Not a real big fan of writing this stuff - can't imagine it's very interesting - but it's required to meet my goals so here we gooooooooo......lol 8-)

For my second meal prepared at home, I once again visited SparkRecipes and selected the Garlic Rosemary Chicken & Rice - not real sure bout the rice but it came up under Low Carb so I went for it!

This didn't go over as well as the casserole I made earlier in the week, but hubby is so supportive of anything I undertake, he had nothing but good to say and ate it all up! I thought the chicken might better have been browned before placing in crockpot and, again, was rather bland - perhaps an injection would do the trick.

I will try it again - so many things have been deleted form our diet the selections are becoming boring. . def need to flesh out the meal rotation.

Going thru my goals 4 this group & realized I failed to write about the 2 recipes I prepared at home. . .so here goes.

My emphasis is both Low Carb & High Protein. I have found that a higher protein & fiber content tends to offset the negative impact of the carbs I consume. . .as I am successful adjusting to this diet change, I will add High Fiber to my diet emphasis.

For my first meal, I actually prepared 2 recipes from SparkRecipes: The Chicken and Broccoli Casserole and the Cucumber Salad. I chose the Casserole specifically because my hubby so misses his pasta-centric casserole dishes and I thot this mite be a good substitute. . . and I was rite!!!

Not only did he actually enjoy this recipe, his after meal reading was in the 120's. . something that has not happened in years! I also enjoyed the recipe but did find the chicken to be bland. . think I'll add a little rotisserie spice or inject the chicken next time.

The Cucumber Salad also went over very well -- I was so happy 2 find something other than a vinegar-based option and my hubby does just love his sour cream!!

Not only was this meal easy - & cheap (no exotic ingredients to purchase) - to make, but I had leftovers for a healthy lunch the following day.

Pico de gallo is one of my favorites—and yes it makes a GREAT baked chicken dish. It works equally well with ANY kind of meat—even fish! It also makes a wonderful base for soups… or add it to a pan of greens and whole kernel corn for a twist on a side dish… Yum!

I did look at the SparkRecipes and only tried one (a cauliflower dish with cheese) but even that blew my nutritional goals out of the water—you see, I’m NOT on a diabetic diet. I have CKD and I’m on a renal diet, which is a whole different ballgame: it’s NOT low carb, it’s low protein, low sodium, low potassium, low phosphorus, low magnesium… I thought diabetic living was a challenge, but this… it’s a CHALLENGE! LOL

Even some of my own favorite recipes don’t follow the guidelines I aim for, but I do cook for guests, and if I choose carefully what goes with those dishes, I can manage SMALL portions so I don’t get too bored… but it’s like that old Lay’s Potato Chip commercial—you know, “no one can eat just one”?... So I am CAUTIOUS! LOL

I’m actually enjoying the challenge of trying to step up the program a bit… but I have to see my surgeon today, and there is a family emergency going on right now… either one may interfere at this point, and I’m cutting this “novel” short… bye for now!

P.S. I looked up enthusiasm, and it says the root words mean God within... interesting...!

One of my absolute favourite recipes is for Pico de Gallo salsa. It is so fresh and flavourful that I use it not only for a dip, but I put it over a boneless, skinless chicken breast and bake it. It turns out incredibly juicy, tender, and full of flavour.

My absolute favorite is the one minute muffin with almond flour.

one minute almond meal muffin




Ingredients


4 Tbs almond meal
3/4 tsp baking powder
1 tsp cinnamon
2 packets stevia
1 Tbs chopped walnuts
1 egg
1 tsp vanilla extract
1 Tbs applesauce

Nutritional Info



Fat: 18.5g
Carbohydrates: 12.0g
Calories:248.1
Protein: 11.6g



mix all ingredients
spray large coffee cup with cooking spray
pour into cup
microwave for 1.5 to 2 minutes

1/4 c blueberries not included in calories

Serving Size: 1 serving

I tried "Nancy's Tilapia (or Chicken or Veal) Piccata" using Tilapia, and it was great! Tilapia is on the boring side if not dolled up with spices and herbs, so I usually make it a bit spicy with an Anaheim chile/garlic powder rub. I often make chicken piccata, so this was a nice change of pace. I served it with lemon and dill roasted baby yukon gold potatoes (yukon golds are the lowest GI white potato) and a mixed greens salad. All in all, a very delicious dinner!

If we are what we eat, I'm fast, easy and cheap.

I've made several SP recipes and have a few favorites. My hubby loves the Roasted Parmesan potatoes and the Reduced Fat Scalloped potatoes. I've made Chef Meg's Cocoa Crusted Pork Tenderloin, Chicken Enchilada Casserole, Yummy Pork Chops, Stepf's Best Choco-Almond Butter and Apple Cobbler. The only recipe we tried that neither of us liked was the Just Plain Meat Loaf. It just didn't appeal to either of us. Meat loaf is something hard to play with to begin with. I decide what type of protein I am going to use for dinner and then I go hunting for a recipe. I love to experiment! emoticon

This week I have used two of my new skills. I made up a cookbook on the SP site and last night I made Chef Meg's slow cooker marinara chicken with vegetables. It smelled so good this morning. I can't wait to get home tonight to sample. I also used my new crockpot. This weekend I plan to make the low-carb chicken and broccoli casserole recipe I found on this site. So far everyone of the recipes I have tried from SP have been great. I want to try one of the oatmeal dishes using the old fashion kind of oatmeal and you cook over night in your crockpot. Amazing!
