Here's a recipe that someone on my RV team tried and highly rated (of course she used regular ground beef and didn't use FF!):

SOUTHWEST STUFFED PEPPERS

4 ServingsPrep/Total Time: 25 min.5 20 25 Ingredients

1 pound ground turkey
2/3 cup chopped sweet red pepper
1/2 cup chopped onion
2 garlic cloves, minced
1-3/4 cups chopped seeded tomatoes, divided
4 teaspoons chili powder
1 teaspoon cornstarch
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1-1/2 cups water, divided
4 medium green peppers
2 tablespoons FF sour cream (optional - can use plain greek yogurt for cycle1)
2 tablespoons shredded FF cheddar cheese
2 green onions, chopped
4 grape tomatoes, halved, optional
Directions
In a large skillet, cook the beef, red pepper, onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain.
Stir in 1/2 cup tomatoes, chili powder, cornstarch, cumin, oregano and cayenne. Gradually stir in 1/2 cup water. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes.
Meanwhile, cut green peppers in half lengthwise; remove seeds. Place in an ungreased shallow 3 qt. microwave-safe dish; add remaining water. Cover and microwave on high for 8-10 minutes or until tender. Drain; fill each pepper half with 1/3 cup beef mixture.
Top with the remaining tomatoes. Garnish with sour cream, cheese, green onions and grape tomatoes if desired. Yield: 4 servings.
Editor's Note: This recipe was tested in a 1,100-watt microwave.


Nutrition Facts: 1 serving (2 each) equals 278 calories, 12 g fat (5 g saturated fat), 64 mg cholesterol, 138 mg sodium, 18 g carbohydrate, 5 g fiber, 26 g protein.

REALLY GREAT TURKEY BURGERS

1 pkg ground turkey
1/2 envelope of Liptons Beefy Onion soup mix (or regular)
1/4c finely chopped onions
1/4 c finely chopped gr peppers
6oz. mushrooms finely chopped (I processed them)
1T worcestershire sauce (couple of good squirts)
several turns of pepper (I had some kind of steak "grinder" seasoning so I gave it a few turns of that instead)
1 egg
1/4c parmesan
1/2 c loosely packed FF mozzarella

I nuked the mushrooms for 1mn 20 sec until they reduced their juice, then drained them before adding to the turkey. Makes 4 or 5 really big patties. Follow directions for grilling below (mine took 15mn per side on charcoal)

With a side of eggplant with marinara sauce and mozzarella I thought I was eating lasagna!

Also I really don't measure anything, so I hope it's accurate as far as onions, peppers and cheese.

Someone said these were watery until cooked so I changed it completely and posted it above

TURKEY MUSHROOM BURGERS

1 pound ground turkey
8 ounces fresh mushrooms, finely chopped
1 onion, finely chopped
2 tablespoons soy sauce
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Directions
1.Preheat grill for high heat.
2.In a medium bowl, mix together the ground turkey, mushrooms, onion, and soy sauce. Season with kosher salt and pepper. Form into 4 burger patties.
3.Lightly oil the grill grate. Place patties on the prepared grill, and cook for 10 minutes per side, or until well done. Top with a slice of FF cheese the last couple of minutes if desired.

Tuna Patties

2 - 5 oz can tuna (squeezed the living daylights out of the tuna to get water out)
2 tbs parmesan
2 eggs
dash pepper
1 tbs lite soy
1 tbs rice vinegar
2 tbs finely diced scallions (or any onion)
1 large carrot diced

Mix all ingredients well. I recommend adding one egg, and seeing how the mixture is. If it doesn't seem to be sticking well, add the other egg or extra egg whites.

Set aside for about 5 minutes to let the cheese be absorbed.
Heat a skillet fairly hot and add olive oil.
Drop tuna by heaping tablespoon into hot skillet.
Cover and let brown for about 3-4 minutes then turn and brown the other side.

Another option is to cook these using a George Foreman grill, which is what I did. Less flipping that way and less chance of them breaking.

