YUMMO! This is super easy, Super delicious, super filling and good for you!
Note - I did not peel the potatoes and I used 1/2 red and 1/2 yukon gold. I weigh EVERYTHING on an awesome kitchen scale I got last year since a "cup" of potatoes changes depending on how you cut them.
Potato Leek Soup
730 g potatoes diced
200 g leeks thinly sliced
4 cups water
3 tsp Chicken bouillon
1 tablespoon Extra Virgin Olive Oil
*Spices are optional*
1/4 teaspoon pepper
1/4 teaspoon white pepper
1 teaspoon salt
1/2 teaspoon thyme
1/2 teaspoon marjoram
1. Slice leek in half and rinse (run water down each half to rinse out sand)
2. Slice leek into thin pieces, use only white and light green
3. Sauté in olive oil over medium heat
4. Dice potatoes into 1/2 pieces
5. Add potatoes to leeks and continue to cook for about 5 minutes
6. Add water, bouillon and spices
7. Simmer for 20 minutes
8. Use a food processor or an immersion blender until smooth. I prefer mine kind of lumpy.
