I'm on a special 5-day program, just two meals.

Brunch was buckwheat groats with black olives and carrot, and a spring mix salad with nori.

Dinner very simple but surprisingly good: spaghetti squash with a little bruschetta seasoning from Costco and a mix of walnuts and just a few macadamia nuts. When chewed up together in bites, it was so mellow and good!

Brunch: More white beans and broccoli with the end of some spaghetti sauce and butternut squash, plus added sun dried tomatoes. Pear and walnuts to round out the meal.

Eating dinner at community college cafeteria; we’ll see what is on the menu.

Dinner:
In honor of St. Patrick's Day. Vegan Shepherd's Pie.

About 4 or 5 medium golden potatoes, peeled cut and boiled.
1 bag frozen organic mixed veggies (green beans, corn, carrots)

Vegan Bchamel Sauce
for the sauce, 2T olive oil warmed in sauce pan. Gradually stir in with whisk, 2T. flour. Gradually add 1.5 C. plant based milk, almond, soy, whatever. Stir until thick. If you need more thickening, add more flour, less thickening, add more milk. Can use corn starch instead of flour, as well.

Mix veggies with 1 tsp. onion powder and 1 tsp. black pepper. Put in baking pan (I use square Pyrex pan. Pour sauce over all.

Mash potatoes and put on top, sprinkle with paprika and a little nutritional yeast if desired.

Oh, too bad. I love eggplant. I got to like when I lived in Iran; it is a staple in a couple of stews, though it is not Ever alone in there.

I got sick from stuffed grape leaves Saturday night. Not much hunger; had one meal today.

White beans, steel cut oats, some leftover Chinese food, red cabbage, green pepper, kale, flavored with Chinese 5 spice. And grapes.

I'm in New Jersey at meetings and food options for me at the hotel are limited, but I did score some nice fresh fruit for breakfast including strawberries, cantaloupe, banana, pineapple, and blueberries. Lunch was yucky, they brought me a roasted vegetable sandwich which was basically roasted eggplant on dry bread with some fresh spinach leaves. Sadly, I loathe eggplant.

What is seitan steak? I've had seitan before. Is there some company that forms it into "steaks"?

LE_SIGH: Dr. Greger in his new book: "How not to Diet" on page 337-338 says that pistachios are off the chart as the most melatonin rich food ever recorded. 2 nuts has .3mg of melatonin which is sufficient for sleep. They should be eaten 2 to 3 hours before bedtime. There have been 2 studies of pistachios on sleep. One study showed a benefit and the other did not. Dr. Greger says that different batches of nuts may be different, and it is worth trying to see if it works for you. Both my mom and me have seen improvements on raw pistachios bought from Sprouts. Dr. Greger notes that they have to be raw. If they are cooked the melatonin is destroyed.

Breakfast was overnight oats with chia, peanut powder, cinnamon and sliced strawberries.
Lunch is English peas and onions, lightly steamed broccoli, and roasted Brussels with ginger and orange.

What is it about 6 pistachios that help you sleep? My nights are so fractured I am up for anything!

Breakfast: the usual coffee, oatmeal with chia, flax and nutritional yeast
Lunch: broccoli, kale, no tuna salad
Dinner: black bean chili, corny cornbread, brussels, collards

B: BROL. Recommended by Dr. Greger in his book How Not to Diet. Intact, whole grains Barley, Rye, Oats, Lentils. Fixed with raisins, dates, walnuts, flax seed, chia seed, and blueberries.
Oatmeal cookies (makes 4 cookies): 1 mashed banana, cup rolled oats, 1 tbsp walnuts, tbsp cacao powder, 1 frozen cherry per cookie, 3 chocolate chips per cookie. Cooked in air-fryer for 8 minutes at 360 degrees.

L: Black beans/salsa/guacamole. Whole wheat pita/hummus. Cruciferous crunch salad.

D: Cheesy Kale Soup the cheese is nutritional yeast and cashew nuts/Yams for dessert.

7PM: 6 pistachio nuts to help me sleep.

I've been under the weather all week, so was really in the mood for some chicken soup last night. Instead made chickpea soup with lemon and dill (delicious!) accompanied by homemade bread, brussels and kale. Super yum.

