I was not a breakfast eater. So I have slowly began the process of making sure I eat every morning. I have created a Breakfast Burrito. I use a Carb Balance Tortilla, scrambled eggs, 2% sharp cheddar cheese, add veggies like spinach or peppers and I pour on some picante salsa. This is really good, and full of flavor.

I found a cheesy potato cassarole that was wonderful. Instead of potatoes you use a head of cauliflower and mix in low fat sharp chedder cheese and turkey bacon! It was totally awesome! Wish that I could find what I did with the receip someplace in my kitchen still I'm hoping !

Green beans [with red potatoes for my dh ]
I will eat only the beans
we left out the sausage so it will be healthier for both of us,
He is kinda joining me for a change and measuring like i need for portion control.

I could live off of vegetable stir fry during the summer. The yellow zucchini are producing so I cut up a couple small ones, added peppers, onions, cauliflower, celery and of course gotta have those mushrooms. A little shredded cheese melted on top adds a little protein, but even without it, it takes so yummy!!!

I go to the Saturday Farmers Market in my area and then come home and grill veggies. They go in a container that then I might sprinkle some with Balsamic Vinegar or lemon and put them on sandwiches and salads. I also like to make an omelett using them to fill the omelet with added fat free sharp cheddar or 2% Deli Swiss or Provolone cheese. I slice of Russian Rye or Pumpernickel usually rounds out my breakfast.
I hold my fruit along with 1/4 cup of Vanilla Fat Free Greek yogurt for my snacks.

Made a grilled chicken recipe last week. It had a marinade with balsamic vinegar, and tons of herbs...yum. I think the recipe was called 'balsamic chicken'

I tried a Lettuce "Gyro" filled with grilled chicken and cucumber yogurt. It was actually good. It only had 13 grams of carbs per serving.

I do a stir fry with fresh zucchini, tomatoes, mushrooms, broccoli and peppers. You can eat it plain or put it over quinoa. I add italian spices and a little garlic.

I made "Clean Eating Portobello Mushroom Stroganoff". It uses tofu to create the sauce and was surprisingly good. Very low in calories and very filling and the recipe makes 8 large portions.

last night ny sister and i made salmon patties and served it with fresh boild squash and
a salad of grape tomatoes, green onions, chopped cucmber and balsimic vinegar, it was truly

This is a Hungry Girl recipe and is really good



Super-Special Chicken Sausage 'n Squash Pack
1/2 of recipe (about 2 cups): 285 calories, 8g fat, 664mg sodium, 39.5g carbs, 6.5g fiber, 13.5g sugars, 17.5g protein -- PointsPlus® value 7*

Ingredients:
3 cups cubed butternut squash
1/4 tsp. dried ground sage
1/4 tsp. black pepper
1/8 tsp. salt
6 oz. (about 2 links) fully cooked chicken sausage with 8g fat or less per 3-oz. serving , sliced into coins
1 cup chopped apple (about 1 apple)
1/2 cup chopped onion

Directions:
Preheat oven to 375 degrees. Lay a large piece of heavy-duty foil on a baking sheet and spray with nonstick spray.

In a large bowl, sprinkle squash with seasonings and toss to coat. Distribute onto the center of the foil. Top with sliced sausage, apple, and onion. Cover with another large piece of foil.

Fold together and seal all four edges of the foil pieces, forming a well-sealed packet. Bake for 45 minutes, or until squash is tender.

Cut packet to release steam before opening entirely. Divide and devour!

MAKES 2 SERVINGS

Had stuffed Zucchini for dinner last night.

Cut Zucchini lengthwise; spoon out insides and cut into small pieces. Brown ground beef or sausage removed from casing; add onions, garlic, red wine or worchestershire sauce and sautee; add in zucchini pieces, chopped tomatoe, salt and pepper. Stir until liquid evaporates. Remove from heat and stir in basil. Let cool and stir in shredded mozarella cheese. Spoon mixture into hollowed out zucchini, top with shredded cheddar cheese and bake at 400 degrees for 20 minutes.

Yesterday, I fixed green beans and mushrooms; tossed them in a mixture of olive oil and balsamic vinegar, spread them on a cookie sheet, baked 20 minutes. Removed from oven, sprinkled with salt, pepper and parmesean cheese.

For a snack, fresh raspberries swirled to coat in any favorite yogurt (put berry on toothpick to swirl). Place on cookie sheet and put in freezer for about an hour. Remove and put in sandwich bags. Store in freezer until ready to snack. Awesome!

Nice weather has come to Minnesota early this spring! I grilled a pork chop last night - enough meat for 4 servings! I cut up some yellow and green zucchini squash, a green pepper, and an onion, added some garlic and just a little oil, zapped it in the microwave for just a bit, then wrapped it in foil and stuck it on the grill. My daughter and I enjoyed that last night. I brought some to work for lunch today, and there is one more serving left at home.

Joe's Chicken Vegetable Tomato Soup.

I often make vegetable soup that others like. It has a light taste and is enjoyable to eat.

But I usually wing it as far as which vegees to use and take what I have on hand. Vegees I consider almost a free food being low in calories and carbs. Well most of them are. Non starchy vegees. No corn, potatoes, no peas, etc ...

