I follow the Happy Herbivore as well and yes, cheese is also MY weakness. We are mirrored twins there. LOL I have found that the vegan cheeses aren't bad. I was really skeptical of them and find them to be delightful.

Also, don't forget to use Nutritional Yeast in place of Parmesan. That's pretty good too....not the same...

and lastly, don't beat yourself up too much about it. Even Bob Harper from the Biggest Loser who is a vegan states his weakness? Cheese (and sweets)

I don't like using a lot of substitutes BUT....sometimes you need to do that. Whole Foods carries some vegan "cheeses" - the brand Daiya has quite a few varieties. The Daiya brand has pretty decent "meltability" but I've not tried other brands so can't vouch for them.

You can also make vegan cheeses pretty easily, however they are nut based so don't think they really follow the FOK plan so if you are 100% FOK, don't think that will work for you. If you want to try some nut cheeses (they really are pretty good taste-wise) you can probably find a you tube video or I can send you some recipes I got from a vegan magazine.

Help. I am doing SO WELL in going completely plant-based whole foods since this summer, I am doing fine with no oil, no yogurt---all is well. But I can't keep from craving cheese! No one else in my family is vegan or ever plans to be--they eat cheese. I do all the cooking. I make them something cheesy, and can't seem to keep myself from dipping into it. What am I missing, what can I try to replace or get rid of this stupid craving for cheese? I love my food--use a lot of Happy Herbivore recipes. But I want cheese all the time!