Today breakfast is the typical steel cut oats with chia, flax and nutritional yeast. I've got some lovely sweet potatoes I can use for lunch with some of that leftover kale. Dinner is tbd!

Breakfast today was a cup of spicy tomato soup with brown rice and cannelini beans and a slice of 100% 5 grain whole wheat bread. Lunch will be a poke bowl with brown rice, sauteed broccolini and mushrooms, edamame, teryaki tofu, and sliced jalapeno. The dinner plan is spiralized zucchini with raw tomato, basil, garlic sauce.

It is a beautiful day in The Burg and I am working from home so I can actually spend a little more time making breakfast than I usually do during the week. I think I'm going to go smoothie bowl this morning. Coconut milk, frozen banana, mango, spinach, and spirulina as a base, with blackberries, chopped almonds, and hemp seed. Lunch is going to be a BLT on sprouted grain bread with Sweet Earth Benevolent bac'n and I have a nice fresh tray of alfalfa sprouts to add to that. (I do love my sprouter.) Not sure what I'm going to do for dinner yet. Maybe gallo pinto and a small green salad.

I feel you, Oolala. On the other hand, I have been overeating so much during these snowed-in days that I absolutely refuse to post what I "et." :O

I will say that I made the most glorious veggie-pinto bean soup the other day. Filling, sticks to my ribs and feels really satisfying (especially if I blend it). :)

I'm trying to do the Vitamineral Green thing in the mornings for extra nutrients and energy (and iron!) I mix it with water and just a couple of ounces of apple juice. Could be placebo effect, but I do feel like I'm a little more energetic after I drink it.

It's probably not polite for me to say it, but those meals sound incredibly light! I think I'd be darn hungry. Of course, I don't know everything that's in them, and you are a grownup and can choose for yourself!

Had a weird day because 1) my maid was coming earlier than I thought and I wanted to get the fridge in better shape so I had quite a hodge podge for breakfast; 2) I took a friend to a rather involved doctor appointment that she asked me to sit in on. She was disappointed that she was not able to see another specialist until March, when lo and behold. there was an opening right after lunch time.We hurried out and I had a much lighter (and faster) lunch than I would have, though I was glad to find the restaurant where I could basically get pretty simple beans and rice with green sauce over lettuce. Got an apple and sunflower seeds to round it out at a nearby market.

Dinner was the end of the Indian blackeyed peas, some whole oats, and spaghetti sauce.

Made similar brkfast, this time with polenta and cauliflower, plus kalamata olives for a kick. Also some flaxseed meal.

Lunch will be boiling potatoes, acorn squash, salad, and grapes.

Since I haven't been very hungry in the evening, I will have a makeshift "dessert" long after lunch, with ryeberries, walnuts, and a bit of dark chocolate. I ended up making a version of it yesterday because of a time crunch, and it was good!

Made a weird-to-some breakfast but I liked it! Soaked chia seeds overnight in flaxmilk, then heated with cooked eggplant and used my new-to-me immersion blender while heating. Added zaatar, a little yeast powder, and salt. Left some of the eggplant in chunks. Also added some pickled red pepper-left unblended-and MCT oil. I like having an option instead of grains sometimes.

Lunch will be lettuce and carrot salad, plus brown rice with cacao powder, and a mix of cooked cranberries (from fresh) and tangerines.

Dinner will be the end, I think, of Indian spiced brown rice plus kale, and an apple. Have not decided on protein, maybe pea powder.

Will have only brunch and dinner. Again, glorious leftovers! The end of Sri Lankan cabbage curry and spiced brown rice plus butter chicken spice sauce (with coconut oil) on tofu. Blackeyed peas for dinner. Various veggies, including avocado and acorn squash spread out. Too detailed to post.

Breakfast was just some strawberries, a banana, and coffee. Later I snacked a bit on cucumber slices and hummus. Lunch is a bowl of brown rice with mushrooms, edamame, bok choy, jalapenos, and Tofurky Thai basil chik'n. Dinner is still a big question mark.