Crockpot Stuffed Peppers with Ground Turkey

INGREDIENTS:
2 lbs ground turkey
4 large green peppers
1 large onion
2 carrots
4 cloves of garlic
Ĺ head of cauliflower
6 ounce can of tomato paste
1 Tbsp dry oregano
1 Tbsp dry or fresh tarragon
Salt and pepper

DIRECTIONS:
1. Cut the tops of the peppers and clean the seeds out. Arrange peppers in the Crock-
Pot standing up and make sure they fit securely.
2. Grate onion, carrots, garlic and cauliflower in the food processor. You can also just
chop them into small pieces with a knife if you donít have a food processor.
3. In a big bowl, combine ground turkey, shredded vegetables, seasonings, and tomato
paste . Add salt and pepper to taste.
4. Stuff the peppers with the mixture and arrange leftover meat between the peppers.
5. Add half a cup of water (or add 1 can Italian diced tomatoes), cover, and cook on low for 8Ė10 hours. If you donít have a
slow-cooker, the dish can be cooked in the oven, covered, for 1Ė2 hours.
ACTIVE COOKING TIME: 15-20 minutes
TOTAL TIME (START TO FINISH): 8-10 hours in crockpot (or 1-2 hours in oven)

CAULIFLOWER KALE SALAD

INGREDIENTS:
3 large kale leaves
Ĺ head cauliflower
1 cup cherry tomatoes, halved
1 stalk, green onion, finely chopped
1 sprig fresh parsley, minced
2 Tbsp freshly squeezed lemon juice
1 garlic clove, finely minced
Ĺ tsp kosher/sea salt (ľ tsp table salt)
Freshly ground black pepper
2 Tbsp extra virgin olive oil

DIRECTIONS:
1. Tear the soft leaf of the kale away from the center stalk that runs throughout the
length of the kale. Discard the tough stalk. Using a chefís knife, finely chop the kale
leaves. Rock back and forth with your knife over the leaves, like you are mincing. Add
to a large bowl, along with the cherry tomatoes, green onion, and parsley.
2. Grate the cauliflower using the large holes of a box grater. Add to the bowl and mix.
3. In a small bowl, whisk together the lemon juice, garlic, salt, pepper and the olive oil.
Pour dressing into the bigger bowl and toss gently. Taste and season with additional
salt if needed.
ACTIVE COOKING TIME: 15 minutes
TOTAL TIME (START TO FINISH): 15 minutes

Baby Spinach Omelet

Ingredients
2 eggs
1 cup torn baby spinach leaves
1 1/2 tablespoons grated Parmesan cheese
1/4 teaspoon onion powder
1/8 teaspoon ground nutmeg
salt and pepper to taste
Directions
1.In a bowl, beat the eggs, and stir in the baby spinach and Parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.
2.In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.

Grilled Herbed Chicken Breasts - it sounds like a lot of oil but it's just the marinade - you won't be cooking in it.


Original Recipe Yield 6 servings
Ingredients
2 tablespoons chopped Italian flat leaf parsley
2 teaspoons fresh rosemary, minced
2 teaspoons chopped fresh thyme
1 teaspoon dried sage
3 cloves garlic, minced
1/4 cup olive oil
1/2 cup balsamic vinegar
salt and pepper to taste
1 1/2 pounds skinless, boneless chicken breasts
Directions
1.In a blender combine the parsley, rosemary, thyme, sage, garlic, oil, vinegar and salt and pepper to taste. Blend together. Place chicken in a nonporous glass dish or bowl and pour blended marinade over the chicken. Cover dish and refrigerate to marinate for at least 2 hours or up to 48 hours.
2.Preheat grill to medium high heat OR set oven to broil.
3.Remove chicken from dish (disposing of leftover marinade) and grill or broil for about 6 to 7 minutes per side, or until chicken is cooked through and no longer pink inside.

Oriental Chicken Breast "packets"

Take a 10" square of aluminum foil and brush with 2 tsp. olive oil. Off center, place approximately 1c fresh baby spinach, then chicken breast, then sprinkle with fresh sliced mushrooms. Drizzle with 1 tsp teryaki sauce.

Fold foil over to make a packet. Crimp ends. Place on baking sheet and bake at 450 degrees for 20 minutes. Open carefully and enjoy. Good with rice on the side for cycle 2+ emoticon

Chocolate Protein Cupcake Recipe

1 scoop whey, either chocolate or vanilla
2 Egg Whites whipped soft peak using a mixer
3 T. Water
1/4 tsp. Baking Powder
1 PAC Stevia
Mix all ingredients and pour into a microwave safe mug or small bowl container that has been first sprayed with Pam. Bake for two minutes at 80% power. This is delicious and has the consistency of a sponge cake. I top mine with Greek Yogurt for icing.

6 kinds of TURKEY BURGERS from Mr. Food. Skip the breadcrumbs in one , use FF shredded cheddar in another, and substitute plain greek yogurt for the sour cream in a topping for a different one and you're good to go...Oh and of course no bun! emoticon

DLG if you don't like eating yogurt, then how about making smoothies out of it. That way you get your pro-biotic in and it tastes yummy and usually very filling. When I make a smoothie, I make it so thick that I can eat it with a spoon. It is like eating sherbert.