I use fresh vegees not canned or frozen. It takes a little while to cut them up but they taste so much better.

I also make my own chicken broth from a whole chicken. It is salt free. I boil the chicken and strip the bones for my chicken meat. I trash all the fat, skin, and bones. I then boil down the broth and let it cool overnight in the fridge. When it cools all the fat comes to the top and I throw that hard yellow stuff away. What is left is a salt free and fat free (more or less) chicken broth.

1 pound chicken meat cubed.
1 large can 28 oz crushed tomatos Italian Style.
24 oz chicken broth.
lots of vegees. Use what you like. Dice them.
2 cups green peppers.
1 cup yellow onions.
1 cup celery.
3 cups cabbage.
1 cup carrots.
1 cup fresh diced mushrooms.
Spices: 1 tbs Italian seasoning, 1 tsp crushed garlic, 1 tsp black pepper.
Sometimes I use tsp sage or parsley.
3 cups water.

Slow boil for two hours.

You can use beans and not chicken for lower calorie and lower fat.
Also just add more vegees for an even lower calorie soup.
I sometimes make 1.5 gallons by adding extra tomatoes and many more vegees. Just add more spices to taste.

Friday I made a healthy chili from a recipe I found at prevention.
Lean beef
kidney beans
fresh salsa
chili powder
The ladies really liked it I used a fresh roasted garlic salsa and 1 mild salsa. If I was making just for me I would have done medium salsa. But it was very tasty

I found the "Crockpot Pork Chops" recipe and since my husband does not like any cream soup accept Cream of Chicken - I chose to substitute chicken for the pork chops and added some spices. Was delicious. emoticon

I did up a Buckwheat Pumpkin Plus Protein Pancakes today! I put it in the Sparks Recipes to share. There were other Pumpkin Pancake recipes but not like mine! I add whey protein and use Splenda to bump up the protein and knock down the sugars! They tasted great!

Hello Everyone,

I joined SparkPeople a week ago. Tonight, I made "Baked Chicken Leg Quarters w/Roasted Potatoes". It's a member's recipe and it was delicious. Also had Green Giant Green Beans. I poured out the liquid, added bottled water and white vinegar and Mrs. Dash Original seasoning. This is the way I have fixed canned green beans for 14 years. Try it! I also made a chicken salad that I found here. It is very simple: chicken, celery, mustard, and light mayo ( I used light miracle whip). I also added a half of 100 calorie bag of craisin. This will be my lunch for the next three; Chicken salad wrap in a whole wheat tortilla. This site is awesome!

Tonight I'm going to make a noodle, pesto and broccoli recipe. I'm been slow trying new recipes, but tonight will be the night. If I don't have the recipe before I go grocery shopping, it just doesn't happen.
My meals are getting smaller as I add a second snack. Last night I made a vegetable-bean soup. We ate the soup with bread and hummus. It ws a simple, but filling meal.

My husband made the chicken and broccoli casserole. The timing for cooking was off. We had to cook it for an hour rather than twenty minutes. It was pretty good once it was cooked. We are planning on tweaking it with fat free gravy and perhaps put it over brown rice.

I baked with Splenda for the first time. Made a pumpkin muffin recipe I found on Spark. One muffin has 13 carb(3 fiber) and 3 protein. Very nice with a cup of tea and a small piece of cheddar cheese. The recipe is here:

I like soups, and lunches are my most difficult meal. I found a recipe for onion and asparagus soup that I actually made three unique lunches.
1. I really don't care for thyme, so I substituted lemon pepper in the original recipe. It had too much for my taste so I added some garlic, and it was good to go. 1/2 cup plain yogurt, vanilla and 1 Tbsp Rasins on side.
2. I used the same soup, added a bit more garlic, and sprinkled it with some parmesan cheese.
I added an english muffin, and was good to go.
3. I used it as a light supper on this day. I added 1 cup spaghetti, 2T salsa and lime, garlic, pepper, and the parmesan cheese. This I found to be an interesting mix. However, I thought it wasn't bad.
This was the recipe I tried specifically for the challenge. However, I eat many meals at home. Particularly lunch, as noted, and breakfast. I eat a great deal of oatmeal in a variety of ways. I add spices, rasins, nuts etc. I also eat a great deal of yogurt for snacks. I add many things to it also. Additionally, I eat many types of smoothies. I probably should be more specific, but until I really focused on this I wasn't quite sure how to go with it.

I made the Atkins cheesecake and no crust pumpkin pie for Thanksgiving.
The pumkin pie was good, satisfied my craving but everyone else had traditional pumpkin pie.
The cheesecake was one of the best recipes I've ever tried.
I didn't tell anyone it was made with Splenda and served them slices with strawberry sauce. Rave reviews even from the picky ones.

I have 2 I used 1 was the unstuffed cabbage recipe from spark. I just used the crockpot and added salt,pepper and a little hot sauce to the recipe. The other is a easy go to recipe even my kids love that I got years ago from my weight watchers leader. 1 box angelfood cake mix and 1 can crushed pineapple mix and back according to the directions on the box. Serve with whipped topping if desired. emoticon