Breakfast today: Coffee, oatmeal with chia, flax and nutritional yeast

Lunch will be leftovers from last night: black bean chili, spinach, spaghetti squash.

For dinner I'm planning to make some vegan ruebens! The corned beef is replaced by seitan. I looove sauerkraut.


You're right hollystormcloud - for most people dietary cholesterol is not a problem, but for those who are genetically predisposed to have issues it's best avoided. I knew eggs had lots of cholesterol, but was surprised (for some reason... duh?) that "lean meats" such as chicken breast still had so much. This vegan journey has been very informative thus far.

It is my understanding that dietary cholesterol has little to no link to blood cholesterol in most people, and it's the "most people" part that is important here. When my cholesterol first went up a few years back my strategy was to stop eating eggs and I did and it went right back down. That was the only change that I had made. Stupidly, I started eating eggs again and it went right back up. Based on my experience I have to assume that I do not fall into the "most people" category.

Breakfast is strawberries, the biggest tangelo I've ever seen, and a banana. For lunch I have some homemade pasta salad with sundried tomatoes, broccoli, etc. Dinner shall be more chik'n soup.

I thought it's been shown there is no correlation between dietary cholesterol and blood content. But I hope your strategies have paid off.

Had yummy leftover Indian brown rice for breakfast, leftover Indian blackeyed peas plus leftover Sri Lankan cabbage curry for lunch. Some raw veggies at both. Set to have cooked ryeberries, carrots, eggplant, grapes, some pea protein powder (to keep the balance right) and walnuts for dinner. I'm eating more than I was on my temporary plan, but not up to maintenance yet. I actually ate only half my lunch for various reason and am not especially hungry, but older people's appetite does not always match their needs, so I'm gong to eat the full dinner. plus the lunch leftovers. The plan I used depends on refeeding for some of its benefits. I don't usually even use the counter but I will for the next few days at least to get an idea of how to achieve a macronutrient balance I'm trying out.

Holly, I have to say it is amusing that you talk about the temperatures you do. I live in San Diego where we are sometimes hated for our mild weather. I agree that the 60's feel cool, but I have so many friends or relatives for whom daytime 60's means spring! Short sleeves and short pants! It's all relative.

For breakfast and lunch I will be having absolutely nothing! I have a Dr.s appt. today and it's a new doctor (since my last one up and closed shop a year ago giving no notice) and he's going to want to run cholesterol so I gotta fast. I'll be interested to see the results since my last cholesterol test was over a year ago and I was still eating eggs and cheese at that time and my numbers were high. For dinner I'm making a nice big pot of chik'n noodle soup using Quorn chik'n pieces. It's only in the 60s here today and nice hot soup is perfect for the day!

Breakfast was three teeny tiny Thai bananas and some chickory coffee. Lunch is a Hass avocado, leftover Hoppin' John, and a Chicago hard roll with a small amount of Earth Balance. Dinner is going to be Nicoise salad with Good Catch Plant-Based "Tuna" and obviously no hard boiled egg.

Lunch will be baked potato topped with leftover chili, then maybe some fruit.

I start my day with coffee and Silk creamer, a vegan protein drink and lots of water with lemon. By midday, I’ll have a multi-grain cereal and soy milk or cream of wheat, with a fruit. I don’t mind eating the same thing, and it makes tracking meals easier when I’m in the weight loss phase (which I am ... again).

Breakfast was Chex and a sprinkle of Grapenuts and almond milk and a banana. Usually I have oatmeal but was feeling lazy.

Lunch leftover lentil loaf, mashed potatoes, and the gravy I listed in recipes. Also succotash.

Dinner will be chili, WFPB of course.

Snack will be a rather expensive apricot. All the way from South America, but I rarely see them.

I didn't sleep at all last night so I had breakfast at 3am. It was a crispy potato taco with homemade pica de gallo and a small amount of Violife "cheddar". I may be eating like a hobbit today and having second breakfast shortly, but it will just be some fruit and berries. Lunch will be garden veggie tofu salad on Ezekiel sprouted grain bread and dinner will have to be salad.