I buy the Dannon Greek Vanilla yogurt, and I'll mix in some strawberries, blueberries or peaches. I've also added some canned mandarin oranges to it. You can also add cocoa powder to the plain, and it tastes kind of like chocolate mousse.

I was going to ask about yogurt ideas - because this is one thing I'm really struggling with. I have never liked it, the lite flavored ones from Yoplait I can get down a container but it takes me about 20 minutes!

I don't know about making my own. I hate to cook!

So if anyone has any tips about store bought ones that taste good please let me know.

Very Easy Slow Cooker Turkey Breast

Ingredients
1 (6 pound) bone-in turkey breast
1 (1 ounce) envelope dry onion soup mix
Directions
1.Rinse the turkey breast and pat dry. Cut off any excess skin, but leave the skin covering the breast. Rub onion soup mix all over outside of the turkey and under the skin. Place in a slow cooker. Cover, and cook on High for 1 hour, then set to Low, and cook for 7 hours.
Nutritional Information
Amount Per Serving Calories: 273 | Total Fat: 1.5g | Cholesterol: 164mg

Bummer about the fennel, but I can wait a couple of weeks, no problem :-)

Yogurt question: I've been eating my 2nd yogurt after dinner so it's like dessert. Tonight I'm too full to eat anything else. Is it more important to pay attention to my hunger meter, rather than make sure I get two probiotics in? This is the first day I've considered skipping the 2nd yogurt.

Portabella Pizza

1 large portobello mushroom, stem removed
1 tablespoon low carb spaghetti sauce
1/2 cup FF mozzarella cheese
1 small clove garlic chopped
Sliced sweet banana peppers from a jar (optional)
Thinly sliced sweet onion (optional)

Directions
1.Preheat the oven to 375 degrees F (190 degrees C).
2.Place the mushroom on a baking sheet, and bake for 5 minutes in the preheated oven. Remove from the oven, and spread spaghetti sauce in the cup of the cap. Top with cheese, olives, garlic, onions and peppers. (can use turkey pepperoni and black olives for cycle 3)
3.Bake for an additional 20 minutes, or until cheese is melted and golden.

The Doctors site has a lot of good recipes, especially the dessert yogurts like double chocolate pudding.

If a recipe has starches like beans or rice just eliminate them until cycle 2.

If you need help modifying a recipe feel free to ask me for help. I'm an excellent cook.

If you don't have a George Foreman grill, I'd suggest investing in one. There are a lot of different recipes for marinating chicken breasts that give them different tastes. How about a slow cooker? A small turkey breast sprinkled with french onion soup mix and cooked on low for 8 - 10 hours is delicious and you can freeze the leftovers. Ground turkey can be used in anything you use hamburger in.

Try doing a stirfry with chicken and veggies....delish
I put my chicken in th slow cooker with salsa, some canned tomatoes and veggies, when I get home my meal is cooked.
Make a ground chicken or turkey chili for c2 with the beans or c1 without the beans, it is absolutely amazing. Just throw whatever you want in your chili and put it either in a pot or the slowcooker. I always use my slowcooker.
You can also google low cal, low carb chicken dishes and come up with dozens of recipes.

I'm a horrible cook - and I can't eat fish (it has something to do with a fishing trip when I was little and rainbow trout looking up at me from a plate).

Any suggestions for chicken dishes would be appreciated. I've been researching recipes on SparkPeople and trying to find new ideas for the next 17 days until I can bring beef back into my menus.

Green Bean, Mushroom and Fennel Salad

1/3 c extra-virgin olive oil
1/4 c lemon juice
3 Tbsp chopped fresh dill
1 clove garlic
3/4 Tsp salt
1/4 Tsp pepper
1 lb. mushrooms
1 lb. green beans, trimmed
1/2 fennel bulb, thinly sliced

Whisk together oil, lemon juice, dill, garlic, salt and pepper. Add mushrooms and toss to coat.

Trim beans, cut in half diagonally. Blanch in boiling water until tender-crisp, 3 - 5 min. Drain and cool in ice bath. Drain well and pat dry.

Add beans and fennel to mushrooms and toss to coat well. Serve immediately or refrig... your choice. :)

Turkey Chili (no beans c1)

l lb ground turkey
1 tin stewed tomatoes (you can use chili style)
Salsa (as much as you want)
Green, red, yellow or orange bell peppers (I use all three)
diced onion to taste
Garlic
Chili spice (use to taste)

Brown ground turkey (and drain)
add rest of ingredients into a slow cooker and cook over low for about 4 1/2 -5 hours.

For cycle 2 add kidney beans or whatever beans you wish.

