Yes, I'm going to cook pintos tonight.

It is only with the heart that one can see rightly; what is essential is invisible to the eye. ~The fox, The Little Prince

My goals:
(1) I prepare very nutritious (and delicious!) meals. But I need to be more mindful about portion control, dessert, and alcohol.
(2) I want to do more hiking! (short-term)
(3) I want to be one of those people that compete in track and field when they're in their 80's, 90's and 100's (long-term)

My problem with the ip or Co is that there are so many great recipes and most have a great gravy.

This was tasty!

Slow-Cooker Beer and cheese potato chawder

Ingredients

2
lb. (6 medium) russet potatoes, peeled, chopped (6 cups)
1
medium onion, chopped (1/2 cup)
1
medium stalk celery, chopped (about 1/2 cup) SAVE $
1
medium carrot, finely chopped (about 1/2 cup) SAVE $
1
garlic clove, minced
1/4
teaspoon pepper
1
(14-oz.) can chicken broth
1
(12-oz.) can beer
8
oz. (2 cups) shredded Cheddar and American cheese blend
1/2
cup whipping cream
Rye bread, cut into cubes and toasted, if desired

Steps
1
In 3 to 4-quart slow cooker, combine potatoes, onion, celery, carrot, garlic and pepper; stir gently to mix. Pour broth and beer over vegetables.
2
Cover; cook on Low setting for 6 to 8 hours.
3
About 10 minutes before serving, coarsely mash vegetables with potato masher or fork. Add cheese and whipping cream; stir until cheese is melted. Cover; cook an additional 5 minutes or until thoroughly heated. Top with croutons.

Expert Tips
Use nonalcoholic beer instead of regular beer. Use milk in place of the whipping cream.
Coarsely mashing the cooked vegetables makes this soup thick and creamy.
Ladle this chowder into huge mugs and garnish each serving with rye bread croutons. To make croutons, arrange a single layer of cubed rye bread on a cookie sheet. Toast them in the oven at 350F for 15 to 25 minutes, or until the croutons are golden and dry.

This is what I just started to make.

slow Cooker Apple Pork Chops with Sauerkraut

What You'll Need
2 sweet potatoes, peeled and sliced 1/2" thick
2 onion, chopped
2 Granny Smith apples, cored and sliced
1 Tbsp. brown sugar
1/4 tsp. cinnamon
1/4 tsp. salt
1/8 tsp. pepper
6 boneless 1" thick pork chops
15-oz. can sauerkraut, rinsed and drained

How to Make It
1. Place sweet potatoes and onions in bottom of 4-5 quart slow cooker. Cover with apple slices.

2. In small bowl, combine brown sugar, cinnamon, and salt and pepper and sprinkle over apples.

3. Heat a nonstick skillet over medium heat for about a minute and add the pork chops. Cook for 3-4 minutes on each side to brown slightly.

4. Place the pork chops over apples in the slow cooker. Top with sauerkraut.

5. Cover crockpot and cook on LOW for 6-7 hours or until pork chops are tender.

I put baslamic vingrette dressing in the slow cooker with garlic and 3 chicken thighs let it cook 14 hours because we left the house and couldn't get back home. The chicken was so good. The bone pulled off the meat. It was very moist and had great flavor. I will make it again.

Have a roast in the slow cooker today with carrots, mushrooms and rutabaga. Typical Sunday fare...

I use mine at least once a week when I am cooking but my daughter and her husband are staying with me while their house is being built and she is doing all the cooking. I will use mine again when I start cooking again in about 3 to 4 weeks.

Crockpots save stress and create frugal meals using almost anything you throw in! I use one almost every day.