I have been feeling snobby about how much this little town has been influenced by middle-class American tastes, middle-class people who are living much larger than they could in the United States, avoiding a lot of what I considered tourist fare, but I am very glad on this last day that I was able to score a salad with falafel. There was an option for a traditional tahini dressing or a vegan Cesar, which was quite amazing and recommended. I did take the Cesar but I find myself thinking about that tahini too!.That’s probably all I will have between now and getting home besides some coffee and a cookie on the plane. I do not like the idea that I might not be able to travel well anymore, but I will be so glad to get back to my kitchen! One night, I did not order any food because they were out of the few dishes I would have opted for. I was not actually that hungry, having done some stress eating earlier, but I felt wounded about it on the inside! However, had a lovely time with my companions.

In small town in Mexico. Brunch was leftovers from yesterday. Steamed veggies with fried tofu, rice, some kind of vinegar sauce, and half a banana. Oh, half of a little flour tortilla.

Will be eating out again, so don’t know what will be in next meal. May have some kind of snack bar (I have a few with me, though I would prefer to go without) and a coffee somewhere midway through. emoticon

Today breakfast was a small banana, some grapes, and Mexican tofu scramble.

Lunch is lentil soup and steamed cauliflower (no oil, no Earth Balance, no salt).

Dinner is going to be a falafel wrap with lots of veggies and a small amount of Greek dressing.

Breakfast was oatmeal with ground flaxseed and a few walnuts. Almond milk . Oh and I sweetened the oatmeal with a bit of maple syrup. Lunch was leftover thanksgiving and Im thankful its gone. I will be away most of the afternoon so dinner will be late, small and quick.

I did the bad for breakfast this morning and had some Daiya pizza so I'll have to do better the rest of the day. I have some nice broccolini to saute for lunch with a small salad. Not sure about dinner yet.

Breakfast was a slice of Ezekiel sprouted grain bread with some chickpea salad spread. I made a beautiful salad for lunch with romaine, kale, scallions, radishes, purple carrots, grape tomatoes, and chickpeas. Dinner is still up in the air.

Snack smoothie made with Swiss chard (I know weird), almond milk, frozen blueberries and banana and a bit of pea protein.

Hi Group. This morning I had a hard boiled egg. Two cups of coffee. 1.5 cups almond milk with a scoop of plant based performance plus. I’m looking at the oatmeal that soaks over night. Do I add the ground flax seed in the evening or right before I eat it?

Logging all my food today and working out 90 mins. Have a healthy day.

I've been trying to do more oatmeal for breakfast, but I've never been a big fan. It's not the taste for me, it's the texture. If I put a lot of nuts, seeds and dried fruit in I can usually manage it. The texture is just too much like wallpaper paste!

This morrning I have two tangerines, some raspberries, and a mango.
I'm meeting my brother for lunch at Tijuana Flats so it's going to be a black bean no-ritto bowl, hold the dairy. Dinner is likely to be salad. Gotta get my greens in!

Do you soak it first? It doesn't sound weird to me! I bought Whole Foods Muesli and my husband and I like it, but I am going to try putting the almond milk in a little ahead of time to soften it.

Oh, I guess the steel cut oats are cooked. Duh me.

Steel cut oats apple and walnuts breakfast.
Stir fried Asian rice, veggies, and tempeh cubes in peanut sauce lunch.
Dinner at Vietnamese restaurant, noodle bowl.

Had a couple of clunkers with recipes I tried and got a bit discouraged. Oh well. Gonna happen. Back to some tried and true recipes and some veggie meatballs and burgers. Familiar and not too exotic.

No A/C this morning so it was cold shredded wheat with almond milk and blueberries.
A/C fixed and lunch was leftover vegetable soup made with homemade broth and Lots of good stuff. Its yummy but not very filling so I had a pita smeared with peanut butter.
Dinner will be pizza. Making it with a cauliflower crust I bought. Maybe a salad.

Holly Ill have to look into lo mein.

Those sound really tasty Shmookitty.

This morning breakfast was just a banana and coffee. Lunch is going to be some pasta e fagioli that I pulled out of the freezer a couple of days ago and I'm planning to make lo mein for dinner.
