I was lazy when I decided to try something at home, I bought a bag of stir fry veggies at wally world and made a fish stir fry with catfish. It turned out pretty good. I just added some soy sauce-low sodium-and some garlic and cilantro. I steamed the veggies so they didn't have to take very long. I also made the crispy catfish nuggets that I found on here. They are oven baked and very good.

My diabetes-friendly pizza crust:

1 c. warm water
2 tsp yeast
1 tsp salt
1 1/2 c. white whole wheat flour
2 T gluten

Mix well, let sit in bowl at least 2 hours covered with a damp towel. Liberally flour a rolling surface. Grab a hunk of dough (about half the recipe), dust with flour, and roll out into a 14" circle. Top with pizza toppings, bake on a pizza screen or pizza stone at 450F 10-12 minutes.

Makes 2 14" thin crusts, 8g carbs per slice (1/8 of 1 pizza).

Take life one day at a time - enjoy today before you worry about tomorrow.

Not exactly a recipe from anywhere just something I make when food is low in our house.

1 Lbs of ground beef
Brown gravy mix
Sour cream
Onion powder
Brown rice

Brown the beef add gravy mix with water and a Cple tbs of sour cream sprinkle with onion power salt and pepper stir until gravy thickens. Scoop over rice.

You can add veggies of your choice tonight I added broccoli.

My favorite breakfast is 1 cup mixed frozen veges, that I cook with a little water til its evaporated. Then I add 3/4 cup of garden vegetable egg beaters. Scramble together adding a pinch of dill weed. Serve with Oroweat Master's Best Winter Wheat Bread (1 slice) toasted. I use a tsp of Land O Lakes, Fresh Buttery Taste Spread. I drink a glass of low fat milk and eat a piece of fruit for a nutritious low carb, low calorie meal.

Hello, I am new to here and I am struggling with my diabetes and depression. i have a jello recipe that I make sugar free and it is cost effctive.
i use flavored koolaid packets, unflavored gelatin and splenda.

I make 1 packet of koolaid, add 1 cup of splenda. that gives me 2 qts of koolaid. i take 1 cup of koolaid and add acket of gelatin on top, don't mix, take another cup of koolaid and heat to boiling. pour over gelatin and mix until well combined. divide into four half cup servings.
cost: 89c for 12 packs of koolaid, 1.25 for 4 packs of knoxx unflavored gelatin, 4.98 for walmart version of splenda
hope this helps, add some fresh or canned ruit and a tbsp of low fat cool whip a nice dessert and not a lot ofmoney. I think this gives me more o a viariety and it works well with my budget.

This morning for our breakfast my husband fixed us poached salmon sandwich on 2 pieces of wheat bread with 1 TBSP Mayo, lettuce, tomato and some slices of cucumber. Along with it we had a small glass of V8 juice.

I made Quinoa pudding this week and it was really good. I just used a traditional rice udding recipe (there are some in the Spark Recipes section) but I substituted with Quinoa instead. Very earthy and good. I actually keep my serving of it down to about 2 TBS. Just enough to have a taste of it.

Tried another new breakfast today.

1- 6oz nonfat vanilla greek yogurt +
1/4 cup blueberries +
4 crushed, roasted hazelnuts.
Mix items together.
It was very tasty.

I take the raw hazelnuts, crush them,and use a minuscule amount of olive oil and roast them in a small frying pan. You could also use a spray. The roasting releases a very aromatic flavor. I will use them on top of salads, also. Hope you enjoy!

Sounds good! Make sure you count all carbs so you can watch out for those foods that give you high meter readings. Associate your high reading with what you ate. you will do fine!

I am dealing with being newly diagnosed T2 and am trying to change my lifestyle without going completely berzerk.
I want to learn how to adapt my menus so as not to drastically change them but shape them to fit into a "normal" day. I am enjoying a variety of foods from a variety of sources. I grow my own tomatoes and make sauce by baking the tomatoes 2 hours at 285*
Sliced with onion, garlic and olive oil then pureed in the blender.
It freezes well

It's just my husband and I and he needs to loose weight so I only make one thing. I also try and lighten up reg. family reciepes. Amazon has some really wonderful cookbooks. I found a yummy reciepe for squash cassrole and eggplant cassrole.