Grilled Tilapia

*4 tilapia fillets
* 2tbsp ground flax seed
*1tbsp sesame seeds
*dill, garlic, pepper, salt-free seasoning ( I love red garlic from Epicure)

~Heat the olive oil in the microwave with the dill and salt free seasoning mixed in it.
~drizzle mixture over the fish until there is some on every fillet
~spread it around, then sprinkle with garlic and pepper
~cover and leave in the fridge for 2-3 hours
~grill ( or bake) until done.

Breakfast Casserole

4 Eggs plus 4 Egg Whites
1 Cup Cottage Cheese
1/2 Cup Greek Yogert plain
1 onion, chopped
2 cups mini Portabella Mushrooms, sliced
1 small bag Spinach fresh

*** sautť the onions and baby bellas, then add the spinach, cover and turn off heat so it steams. In a bowl, mix the eggs, cottage cheese, and Yogert. Add some pepper if you like. I will also add some garlic because I love it. Now fold in the mixture and stir. Pour into an 8x8 glass baking dish and bake at 350 for 50 minutes. I devoid this casserole into 4 portions and love it for a quick ready breakfast! emoticon emoticon emoticon

I have also sauted some red, yellow, and orange peppers with my onions. For some reason, broccoli doesn't seem to do so well with this recipe.

I'm not sure the Eggplant Ratattoui would be a cycle 1 recipe as i don't think zuccuni is listed until cycle 3 and wheat flour can be used in cycle 2 i believe. The recipe does sound really good and i will definetly be trying it since i am on cycle 3 and i know we can have them on this cycle.

Eggplant Ratattoui emoticon emoticon

1 Eggplant peeled and cut into cubes
3very small Zuchini, cut into half circles
6 Wheat Flour to toss over the zucchini and eggplant to prevent browning in the air
1 of each yellow, red, and orange peppers, chopped
1 Onion, chopped
3 Garlic cloves, chopped fine
3-4 T. Olive Oil
1 large can Italian Tomatoes
1 small can Tomato Paste

Sautť the peppers and onions in the EVOO until lightly browned, now add the zucchini and eggplant, toss and cover on medium to low heat. Allow veggies to cook down until nice and soft and add the tomato items. Simmer and enjoy! I devide this into 5 portions in Tupperware containers for grab and go lunches. Sometimes I will crumble a browned Boca Burger in it for extra protein if I need it.
I made lasagna for my family the other night and I had my Ratattoui instead! I also added Baby Portabella mushrooms and thought it was the yummiest ever!

Mini-Veggie Pancakes

INGREDIENTS:
ľ cabbage chopped rough
ľ onion chopped fine
1 whole egg
1 egg white, beaten
1 sundried tomato, chopped fine
ľ tsp paprika
ľ tsp mixed herbs
Salt
DIRECTIONS:
1. Mix all ingredients together in a bowl.
2. Heat a non-stick pan on medium to med-high heat.
3. Drop a tablespoon of mixture onto the pan, and press down lightly for a few seconds
with a spatula.
4. Cook on one side, flip, and press down again until mixture is cooked through.
ACTIVE COOKING TIME: 10 minutes
TOTAL TIME (START TO FINISH): 10 minutes

Serving size 4

Greek Turkey
OK....I just sort of made this up on they fly last night and it was supper yummy.....I guess it should have a name....It's Turkey (could use chicken or fish I guess)....and it has a greek sort of flair.

Turkey Tenderloin -one package (I think it is 12 oz) cut in bite size chunks
1/4 onion large dice.....I used yellow, but in retrospect I think red would have been better
Grape tomatoes...I'm guessing I used about a cup...maybe a little more
a bag of fresh baby spinach
sea salt.pepper to taste
greek oragano (I have an herb garden....so I use fresh) but dry would be fine
flat leaf parley
little bit of fat free feta

Saute the onion in a good drizzle of olive oil, once they turn translucent add the turkey and brown the meat.
Add the tomatoes.....once they start to burst....add the seasonnings and herbs
then add the spinach and stir until it just begins to wilt.
Sprinkle with a little feta and serve.....this was 2 hefty servings

These are all items that are in Cycle1

I have modified the FOCACCIA FLAX BREAD recipe from the spark recipes website and LOVE it as my new snack/ bread substitute.

Here is the original recipe copied from spark recipes.

2 cups flax seed meal
1 Tablespoon baking powder
1 teaspoon salt
1-2 Tablespoons sweetening power from artificial sweetener
5 beaten eggs
1/2 cup water
1/3 cup oil ( I was not sure what kind of oil was used wheter it was virgin or vegetable ??)


