In addition to providing satisfying crunch when used as a topper for salads, sweet potatoes, oatmeal and yogurt, pumpkin seeds have some great health benefits.

Amongst which are zinc, often in short supply in our diets....especially if we don't eat red meats... and several forms of vitamin e.

One caveat about pumpkin seeds... be sure as with any other seed or nut, to chew them thoroughly to unlock all the goodness you can as seeds and nuts are not easily broken down by our digestive enzymes.