There is a great magazine called Diabetic Living with a website (diabeticliving.com) with recipes available online. I have made a wonderful lemon and thyme grilled chicken with barley recipe that my picky teenager even liked. The recipes can be slimmed down further if you think they're too high in calories. Also made their Lasagna deliciosa substitued fat free cottage cheese for the part skim ricotta, turkey suasage for regular sausage and everyone loved it. I really hate having to cook differently for everyone, so I try to find lightened up normal recipes.

I can make my choices and I choose to make better ones! I have the power and strength to do this!

Hi, bought a 10 lb bag of chicken legs @.49 a lb. I skinned them and cut them up got 5 suppers for hubby,me and our Shiz Tzu I took all the back bones and cooked them got a good stock and 3 cups of meat comes to about $1.25 a meal plus extras.Mary

I've been enjoying cold Tzatziki style plain, fat free Greek yogurt with finely shredded cucumber, garlic, dill & chives as a sauce on all sorts of stuff instead of my old fav Ranch dressing. Can also add lemon juice, vinegar & pepper to taste. Search for Tzatziki recipes for traditional or variations. If made 1/2 yogurt to cucumber, no added olive oil, then it's only about 5cals/tbsp.

I love mushrooms & balsamic vinegar - it should be good. Plus, most nights, I make dinner like a short order cook. This will be a nice add-on to grilled chicken that I can make just for me.

And speaking of being a short-order cook - does anyone else find themselves making 2 or 3 meal variations?

I saw the orange chicken in the low carb choices for recipes and thought... sure! But the calculations didn't make sence. The recipe asked for 2 cups of brown rice for 4 people (1/2 cup each) and then said to cook the rice. It has to be 1 cup of raw rice to make 4 half cup servings. Another recipe looked good in numbers but then said it did not include the onion soup mix in calculating the nutritional value. Yikes! I guess we just have to be careful in reading the recipes and learn as we go what looks right.

Recipe for success:
Make sure you start your recipes with the awereness if it may make you overeat, have the portions already to freeze as soon as it is done.
I did this with a lower fat version of broccoli/rice/cheese casserole from my mom. To ALMOST to die for but food is to live not to die for.

Marinating salmon and halibut today which will be cubed and put onto skewers for the barbeque. Enough for both lunch and dinner. Lunch is green salad topped with sprouted bean salad and skewer of fish. Dinner barbeque skewered vegetables, fish and new potatoes.

Trying a low carb beef stew I found in the Spark Pecipes in the crockpot. BUT didn't have celery so I had to add a few potatoes. Hubby is a meat and potatoes guy. But he will be happy I won't ask to go out, but he always says...You are experimenting again....well, it is a REAL recipe, I always reply. He likes the processed foods, like Dinty Moore/Instant Potatoes. YUCK!

As i was at Jack-in the box I realized for the first time how unhealthy EVERYTHING IS--before it was ll about taste & how the food feels in my mouth! I just got a side salad and brought it home and added lots more veggies for and grilled Chicken breast, ao I made due with what we had when my fam wanted to stop. So I created my own diabetic healthy salad.....Also added Mrs dash instead of dressing.

There is a recipe on the Sparkrecipes.com site called "Quinoa-Black Bean Casserole" that I have made a couple of times and everyone loves it. Add more spice (I did) if you like things spicier.
Also batches of chicken breast marinated in store-bought dressings (check labels) and grilled on the barbeque have been a real time-saver. I make enough so that I have leftovers for lunch salads and wraps.

My DH made me breakfast instead of going to the local restaurant for a huge, unhealthy one. He made me a low-carb Denver Scramble. (1 whole egg, 2 egg whites, 1.5 oz. x-lean breakfast ham, 2 Tbsp of mushrooms, 2 Tbsp green pepper, and 1 Tbsp onion) He sautés the veggies and ham in a little PAM and then adds the egg and cooks until firm. It is very yummy and filling. It has under 4 carbs, around 200 calories, 7 fat, and 20 protein. Egg substitute can be used which lowers fat and cholesterol but does add some carbs.

