I did not find this information in the books I have by Dr. Furhman but he mentioned it in one of this video's. I looked it up on Dr. Greger's site and he confirms that it 's best to leave onions, garlic and leek alone after chopping it, for 10 minutes so that two different enzymes that are released when cut, can combine and form a strong, heat-resistant anti-cancer compound.
After it's rested for 10 minutes on your chopping board, you can then cook or otherwise heat the onions or garlic, as the compound that is formed by the two enzymes is heat-resistant.
Dr. Fuhrman also suggests blending your onion before you put in in your soup,

Dr. Greger explains that a similar process happens with cruciferous vegetables such as broccoli and kale: to get the full anti-cancer effect you need to let it sit after you chop it (breaking the cells open so the enzymes come out). Only you need to let those cruciferous vegetables sit for 40 minutes. OR eat them raw.
