consuming. I've just finished pulling out a bunch of recipes for the next few weeks. Now I have to look to see which will be the best fit re calories, easy of making and can be split in half easily. Good luck with your recipes. I know it will be worth it in the end. emoticon