Directions

Preparation:

Preheat oven to 350 F. Prepare pan (a 10X15 pan with sides works best) with oiled parchment paper or a silicone mat.

1) Mix dry ingredients well -- a whisk works well.

2) Add wet to dry, and combine well. Make sure there aren't obvious strings of egg white hanging out in the batter.

3) Let batter set for 2 to 3 minutes to thicken up some (leave it too long and it gets past the point where it's easy to spread.)

4) Pour batter onto pan. Because it's going to tend to mound in the middle, you'll get a more even thickness if you spread it away from the center somewhat, in roughly a rectangle an inch or two from the sides of the pan (you can go all the way to the edge, but it will be thinner).

5) Bake for about 20 minutes, until it springs back when you touch the top and/or is visibly browning even more than flax already is.

6) Cool and cut into whatever size slices you want. You don't need a sharp knife; I usually just cut it with a spatula.

If you substitute egg beaters/ egg whites for the five eggs (which is unlimited even in cycle 1) and substitute the oil with unsweetened applesauce this recipe is fantastic! Since we can have one serving of flax oil a day, the ground flax seeds count for that...actually the ground
flax seeds are so high in fiber and low in oil I think they are allowed in any cycle.


I used it in cycle one for a snack with sugar free jam, and now in cycle three I can have an egg and turkey bacon sandwich without wasting one of my two carbs for the day.

Hi there!

Here's a recipe for salad dressing for all cycles that will spruce up that "same old salad".

1 cup plain low fat kefir
1/4 cup fat free Miracle Whip
1/4 skim milk or more to thin
1- .4oz envelope Hidden Valley Buttermilk Ranch Dressing mx
Optional - 1-2 Tbls olive oil (doesn't need it in my opinion but some are having a hard time getting in the 2 good fat requirement).

Wiz it up in the blender or shake in a jar. SOOO good as a dressing or dip. Makes 6- 1/4 cup servings.

This tastes just as good as any Ranch I've ever had.

I have added this to Spark Recipe's for nutritional info.

Keep drinking that water!

Here's the Cauliflower popcorn from The Doctor's website:

1 head cauliflower or 1 head equal amount of pre-cut commercially prepped

cauliflower
4 tablespoons olive oil
1 teaspoon salt, to taste



1 Preheat oven to 425 degrees.


2 Trim the head of cauliflower, discarding the core and thick stems; cut florets into pieces about the size of ping-pong balls.


3 In a large bowl, combine the olive oil and salt, whisk, then add the cauliflower pieces and toss thoroughly.


4 Line a baking sheet with parchment for easy
cleanup (you can skip that, if you donít have any) then spread the
cauliflower pieces on the sheet and roast for 1 hour, turning 3 or 4
times, until most of each piece has turned golden brown.


5 (The browner the cauliflower pieces turn, the more caramelization occurs and the sweeter theyíll taste).


6 Serve immediately and enjoy!

Low Fat Baba Ghanoush:
It is a traditional Arab dish consisting of eggplants mashed with seasonings and other ingrediets. To reduce the fat content, I skipped the tahini sauce.

2 Large eggplants
2 Garlic Cloves
1/2 tbsp olive oil, 1/2 tbsp sesame oil
sea salt
paprika
lemon juice

Wash the two large eggplants and place whole (including the calix) on a baking sheet.
Leather the eggplants in the olive oil to prevent them from sticking. If you want them to cook faster, cover the baking sheet with foil paper.

Bake in 350 F until the eggplants are very soft.

Take out of the oven and allow to cool.

Cut the calix, peel and place the cooked flesh in a food processor. Add garlic, salt, paprika, lemon juice, olive and sesame oil. Blend.

For presentation, top with more paprika and fresh parsley.

Bean Sprout Recipe
Ingredients
2 c sprouted mung beans (not canned)
1/2 onion
1/2 cup carrots
1/4 cup cucumbers
1 small piece ginger smashed
1 clove garlic peeled and smashed
1-2 tsp chili pepper
1 tb Olive oil
1 tb lite soy sauce

Directions
Note: this is not fried beans dish. DO NOT OVERCOOK. When bean sprouts are cooked too long the cells walls collapse and fill the pan/plate with liquid--not desirable. Cook this menu item AFTER everything else is ready to be served.

Preheat a wok (or skillet).

Add all ingredients (except soy sauce and chili pepper) to the hot pan of oil. Quickly stir fry to heat the beans through.

Add Soy sauce and chili pepper: When the soy sauce is added it will further flavor and steam the beans briefly. Add the soy sauce; stir to coat sprouts.

Serve immediately.