I eat breakfast on Sunday out. I may have a lunch and dinner out for the month. I do cook at home. Think I'll have spaghetti with home made sauce and wheat noodles with a tossed salad today. My favorite greek yogurt and berries to finish the meal.

I made the Salmon Patties but substituted mackeral as I had it on hand. Used 1/2 c cornmeal instead of crackers but kept the rest of ingredients. I sprayed Pam in pan and browned. They were thin like pancakes and weighed about 3 oz. Served with sliced tomatoes, summer squash and a slaw. Dressing for slaw was 1 c Greek yogurt, 1 T LF Mayo, garlic powder and dill weed to taste.

Dressing is good for a dip with fresh veggies. My grandchildren love it that way.

Tried the Mexican Chicken recipe as offered by Chef Meg. Wasn't too keen on just having the chicken on its own with soured cream so made some rice to go along with it. Big hit with hubby and me so we'll be having this one again very soon.

A recipe I really enjoy is from a cook book called First Choice Cookbook. The recipe is called Fast and Healthy Stir Fry. It includes steak and lots of veggies . It is delicious and is only 175 calories per serving. It is the best Stir Fry I have ever had.

I made 15 minute chicken pasta which is a BBC Good Food recipe which is low fat. The key to the taste is the orange and mustard sauce and having enough to combat the amount of pasta in the recipe. It's simple and fairly quick to make.

I made a lowfaT TACO CASSEROLE. Take 1 pound of lean meat, add i can of enchilada sauce and 1 chopped onion. Add 4 corn tortillas cut in small pieces and 1/3 cup of lofat cheese. stir together and bake until bubbly hot. Serve with a large salad and homemade guacamole. makes 6 servings

I had my version of frito pie today. Lean stead chili over 1/2 cup of low fat tostitos. 2 thsp low fat cheese and covered the pie with lettuce and tomatoes. Was quick and i enjoyed it.

PebblesGMC-- I love fasolakia, especially with a little bit of feta on the side. That was my favorite dish when I lived in Greece. I will have to make some soon! Thanks for the recipe!

This morning I made an awesome low-carb scramble with mushrooms, red, orange and yellow bell peppers, spinach, roma tomatoes and some medium cheddar cheese. My husband loved it! I left out the toast for myself, but since he is a mixed nutritional type (I am protein) and he is not diabetic, he had 2 slices of toast. A wonderful way to start out a lazy Sunday morning.

This afternoon it's off to the pool to work off a few calories and get my hip exercises done. I have fibro and I've been having lots of pain.

Keep going, TEAM!

Thanks for sharing - these sound great. I'm also looking for minimal cook/raw ideas - Icook have trouble cooking and organizing but want to get away from frozen dinners like Lean Cuisine if possible.

I'm hoping I can get a friend to cook with me and then we can split it up for the week - if so the pilaf is definitely going on the menu!

RICE PILAF

2 to 4 Tablespoons butter (add about 1 teaspoon olive oil to prevent it from burning, if desired)

1/4 to 1/2 cup pine nuts or slivered almonds

1 cup Brown rice or a white rice

2 1/2 cups water or chicken broth (if using water add 3 teaspoons chicken granules or you can add some chicken granules to the chicken broth for added flavor, to taste)

Melt butter in saucepan, carefully brown nuts until lightly toasted. Add rice and stir for about 5 minutes. Add water or chicken broth, bring to a boil. Lower heat to simmer and cover. Cook for about 25 minutes until liquid is absorbed. Let rice sit for about 5 minutes, covered. Do not lift lid during this 25 to 30 minutes time. Fluff with fork and serve.


GREEK CHICKEN MARINADE

In a bowl put about 1/4 to 1/2 cup lemon juice, add about 1/4 to 1/2 cup olive oil or a bit more, salt and pepper, about 1/2 to 2 tablespoon crushed oregano, and a good quality garlic powder (I use a good amount), to taste. Whip until creamy-like. Put chicken in zip lock bag or bowl and pour marinade on it and make sure chicken is well coated. Refrigerate over night and put on grill (BBQ) or you can broil or bake it in the oven.
